Effects of Packaging Materials on Sensory and Flavor Quality of Shelf-Stable Milk

Introduction: Shelf-stable milk is a convenient and easy-to-use dairy product that consumers can enjoy at any time. However, the packaging materials, as the external environment for shelf-stable milk, may have an impact on the sensory characteristics and quality of the milk. Therefore, this study aims to investigate the effects of packaging materials on the sensory characteristics and flavor quality of shelf-stable milk.

Methods: We selected common packaging materials

for shelf-stable milk, including plastic bottles, paper cartons, and aluminum cans, and conducted tests and analysis using relevant scientific methods. Firstly, we compared the appearance of different packaging materials, exploring their transparency, glossiness, and packaging sealing. Then, we conducted sensory evaluation to assess the color, smell, taste, and persistence of shelf-stable milk. Finally, we quantitatively analyzed the flavor of shelf-stable

milk using modern instruments such as an electronic nose and electronic tongue.

Results: Our study found that different packaging materials for shelf-stable milk have a significant impact on its sensory characteristics and flavor quality. In terms of appearance, plastic bottles have good transparency and glossiness, but their sealing is slightly weaker compared to paper cartons and aluminum cans. Sensory evaluation results showed that shelf-stable milk packaged in paper cartons scored higher in terms of color, smell, and taste, while shelf-stable milk in plastic bottles scored higher in terms of taste persistence. Flavor analysis showed that shelf-stable milk in plastic bottles stood out in terms of acidity and milky flavor, while milk in paper cartons performed better in terms of sweetness and creamy flavor.
