The hot pot is a communal affair, where family and friends gather around a steaming pot filled with a rich, flavorful broth. The beef is sliced paperthin, allowing it to cook almost instantly when placed in the boiling broth. This not only preserves the tenderness of the meat but also enhances its natural flavors. What sets Chaoshan beef hot pot apart is the dipping sauce, known as satay sauce or xiangzhi in Mandarin. Its a concoction of crushed peanuts, garlic, soy sauce, and a hint of sugar, which creates a sweet and savory balance that complements the beef perfectly. The sauce is a staple in Chaoshan cuisine and is used in various other dishes as well.Another dish that I hold dear to my heart is the Chaozhou oyster omelette or Chaozhou li zhi jidan. This dish is a perfect blend of textures and flavors. The oysters are fresh and plump, providing a burst of oceanic goodness with each bite. The omelette is light and fluffy, with a crispy exterior that adds a delightful contrast to the tender oysters. The secret to a greatoyster omelette lies in the technique of stirring the egg mixture just before it sets, ensuring a fluffy texture. The Chaozhou fish ball soup or Chaozhou yuwan tang is yet another dish that showcases the Chaoshan peoples culinary prowess. The fish balls are made from a mixture of fish meat and tapioca starch, which gives them a unique, bouncy texture. The soup is light and refreshing, often served with a side of pickled mustard greens, which adds a tangy note to the dish. One cannot talk about Chaoshan cuisine without mentioning Chaozhou yong cake or Chaozhou yong bing. This is a type of rice cake that is soft, chewy, and slightly sweet. Its often enjoyed as a snack or dessert, and is particularly popular during the Chinese New Year. The cake is made by steaming a mixture of glutinous rice flour and water, and then rolling it in a mixture of crushed peanuts and sugar. The Chaoshan region is also known for its Chaozhou tea ceremony or Chaozhou cha yi. The tea ceremony is an integral part of Chaoshan culture and is deeply rooted in the local way of life. The tea is typically served in small, delicate cups, and the brewing process is a ritual in itself. The tea leaves are highquality oolong, which is known for its strong aroma and robust flavor. The ceremony is not just about drinking tea, but also about appreciating the art of tea making and the company of those around the tea table. In conclusion, Chaoshan cuisine is a reflection of the regions rich history and culture. Each dish tells a story, and every bite is an experience.Whether its the tender beef hot pot, the fluffy oyster omelette, or the chewy yong cake, Chaoshan cuisine offers a culinary journey that is as memorable as it is delicious. Its more than just food its a celebration of life, tradition, and the Chaoshan spirit.。

补充资料3 :广济英文简介:(供参考)
Guangji Bridge , also known as Xiangzi Bridge is an ancient bridge that crosses the Han River in Chaozhou, Guangdong province, China. A key cultural relic under
national protection, the bridge is renowned as one of China's four famous ancient
bridges; the other three are the Zhaozhou Bridge, the Luoyang Bridge and the Lugou
Bridge.
The Guangji Bridge was originally a pontoon bridge built in AD 1170 during the Southern Song Dynasty with a length of 518 meters (1,699 ft). Later, construction of
piers and framework started from both banks of the river on which it was moored, and
200 years later the current form of the bridge, with a floating section supported by 18
wooden pontoons between two beamed sections, was completed. The floating section
can be disconnected for the passage of large boats, an innovation that set a precedent
in bridge-building history.
There are two iron cows standing at both ends of the bridge, in the hope of protecting the bridge from the flood damage. Its two beamed sections resemble
waterside streets, with a distinct pavilion and tower on each of its 24 piers.
