(15)Manufacturer’s IntroductionThe Duke Product Holding Unit was developed for extended food-holding capabilities to provide consistently high, “just cooked” food quality. The Duke Product Holding Unit utilizes Duke’s patented “heat sink” holding technology that provides even heat distribution to food pans through the bottom and sides. This allows pre-cooked foods to be held for extended periods without noticeable degradation of quality, reducing food scrap/waste.The self contained, individually formed, sealed compartments of the Duke Product Holding Unit eliminates food odor and taste transfer. Because the compartments are sealed and formed to the shape of the pan, no disassembly is required for cleaning and product changes.The unique design of the Duke Product Holding Unit allows single temperature operation for all existing product groups. This 190°F approved temperature is preset at the factory. This reduces the likelihood of inconsistent performance between restaurant locations.The Duke Product Holding Cabinet was also designed to rethermalize food product. If a malfunction occurs, ensure unitis plugged in then check all switches and circuit breakers. If the malfunction still exists, contact your Duke Manufacturing Company authorized service agent or call 1-800-735-3853.Electronic Control Fault IndicationsThe Service Light is located on the front of the control next to the heat light (see Figure 3). It provides an indication to alert the operator to failures in the heater circuit. When a Service Light is on, the affected shelf should not be used until the cause of the fault is corrected by a qualified service technician. The fault conditions that could cause the control to turn the service light on are as follows:1.2.light.1. A digital temperature meter that has been calibrated must be used to get an accurate temperature reading.Use a thermocouple surface temperature probe to measure temperatures.2. No pans should be in wells during the pre-heat and temperature check. Pre-heat the warmer for 30minutes before taking any temperature readings. Do not take readings unless the cavity has been empty for 30 minutes. This will allow the temperature to stabilize and will prevent false readings.3. The warmer cavity should be cleaned and empty before the temperature is checked. Avoid any air draftsthat might flow through the cavity.4. Locate the surface temperature probe on the bottom of the first cavity in the geometric center. The firstcavity is the one closest to the control panel (see Figure 3). Make sure the probe is making good contact with the surface while taking readings.5. All temperature controls exhibit a swing in temperature as the control cycles on and off while regulating tothe set point. The correct calibration temperature is the average of several readings taken over a period of20 minutes after the warmer has been pre-heated. The average temperature should be ± 5°F from the setpoint.U.S. Patent 6175099, 6262394U.S. Patent 6175099, 6262394Control ProgrammingThe electronic temperature control is pre-set at the factory to maintain the temperature at the bottom center of the pan cavity +/- 5° F. This temperature is the result of many hours of laboratory food testing. There are no operator temperature adjustments that can be made. Because the electronic control uses a platinum type RTD sensor, routine calibration is not required.! DANGER!LIVE ELECTRICAL COMPONENTS.ONLY QUALIFIED SERVICE PERSONS SHOULD MODIFY CONTROLTEMPERATURE PRESETS.Temperature Programming1. Remove cover from control side of the HoldingCabinet and turn the Holding Cabinet on.2. Locate the pushbutton S1 and S2 on the rear ofthe control. (see Figure 4.1)3. Press and hold S1 until any LED on the rear ofthe control illuminates. (approximately 5 seconds)4. Observe the front of the control (Figure 4.2).Press and release S1 on the back of the control until the desired light on the front of the control flashes. (see Table 1)NOTE: To comply with NSF sanitation requirements,do not set the control preset temperature below 180° F.5. Press and release S2 until the sum of the LEDvalues illuminated on the rear of the board match the desired pre-set temperature.6. Repeat steps 4 and 5 for each pre-settemperature then press and hold S1 until no LED on the rear of the control is illuminated and the lights on the front of the board no longer flash. 7. Even when soldering lead-free solders the high performance allows loweroperating temperatures. The soldering station can operate any of the following hand pieces, FM-2027 Soldering Iron, FM-2022 Parallel Remover (SMD tweezer), FM-2023 Mini Parallel Remover (SMD mini tweezer), FM-2024 Desoldering Module, and/or FM-2026 Nitrogen Soldering Iron. The soldering iron and desolder tool can be used in either or both ports and the tweezers are limited to one port with a soldering or desoldering iron in the other port.The station features a programmable sleep mode of 0-29 minutes or auto-power shut off at 30 minutes. Sleep mode, auto power shut off and tip temperature can be programmed separately for each port. The sleep mode reduces the tip temperature to approximately 200ºC (400ºF) after the programmed time (0-29 minutes). The lower tip temperature will reduce oxidation of the tip and improve the tip performance. When in sleep mode the tip will quickly return to temperature