How should the wait staff serve the food and beverage properly?
Serving a banquet means to
provide food and beverage to a group of people in a timely (及时 的), courteous (礼貌的) and professional (专业的) way.
When it’s time for dessert, clear the table by removing the entrée or salad course plates as well as the knives and forks.
Bring in the dessert plates. Then ask each guest if he or she would care for coffee or tea.
Make a good preparation for the table setting.
Make sure each plate, fork, knife, spoon and glass is clean and placed properly.
Get to know about each course to be served in advance.
Then pass to each guest the tray containing the cream, sugar, and artificial sweetener (人工甜味剂).
During the after-dinner coffee hour, when everyone has been sipping their coffee, offer a tray bearing a bottle of cognac (白兰地) and one or two sweet liqueurs, plus several snifters and small liqueur glasses.
Once a course is finished, remove each used plate from the right side of the guest with your right hand. If there is a fork and knife or spoon on each plate, clamp down (压住) on them with your right thumb in case they fall off the plate.
Bring in the clean plates for the next course, and put down each in front of the guest from the left side.
Make sure you lift the heavy tray with grace and serve food on the feet steadily and quickly.
Serve the wine at a cool room temperature. And chill the white wine in the refrigerator at least two hours before the meal, or chill the white wine in a wine cooler (冷酒器) for twenty-five minutes in a bath of ice cubes and ice water.
Then fill the others’ glasses by moving around the table counterclockwise. If only the guest of honor is present, then serve him first instead.
