冰淇凌名字的由来
• 冰淇淋是舶来食品。英语ice cream，译成中文是冰奶油，但 习惯都译作冰淇淋，这名称很 妙，既有音译近似，又属形义 优雅适当，故而至今沿用不衰。 当然，也有写作冰结涟、冰麒 麟的，但都不及冰淇淋流传广、 寿命长。
• 冰激凌——被遗忘的发明权 早在3000多年前，聪明的中国人就已经利 用天然冰在夏天消署。周朝的时候，政府 里有专门负责取冰、用冰的官员——“凌 人”。唐朝时，京城长安出现了专门靠冰 发财的商人。一本叫《杜阳杂俎》的书里， 详细记载了当时制造冷饮的方法。到了宋 朝，冷饮的品种很多，比如“雪泡豆儿 水”、“雪泡梅花酒”等等。这时还出现 了果汁掺奶汁，再放上冰块制成的冷饮佳 品。元世祖忽必烈时，政府开始了冰激凌 的生产。为了保守制作工艺的秘密，王室 以外的人禁止制造冰激凌。马可· 波罗千方 百计得到了制造冰激凌等冷饮的工艺方法， 并将它带回意大利，随后传到英法等国。 14世纪初期，欧洲也出现了雪糕等冷饮。

冰激凌按照软硬度目前分成两大种类，一个是硬冰激凌。由
美国人创造，主要是在工厂加工，冷冻到店内销售，因此从外形 就能看出比较坚硬，内部冰的颗粒较粗，也称为美式冰激凌Ice kleam。包括哈根达斯在内的超市销售的冰激凌多属该种类。另 一种是软式冰激凌（Gelato），是意大利人的发明，并在16世 纪由西西里岛的一位教士改良，完善了它的制作技术。意大利式 冰激凌的制作传统也一代一代地传下来。直到今天，西西里岛的 冰激凌仍被认为是意大利最好的冰激凌。到过意大利的人们，品 尝到意大利冰激凌文化，无不为其可口的味道以及精致的外形所 惊叹。 由于现场一般在现场制作，看来就比较软，冰的颗粒也 较细，口感也更好。因此，意式冰淇淋是高档冰激凌的主要代表。 而Gelato因为其健康、低卡路里，正日益受到人们的亲睐。 冰淇淋按照制作的主要原料来划分，则主要分为传统奶油冰 淇淋和酸奶冰淇淋。顾名思义，传统奶油冰淇淋就是主要以奶油 为原料制作的冰淇淋，口感润滑舒爽，但也同时带有奶油的高热 量等危害。酸奶冰淇淋则主要是以酸奶为原料，配以牛奶等物质 制作而成，由于其低热量，而且酸奶中含有大量对人体有益菌， 所以还对肠胃有一定的保护促进作用，现已在欧美国家非常流行， 并已经开始在我国国内受到欢迎。

我国冷饮工业的发展大致可分为四个阶段 第一阶段(1927-1950年) 1927年美商海宁生在上海开设海宁洋行,并用机械方法生产棒冰, 这是我国最早的冷饮厂家。当时产品为圆柱形,日产量只有2000-3000 根。1932年该厂把棒冰模具改为扁长形,棒冰品种除果味外，还生产 赤豆、绿豆棒冰、2000g马口铁听装冰淇淋、320g三色和香草大冰砖 及双色纸杯、紫雪糕等。 1948年,该厂转售给伪后勤部(即现益民食品一厂),后又与英商怡 和 蛋厂合资开设海和有限公司,继续生产以上产品,注册商标为"美女牌"。 班产棒冰和雪糕12吨,冰淇淋2吨以上。这是解放前我国最大的冷饮厂, 产量占全国的70%以上。 第二阶段(1951-1980年) 全国各地相继扩大冷饮食品工业,在全国开展技术交流,冷饮年产 量达到8万吨左右,可称为生产发展,技术交流阶段 第三阶段(1981-1990年) 许多厂家引进国外先进设备,增加花色品种,年产量达到54.4万吨, 此阶段技术引进和技术咨询相当活跃,可称为广泛交流,推陈出新阶段。 第四阶段(1991-现在) 外商纷纷来华投资、合资,联营企业纷纷成立,私营企业涉足,年产 量达到120万吨,品种三千多种,此阶段可称为飞速发展阶段。 目前国内冷饮市场三分天下:三资企业占据大部分高档市场,固有 企业居中档,大部分乡镇企业、私营企业占领低档市场。广东、北京、 上海是目前产销量最集中的三大地区,占全国销量的25%。

A Love Story by Mattus and his sweetheart is the history of the HaagenDazs ice cream company.
New York City was the site of the first ice cream parlor in 1774, opened by Phillip Lenzi. George Washington loved ice cream so much that a large part of his spending was devoted to it $200 for just one summer