after the iron is removed from the holder.When utilizing the FM-2027 Soldering Iron the station uses the T15 series composite tip. The composite tip is a soldering tip in which a heating element and sensor are integrated with ceramic. Despite its highly compact design, the tip offers superior thermal response and greatly improved thermal recovery. T15 series tips are available in a wide variety of tip shapes and can also be used with the Hakko FM-203, FP-102 and FM-202 soldering stations. Any tip can be operated at temperatures 200 - 450ºC (400 - 840ºF). The station includes a card lock system to lock the preset soldering temperature. Convection Oven MODEL COInstallation & Operation ManualSerial Numbers 120317 and higherWarranty InformationLIMITED ONE YEAR WARRANTYBKI (The "Company") warrants to the original purchaser that at time of shipment from the Company factory, this equipment will be free from defect in materials and workmanship. Written notice of a claim under this warranty must be received by the Company within ONE YEAR from the date of installation, but no longer than ONE YEAR AND THREE MONTHS from date of shipment from the factory. Defective conditions caused by abnormal use or misuse, lack of or improper maintenance, damage by third parties, alterations by unauthorized personnel, acts of God, failure to follow installation and/or operating instructions, or any other events beyond the reasonable control of the Company will NOT be covered under this warranty. The obligation of the Company under this warranty shall be limited to repairing or replacing (at the option of the Company) any part, with the exception of lamps, fuses, and glass (which are not covered under warranty), which is found defective in the reasonable opinion of the Company. Any part found defective by the Company will be repaired or replaced without charge F.O.B. factory, Simpsonville, South Carolina or F.O.B. authorized BKI Distributor. The Company and/or its authorized representatives will assume the normal replacement labor expense for the defective part for the period of the warranty as stated above, excluding travel and/or other expenses incidental to the replacement of the defective part, where replacement work is performed during standard business hours and not subject to overtime, holiday rates, and/or any additional fees. IN NO EVENT SHALL THE COMPANY BE LIABLE FOR LOSS OF USE, LOSS OF REVENUE OR LOSS OF PRODUCT OR PROFIT OR FOR INDIRECT OR CONSEQUENTIAL DAMAGES INCLUDING BUT NOT LIMITED TO, FOOD SPOILAGE OR PRODUCT LOSS. You must operate the equipment properly using only quality products and use meat thermometers to insure meats are thoroughly cooked.Food Handling• Wash hands thoroughly in warm, soapy water after handling raw poultry or meats.• Clean and sanitize all utensils and surfaces that have been in contact with raw products.• Never place cooked meats on the same surfaces used to prepare raw meats, unless the area has been thoroughly cleaned and sanitized.Storage Of Raw Meats• Designate an area or shelf strictly for the storage of all raw meats to be used in the oven.• Raw product must always be stored at temperatures below 38° F. Turn the timer switch offto stop the buzzer.NOTE: The timer does not turn off the heating elements.2 Timer Switch (2 position) Used to turn the timer OFF (0) or ON (1). When the timercounts down to 0, a buzzer will sound. Silence the buzzer byplacing the switch in the OFF (0) position.3 Thermostat Used to set the cook temperature. Turn the thermostat knobclockwise to the desired cook temperature. A light will turn onwhen the thermostat calls for heat. The light will turn off whenthe temperature is reached.4 Power/LightSwitch(3 position) Used to turn the oven power and lights ON (1) or OFF (0). Place the knob in the center position to power the oven. Place the knob in the fully clockwise position to power the oven and the lights. Place the knob in the fully counterclockwise position to turn the oven off.5 Blower Switch (2 position) Used to turn the fan on providing optimum air circulation foreven baking. Place the knob in the fully clockwise position toturn on the fan. The fan is automatically turned off when thedoor is opened.Operating the Oven1. Place the Power/Light switch in the fully clockwise position. This will apply power to the oven andturn the lights on.2. Place the Blower switch in the ON (1) position.3. Set the timer for the desired cook time.4. Pre-heat the oven by setting the thermostat to the desired temperature. The thermostat light willturn off when the temperature is reached.5. Open the door and load product into oven once the oven has pre-heated. NOTE: Keep oven doorclosed when not loading oven to avoid a sharp decline in oven temperature.6. Place the Timer switch in the ON (1) position.7. When the buzzer sounds, place the Timer switch in the OFF (0) position.8. Using your oven mitts, open the door and unload the product.9. Place the Blower switch in the OFF (0) position.10. Place the Power/Light switch in the fully counterclockwise position OFF (0).Cooking SuggestionsMost recipes can be adjusted for convection oven use by decreasing the temperature by 25° F and decreasing cooking time about 25%. Dishes with cooking times over 45 minutes and that might dry out too much (like lasagna, or meatloaf) should be covered for the first