When people think of carrots, they usually picture in their mind a vegetable that is long, thin and
orange in color. But carrots come in many different sizes and shapes. And not all carrots are orange.
For example, Paris Market carrots are about five centimeters around. Imperator carrots are thin and about twenty-five centimeters long. And Belgian White carrots are, as their name suggests, white.
For the best results, carrots should be grown in sandy soil that does not hold water long. The soil also should have no rocks. To prepare your carrot garden, dig up the soil, loosen it and turn it over. Then, mix in some plant material or animal fertilizer.
Weather, soil conditions and age will affect the way carrots taste. Warm days, cool nights and a medium soil temperature are the best conditions for growing carrots that taste great.
Carrots need time to develop their full sugar content. This gives them their taste. If they are harvested too early, they will not have enough sugar. But carrots lose their sweetness if you wait too long to pull them from the ground.
The best way to judge if a carrot is ready to be harvested is by its color. Usually, the brighter the color, the better the taste.

A group of scientists set sail from Shanghai yesterday morning, marking the start of the country’s 24th scientific expedition to Antarctica.
The ship Xuelong, or Snow Dragon, carrying 91 members of what will eventually be a 188 strong expedition team and 40 crew members, left Waigaoqiao Dock at about 10 am. The rest of the explorers will travel to Antarctica by air.
“The expedition will last for more than five months. We expect to be back home on April 18,"Shen Quan, the ship’s captain, said.
“It’s the largest scientific expedition team China has sent to Antarctica. The expedition will lay the foundations for China’s in-depth exploration of Antarctic,” Chen Lianzeng, d eputy director of the State Oceanic Administration, said.
The expedition team will pick the final site of China’s third scientific research station at the South Pole, an observatory with seven telescopes and one acoustic radar at Dome A, Chen said. At 4,093m above sea level, Dome A is the highest point on the continent.
“We are prepared to build a third station, and construction will start once the site is finalized. The whole project is expected to be completed by 2010,” Xu Xiaxing, a veteran explorer on h is eighth trip to the continent, said.
They will carry out an inspection of Dome A and draw the first topographic map of the area surrounding the peak. A model of an ancient Chinese compass, one of the country’s four great inventions, will be brought to Dome A of permanent display.
This expedition marks the first time China has participated in the International Polar Year program. It also marks the start of reconstruction for two existing Chinese stations in Antarctic, Changcheng and Zhougshan.The ship will stop in Chejudao in the Republic of Korea and Frementle in Australia for supplies before it arrives at the Zhongshan Station.

Hitting the bottle to help drown out memories you’d rather forget may in fact etch(铭刻) them more deeply into your consciousness, a new study has found.
And having one or two glasses of wine a day may increase your ability to remember, and even help with Alzheimer(老年痴呆症) sufferers.
The study at Auckland University was undertaken by Dr. Maggie Kalev and Professor Mathew During.
The two researchers found moderate levels of alcohol consumption, equivalent to one or two glasses of wine a day, could augment memory.
In contrast, high levels of alcohol decreased the ability of new brain cells to develop and mature. “Low levels of alcohol promoted neutral memories, such as remembering objects,” said Dr. Kalev.
“However, contrary to popular belief, we also found that excessive levels of alcohol enhanced memories of highly emotional stimuli(刺激), meaning the concept of ‘drinking to forget’is unlikely to be true.”
“Our work suggests that heavy drinking actually reinforces negative memories.”
The study also identified the way low doses of alcohol improved memory.
Dr. Kalev said a “very important”brain receptor(受体), called an NMDA receptor, appeared to be necessary for the process.
Testing done on rats showed if they did not have enough NMDA receptors, their memory did not improve when given low alcohol doses.
However, rats which did show high numbers of NMDA receptors exhibited memory improvement when given small amounts of alcohol.
“Pathways by which memory is laid down are unclear, but NMDA receptor is critical in this process,” Dr. Kalev said.
“Building on this knowledge may help in the treatment of memory disorders, such as Alzheimer’s disease and other dementias.”
The results of the study are published in Journal of Neuroscience.
