本实验研究了不同微波时间和微波功率对牛肉出 品率、水分含量、色泽、质构及感官评价等方面的影响, 以期找到最适合的复热方式,更好地保留食物原有的 风味和营养。
1 材料与方法
1.1 试验材料 牛里脊肉:黑龙江哈尔滨市松北区大润发超市;
九三大豆油:九三粮油工业集团有限公司;淀粉:南 京甘汁园糖业有限公司;盐:中盐上海市盐业有限公 司;食品真空包装袋:成都友顺塑料制品有限公司。 1.2 仪器与设备

度的测定。测中心温度时要将热电偶的感应头插入牛

5.用小煮锅将芥兰丁焯水30秒,捞起、沥干水分后重新装回步骤1中装菜丁的位置。
6.大火烧锅至6分热,下花生油,将洋葱丁、红椒丁和芥兰丁翻炒至半熟(约20~30秒),即出锅。

黑椒牛肉粒
如今市场上有很多半成品酱汁、选择合适的酱汁可以使菜肴制作简单、口感惊艳。
今天我就用到了一款黑椒汁、本身酱汁的味道已经很浓郁、所以只需要简单的搭配好食材、就能做出饭店口感浓郁黑椒风味的菜肴来。
牛肉粒我是在超市里买的澳洲牛肉、肉质新鲜味正;如果买不到牛肉粒也可以用普通的牛柳来代替、切成片、事先用盐、黑胡椒粉、蚝油或生粉水腌制再入油锅滑炒保持嫩度、最后再混合其它食材一起做成小炒、味道也非常赞~。
选择洋葱、青椒、杏鲍菇来搭配牛肉粒、和黑椒风味的菜肴很搭、尤其是杏鲍菇、更能吸收牛肉的鲜美和黑椒汁的浓郁。
原料:。
主料:牛肉粒、杏鲍菇大半个、青椒半个、洋葱半个。
调料:市售黑椒汁、蚝油、糖、美极鲜酱油、黑胡椒粉、盐。
做法:。
1、牛肉粒放入碗中均匀的洒少许盐及黑胡椒粉及少许蚝油抓匀腌制10分钟备用、其它食材切片;。
2、锅中放油烧至滚热、放入牛肉粒迅速翻炒至表面成熟关火盛出备用;。
3、锅中留底油继续加热、依次加入洋葱炒香、接着加入杏鲍菇片及青椒片翻炒、调入少许美极鲜酱油及一点点糖略翻炒、最后加入炒好的牛肉粒加入2大汤匙黑椒汁一起翻炒均匀即可。

1、牛肉粒可用普通牛柳代替、切成薄片、加入盐、黑胡椒粉、蚝油、生粉水抓匀腌制后再入热油锅中滑炒至变色盛出、其余步骤一致;。