half of the cooking time.InstallationSerious injury, equipment damage or death could result if attempting to install thisoven yourself. Ensure that an authorized BKI service agent install the oven.Unpacking and HandlingIt is the owners’ responsibility to file all freight claims with the delivering truck line. Inspect all cartons and crates for damage as soon as they arrive. If damage to cartons or crates is found, or if a shortage is found, note this on the bill of lading (all copies) prior to signing.If damage is found when the equipment is opened, immediately call the delivering truck line and follow up the call with a written report indicating concealed damage to your shipment. Ask for an immediate inspection of your concealed damage item. Packaging material MUST be retained to show the inspector from the truck line.Remove all packing from the interior and exterior of the oven.Location and Clearance1. Place the oven not less than 8” from the back wall.2. Lock the casters so the oven does not move. After every time the oven is moved, make sure thecasters are locked.WiringElectrocution, equipment failure or property damage could result if an unlicensedelectrician performs the electrical installation. This unit may have more than one disconnect switch. Scheduled MaintenanceOven CleaningThe oven must be cleaned at the end of each business day. It is easier to clean while still warm. Cleaning is not only necessary for sanitary reasons, but will increase sales appeal and maximize operating efficiency.Failure to remove power from this unit may cause severe electrical shock. Thisunit may have more than one disconnect switch.Using abrasive cleaners may damage the oven finish. Use only a mild soap andwater solution.Never steam clean or get excess water in the interior of the oven as this candamage unit.DO NOT USE OVEN CLEANER on this machine. Caustic cleaners can causedamage to the machine.Always wear appropriate personal protection equipment during the cleaningprocess to guard against possible injury from hot cleaning solution.1. Wearing your insulated mitts, remove all products from the unit. Remove all food pans, racks andinside bottom pan from the unit and place them in a large sink to soak in hot cleaning solution(BKI Cleaner).4. Allow the unit to cool to room temperature before proceeding.5. Lift the left-side tray rack off of its mounting brackets and out of the oven. Repeat this for theright-side tray rack. Place the tray racks in a large sink to soak in hot cleaning solution (BKICleaner).6. Slide the bottom of the inside blower cabinet forward and remove from oven. Place in a large sinkto soak in hot cleaning solution (BKI Cleaner).7. Slide the bottom of the left side insert assembly to the center of the oven and remove from oven.Place the assembly in a large sink to soak in hot cleaning solution (BKI Cleaner).8. Slide the bottom of the right side insert assembly to the center of the oven and remove from oven.Place the assembly in a large sink to soak in hot cleaning solution (BKI Cleaner).9. Clean the outside of the oven with warm water, a sponge and approved cleaner which isauthorized for use on food surface areas.10. Wipe the unit dry with a soft cloth.11. NPT connectors to seal cable ports in instrument panels and fi eld-mounted instruments.Use with the NEMA 4X Rear Covers and with the Integral or Universal Assemblies discussed in this manual.•The connector incorporates a rubber seal that will seal around cables with a diameter of 0.170 in. minimum to 0.470 in. maximum.•Two types of cable boots can be used to seal around small or non-uniform cable circumferences:1.The straight boot is for cables from 0.05 in. to 0.175 in. diameter.2.The collar type boot is for cables from 0.088 in. to 0.24 in. diameter.•In some cases RTV or other sealants in addition to cable boots may be necessary.•Always use the rubber seal supplied with cable gland. The cable boots should be inserted through the seal.•Mount the instrument so the cable ports face to prevent moisture seepage into the unit. 9.4Installation
To make sure the scale operates free of faults, cable junction boxes are
required to meet the requirements of IP 67 (or IP 65) protection, that is,
the ingress of moisture into cable junction boxes must be prevented.
In order to maintain Protection IP 65/67, careful installation is absolutely
necessary.
9.4.1Basic Installation Sequence
Select location.
Drill holes (hole spacing is given on cable junction boxes, and in
Spec Sheet DDP 8 650).
Bolt cable junction boxes in place.
Connect load cells.
Check load cell connection.
Balance sensitivity.
Screw on cable junction box cover.
9.4.2Selecting Location
If at all possible, attach cable junction box so that after completed
installation measurements can be conducted on the cable junction
box without the use of expensive scaffolding or complicated
disasssembly.
If there is the risk of flooding, mount cable junction box at the highest
point possible under the platform.
Prevent cable junction box from coming into contact with water: drip
water from above, water from hosing down scale, etc.
9.4.3Connecting Load Cells
Connect all load cells associated with a measuring point in parallel,
using a summation junction box.
In platform scales, as a rule, summation takes place in the factory (e.g.
via cable junction box mounted on scale).
