昨日,北京市政府外事办消息,新出版的《美食译苑——中文菜单英文译法》共规范了3102个中西餐饮食名称,其中包括2158个中餐,并向北京市各大餐馆推广。

《美食译苑——中文菜单英文译法》共分三章,分别对中餐、西餐、饮品进行了标准的英文翻译,其中中餐部分细化到八大菜系,包括鲁菜、川菜、闽菜等特色饭菜的介绍和重点翻译。

此次参加翻译的专家不仅有北京外国语大学、清华大学、北京大学等的教授,还邀请了外交部翻译专家、英籍专家、驻外大使等人。

翻译团队带头人、北京外国语大学教授陈琳表示,翻译力争让完全不懂中华文化的外国宾客一眼就能看懂。

“童子鸡”译成Chicken without sex(还没有性生活的鸡),“红烧狮子头”译成Red burned lion head(红烧狮子脑袋)。

“上面的译法都很可笑,外国人看了会一头雾水。

”陈琳表示,在编制标准译法时,不少菜名都引发了编委会的激烈争议。

陈琳介绍,翻译时,还考虑中国文化、国家政策法律、民族问题等。

“东坡肘子、宫保鸡丁,翻译时,把历史人名保留了下来;乞丐鸡直接翻译,保留了一个故事;麻婆豆腐不能翻译成‘麻脸老太太做的豆腐’,这对妇女不尊重。

”他称。

为了解决这个问题,北京市外办和市民讲外语办公室近日联合出版的《美食译苑——中文菜单英文译法》,为2158道中餐饭菜“正名”。

文章以“信、达、雅”的翻译标准为指导,从菜单的功能和翻译目的以及中餐菜名的构成和命名方法入手,探讨了中餐菜单英译的一些原则和方法。

几千年的推陈出新和不断积累,使中餐受到越来越多海外人士的青睐。

不仅如此,大量中餐馆也在其他的国家和地区营业开张。

这些涉外中餐馆在向海外人士提供美味的中餐的同时,也向他们提供了了解中国、感受中国文化的窗口。

而菜单在这过程中的重要作用不可忽略。

好的菜单翻译不仅能向外宾传达菜肴的信息,而且还有利于中华饮食文化的传播。

而那些翻译质量差的译文不仅让外宾难以理解菜单上所要传达的信息,而且还可能影响的中华美食在外宾心中的形象。

于是中餐菜名英译的好坏就直接关系到有着悠久历史的中华美食能否给广大海外人士留下美好而深刻的印象,让中餐成为我国对外文化交流的使者,从而成功地实现中国餐饮业走向全球市场。

中国是“吃文化”最悠久的国家之一。

不要说菜的做法博大精深,就连菜的名字也是五彩缤纷。

但是由于人们在对菜单翻译时候,忽视了中西方文化的差异,使许多外宾在享用中华美食的时产生了误解,闹出了许多“国际笑话”。

根据2006年4月10日的《半岛都市报》报道:因为来青岛旅游的外国游客日益增多,青岛很多酒店都推出了外语菜单,但是这些外语菜单却把不少外国人吓跑了,原来他们把红烧狮子头翻译成“烧红了的狮子头”,“麻婆豆腐”翻译成“满脸雀斑的女人制作的豆腐”,“童子鸡”成了“还没有性生活的鸡”……类似的例子举不胜举。

昨日,北京市政府外事办消息,新出版的《美食译苑——中文菜单英文译法》共规范了3102个中西餐饮食名称,其中包括2158个中餐,并向北京市各大餐馆推广。

《美食译苑——中文菜单英文译法》共分三章,分别对中餐、西餐、饮品进行了标准的英文翻译,其中中餐部分细化到八大菜系,包括鲁菜、川菜、闽菜等特色饭菜的介绍和重点翻译。

此次参加翻译的专家不仅有北京外国语大学、清华大学、北京大学等的教授,还邀请了外交部翻译专家、英籍专家、驻外大使等人。

翻译团队带头人、北京外国语大学教授陈琳表示,翻译力争让完全不懂中华文化的外国宾客一眼就能看懂。

“童子鸡”译成Chicken without sex(还没有性生活的鸡),“红烧狮子头”译成Red burned lion head(红烧狮子脑袋)。

“上面的译法都很可笑,外国人看了会一头雾水。

”陈琳表示,在编制标准译法时,不少菜名都引发了编委会的激烈争议。

陈琳介绍,翻译时,还考虑中国文化、国家政策法律、民族问题等。

“东坡肘子、宫保鸡丁,翻译时,把历史人名保留了下来;乞丐鸡直接翻译,保留了一个故事;麻婆豆腐不能翻译成‘麻脸老太太做的豆腐’,这对妇女不尊重。

”他称。

餐饮翻译的原则
一、以主料为主、配料为辅的翻译原则
1、菜肴的主料和配料
主料(名称/形状)+ with+ 配料
如:白灵菇扣鸭掌Mushrooms with Duck Webs
2、菜肴的主料和配汁
主料 + with/in+ 汤汁(Sauce)
如:冰梅凉瓜Bitter Melon in Plum Sauce
(in...sauce这个译法咱们在课上刚提过,还记得吗?)
二、以烹制方法为主、原料为辅的翻译原则
1、菜肴的做法和主料
做法(动词过去分词)+主料(名称/形状)
如:火爆腰花Sautéed Pig Kidney
2、菜肴的做法、主料和配料
做法(动词过去分词)+主料(名称/形状)+ 配料
如:地瓜烧肉Stewed Diced Pork and Sweet Potatoes
3、菜肴的做法、主料和汤汁
做法(动词过去分词)+主料(名称/形状)+ with/in+汤汁
如:京酱肉丝Sautéed Shredded Pork in Sweet Bean Sauce (课上分别提到了丝、片、丁的翻译,再回忆一下~)
三、以形状、口感为主、原料为辅的翻译原则
1、菜肴形状或口感以及主配料

2、介绍菜肴的创始人(发源地)、主配料及做法

五、体现中国餐饮文化,使用汉语拼音命名或音译的翻译原则
1、具有中国特色且被外国人接受的传统食品,本着推广汉语及中国餐饮文化的原则,使用汉语拼音。

如:饺子Jiaozi
包子Baozi
馒头Mantou
花卷Huajuan
烧麦Shaomai
(这边是用拼音直译的方式,当然还有其他译法)
2、具有中国特色且被外国人接受的,使用地方语言拼写或音译拼写的菜名,
仍保留其拼写方式。

宫保鸡丁Kung Pao Chicken
杂碎Chop Suey
馄饨Wonton
3、中文菜肴名称无法体现其做法及主配料的,使用汉语拼音,并在后标注英文注释。

六、可数名词单复数使用原则
菜单中的可数名词基本使用复数,但在整道菜中只有一件或太细碎无法数清的用单数。

葱爆羊肉Sautéed Lamb Slices with Scallion
七、介词in和with在汤汁、配料中的用法
1、如主料是浸在汤汁或配料中时,使用in连接。

如:豉汁牛仔骨Steamed Beef Ribs in Black Bean Sauce
2、如汤汁或蘸料和主料是分开的,或是后浇在主菜上的,则用with连
接。

如:海鲜乌冬汤面Japanese Noodle Soup with Seafood
八、酒类的译法原则
进口酒类的英文名称仍使用其原英文译法,国产酒类以其注册的英文为准,如酒类本身没有英文名称的则使用其中文名称的汉语拼音。
