Asians feel there will be less unfair treatment in areas like mathematics and science because they will be judged more objectively. And the return on the investment in education is more immediate in something like engineering than with an arts degree.Most Asian-American students owe their success to the influence of parents who are determined that their children take full advantage of what the American educational system has to offer. An effective measure of parental attention is homework. Asian parents spend more time with their children than American parents do, and it helps. Many researchers also believe there is something in Asian Culture that promotes success, such as ideals that stress family values and emphasize education.Both explanations for academic success worry Asian Americans because of fears that they form a typical racial image. Many can remember when Chinese, Japanese and Filipino immigrants were the victims of social separation. Indeed, it was not until 1952 that laws were laid down giving all Asian immigrants the right to citizenship.12The food we eat seems to have profound effects on our health. Although science has made enormous steps in making food more fit to eat, it has, at the same time, made many foods unfit to eat. Some research has shown that perhaps eighty percent of all human illnesses are related to diet and forty percent of cancer is related to the diet as well, especially cancer of colon. Different cultures are more likely to cause certain different illnesses because of the food that is characteristic in these cultures.That food is related to illnesses is not a new discovery. In 1945, about 60 years ago, government researchers realized that nitrates(硝酸盐), commonly used to preserve color in meats, and other food additives(添加剂), caused cancer. But maybe if they realized the problems it causes, they would try drinking from a glass at home or carrying water in a refillable steel container instead of plastic.Plastic bottle recycling can help—instead of going out with the trash, plastic bottles can be turned into items like carpeting or cozy fleece clothing.Unfortunately, for every six water bottles we use, only one makes it to the recycling bin. The rest are sent to landfills. Or, even worse, they end up as trash onthe land and in rivers, lakes, and the ocean. Plastic bottles take many hundreds of years to disintegrate.Water is good for you, so keep drinking it. But think about how often you use water bottles, and see if you can make a change.Betty McLaughlin, who runs an organization called the Container Recycling Institute, says we should try using fewer bottles: “If you take one to school in your lunch, don’t throw it away—bring it home and refill it from the tap for the next day. Keep track of how many times you refill a bottle before you recycle it.”And yes, you can make a difference. Remember this: Recycling one plastic bottle can save enough energy to power a 60-watt light bulb for six hours.15The Hong Kong government is set to overhaul(革新) its immigration policy with the aim of making it easier for mainland and overseas talents to live and work in the city. Beyond its vibrant economy, underlined by a free market environment, Hong Kong has a combination of some of the most distinctive elements of Chinese and Western cultures. Hong Kong is as exciting as many other Asian boomtowns, and yet it is no less efficient than a typical European city with a muchsmaller population. Housing costs are high, but no higher than those in other financial centers. For international banks and multinational corporations, housing costs are a concern only when the opportunity to make money begins to dry up. And this situation is not happening in Hong Kong as the local economy, riding the boom on the mainland, is rapidly expanding.It is within this context that the government takes the lead to revise its immigration policy, which calls for, among other things, the establishment of a one-stop service center to process all applications under various migrant schemes. This means that an applicant will in future need to submit only one form for processing. Other changes to the policy include the removing of the age restrictions and lowering of experience requirements. Under the present scoring system used to vet applicants, those who are older than 50 and those with less than five years of work experience win no points in their respective categories. Some of the most important helpers in the job of good health are the substances we call vitamins.Vitamin A is needed to produce a light-sensitive substance in the eyes. People who do not get enough vitamin A cannot see well in the dark. The best source of vitamin A is fish liver oil. It is also found in the yellow part of eggs. In addition,squash, sweet potatoes, carrots and other darkly colored fruits and vegetables contain substances that the body can change into vitamin A.Vitamin B-1 is also called thiamine. The price of grains—corn, wheat, and rice—has been rising since 2005 under pressure from farmers who would rather plant crops for biofuels than for food. The sharpest increase has been this year, with the price of Thai rice nearly doubling since January, to $60 per metric ton. Some analysts expect that price to reach $1,000 in the next three months.Tang Min, a former chief economist for the Asian Development Bank, said the price increase is the inevitable consequence of supply and demand. “The world population is increasing, but the increase of the planting of rice has not been as fast,” he sai d. “Without the oil price increasing substantially, the corn price will not increase. Without corn prices increasing quickly, the rice price will not rise.”Despite efforts by governments to increase wages and introduce food subsidies (津贴), price increases and shortages have led to violent clashes along supply lines, in food distribution centers and at supermarkets.To encourage farmers to go back to planting food, China, Indonesia and other countries are increasing their minimum compensation to farmers who grow grains.In China, the government is concerned that the price increase is already leading to upsetting incidents. In August 2007, a supermarket in the inland city of Chengdu decreased the price of eggs from more than 4 yuan to 3.2 yuan—about 46 cents—to cater to shoppers. Thousands of people showed up at the front door, and four were injured during what the domestic media called “scare buying”.In October, a Shanghai-based chain supermarket put five-liter bottles of cooking oil up for sale at the discount price of 30.8 yuan—$4.39, about $2.85 lower than the usual price. Five minutes after the store opened, 19 people were hurt in the rush to buy.The jump in food prices has had a big effect on developing countries because food accounts for a much larger percentage of overall consumption. In China, it is almost 30 percent, while in Vietnam it is 40 percent and in India 50 percent.To calm increasingly concerned Chinese consumers the government has frozen the prices of some grains, meat and eggs. It also has run picture after picture in local newspapers of its “strategic reserves” of frozen meat, sacks of grain and barrels of18Have you ever wondered why there are so many skin colors in the world? Do you know why people living in particular areas usually have a certain color? Biology and history are the two reasons for this.Skin contains something called melanin, which determines a person’s skin color. The more melanin a person has, the darker his or her skin will be. The amount of and production of melanin are controlled by genetics, but can be affected by other things, such as sunlight. If a person lives in a place with strong sunlight, his or her skin will protect itself by producing more melanin, making the skin darker. In a place with less sunlight, a person’s body will produce less melanin, making the skin lighter.Skin color is also affected by another source—vitamin D. Humans all need vitamin D to build bones. People can get it by eating foods such as fish and milk, or from sunlight, which causes vitamin production in the skin. Melanin protects skin by absorbing sunlight, so sunlight absorbed by melanin cannot be used for vitamin D production. Therefore, a dark-skinned person will produce less vitamin D than a light-skinned person when they received the same amount of sunlight.The connection between vitamin D production and skin color is clear when we look at evolution. The earliest humans lived in Africa, their dark skin covered with hair. When they moved to places that had less sunlight, their bodies produced less vitamin D because of their dark skin. As a result, their skin made less melanin, so they could get enough sunlight to produce vitamin D. their skin gradually got lighter and they lost hair. Now, people who live in areas with strong sunlight, like Africa, have darker skin, while people living in other areas have lighter skin. The exception to this is the Inuit, who live in a place with little sunlight, but have dark skin because they eat a lot of fish and have enough vitamin D.Evolution has given us a rainbow of skin colors. Humans have always had melanin to determine our skin color. What has changed through history is the environment where we have lived. This has in turn changed our melanin production, and eventually, skin color.A World of Skin Color19The latest scientific studies show that the sun and the oceans have far more important influences on the world's climate than human activity.The head of the Nongovernmental International Panel on Climate Change (NIPCC), Professor Fred Singer, put forward a suggestion to the UN-sponsored(资助) IPCC.
