2 book_1_Unit_5_Nutrition_needs
Unit 5 Nutrition NeedsCount your calciumGot milk for your bones? No it’s not just for your bones, it’s also for your heart rate, and your muscles, and even your nervous system. And the good stuff in milk, of course, is calcium. So here’s Jannifer Harrison with our FYI to help you count your calcium.Got milk? Okay you may be familiar with the popular slogan, but a recent survey found that most Americans get less than half the amount of calcium they need on a daily basis. So how much calcium is in your diet?I really never thought of how much calcium I eat.Do I get enough calcium? I get a fair amount of calcium. I don’t think I get enough calcium though. To get a clear idea of cal cium’s role in our bodies, diet and life, we’re doing a calcium count on Diana and Izzy… Following them through their day to see how much of this mighty mineral they each eat. They’re helping us out by not altering their diets, and writing down whatever go es into their mouths. How many milligrams of calcium do you think you eat? I have no clue. And how much calcium should Izzy eat? There’s quite a range of needs, and the recommended daily allowance looks like this: [Recommended Daily Calcium Allowances: 0-6 months, 210 mg; 7-12 months, 270 mg; 1-3 years 500 mg; 4-8 years, 800 mg; Teens, 1,300 mg; Adults, 1,000 mg; Adults over 50, 1,200mg.] If all those numbers make you dizzy, we’re going to simplify these nutrient needs. But the startling fact is this: if you don’t get enough calcium, the body actually steals calcium from itself. One of the main functions of calcium is bone structure, and if we don’t get enough, especially early in life, them we use our calcium from our bones for other functions. So on to our calcium counters. Remember, Diana needs 1,000 mg today, and she starts her day with cereal and mild, which gives her 227 mg of calcium and Guava Juice and lucky for her, the juice is fortified with calcium, adding nearly 200 mg to her count. So her grand total is 427 mg of calcium in her first meal alone.Izzy, who needs 1,300 mf of calcium today, hits a local restaurant for breakfast and ordered up French toast and hot chocolate, giving him only 243 mg of calcium. Izzy’s breakfast proving the point that getting enough calcium can be challenging. Can I eat my last piece of French toast now?Julie, we are in front of the dairy section but a lot of people can’t tolerate dairy. How do you get calcium in your diet if you can’t eat this stuff?First of all cheese and yogurt have cultures in them that make it easier to tolerate, and they’re very good sources of calcium.Calcium does lurk in surprising places. Oranges have 52 mg of calcium, two corn tortillas give you 150 mg, cooked greens give you about 225 mg, and eat 3 ounces of sardines. Yes sardines and you’ll gobble up 325 mg of calcium. For lunch, Izzy eats out again, which can be typical for the teenage lifestyle. It can also put them at risk for low calcium intake. Case in point. Izzy’s meal of Soda, French fries and a bacon cheeseburger gives him only 100 mg of calcium, bringing his daily total to 343 mg, and to make matters worse…There’s a chance I might not have dinner.Diana chows down a turkey sandwich, chips and coke for lunch, adding 213 mg of calcium toher day, and bringing her total to 640 mg. She’s over halfway there, but even if you do get enough calcium, there’s something else you need for calcium to work.Calcium cannot be utilized in our body without enough vitamin D. Therefore, we need adequate amount of vitamin D before we can even use the calcium that we take in.Ten minutes a day in the sunshine gives you your vitamin D, but with all the numbers in the calcium story, how can you yourself make sure you get enough milligrams of calcium? With calcium, because the RDA is 1,000 mg a day, you can take the percent daily value, add a zero, and that’s how many milligrams of calcium you are getting with each serving of that food product.Example: this frozen yogurt has 30 percent calcium. Take that number 30, add a zero, making 30 into 300, and this cold stuff gives you a whopping 300 mg of calcium per serving. And back to our calcium counters, Izzy did skip dinner, so this calcium total is a measly 343 mg for today. Does he think he hits 1,300 mf requirement? No, I don’t think I did.As fro Diana what’s for dinner?Chicken-fried steak, broccoli, rice, and salad and melon. Do you think there’s a lot of calcium in the chicken fried steak?I don’t know…probably no t.Diana’s dinner adds 73 mg of calcium to her tally, and a late night ice cream treat adds 300 more, and her grand total is 1,013 mg of calcium…hitting her requirement and giving her quite a bit more calcium than Izzy. But how about taking a calcium count yourself? Do the math and see if ou make the bone-strengthening and heart-pounding grade! So, are you doing as well as Diana? Remember, your calcium needs will change throughout your life. When Diana hits 50, she’ll need up to 1,200 mf of calcium a day. And, if you’re pregnant or you’re nursing, your needs are even higher than that. You need to find 1,300 mf of calcium every day.Four New Food GroupsAncient man ate more than 800 varieties of fruits and vegetables. Today we eat far fewer, but there’s a new way of eating that may change the number of varieties you choose and add a little color to your plate. Here’s Jannifer Harrison with our FYI.Remember your first nutrition lesson? Foods were divided up into simple groups.Bread. Milk. Meat. Fruit and Vegetables.Let’s take that last group, the fruits and vegetables and expand on it. that’s exactly what researchers have done and they’ve come up w ith four new food groups.“Four new food groups?”“Ahhhh?”“Chocolate, candy, peanut butter? ”“Protein?”“There are four new food groups. Do you know what they are?”“No, I don’t.”“Chicken.”“Oh? They’re not doing it based on color, are they?”That’s exa ctly it. call it the rainbow diet. The four new groups are red, orange, blue and green. Registered dietician Beverly Lorens admits this is the newest way to get us to eat out fruits and vegetables. This forces us to look at out plates and see what we are eating. Is it one drab color or is it variety?Let’s start with the red group. From tomatoes to watermelon, the red contain lycopene, whichhas antioxidant power to inhibit cancer growth. The deeper the color, the more pigment, the more the antioxidant power. Next group the blues?“Blue?”“What is blue?”“That is the question of the day!”Okay, call it blue-purple-plums, blueberries and blackberries contain polyphenols that help prevent disease. Blues also contain chemicals, which ease the aging process and help cognitive function. What about eggplant?Eggplant, I think what we need to do is…are you eating it? Yes, the color…seeing it is good. But with a plum, you eat the skin. If you eat the skin on the eggplant, yes, you’re getting those powerful chemicals.“Well, I’m very proud to be in the green gr oup.”I’m going to give you some green for some green? Thank you so much, too. Bev, we should be eating foods in the green group, why?Green gives us something called isothiocyanates, which is another one of those antioxidants that prevent cellular damage.Greens have phytochemicals that encourage enzymes in the body to actually scavenge and remove cancer-causing substances. And when it comes to the green group, ther’s a lot more than just lettuce.Brussels sprouts, cabbage, kale, here we have Chinese cabbage.Bev, why shoulc we eat orange foods?Orange foods bring a bionutrient called caratenoids and these are antioxidant fighting compounds.Foods like carrots and squash are good for vision. Other orange foods?Obviously oranges come to mind. but there are a variety of foods in the orange category.Oh certainly, we have right here next to us persimmons. Other foods include mangos and papaya. What about white? Americans eat more white, as in the white potato, than anything else. In fact, we eat five times more white than green. With white there is no pigment. But we can make those white foods a healthier choice by moving into the less refined version like the baked potatoes, which has everything Mother Nature ever gave it.What color is the food on your plate when you eat dinner usually?Uh oh, brown, white, green or yellow. Here’s the ultimate goal: Eat two servings of red, blue, orange and green every day. Studies show that populations that eat over seven servings of fruits and vegetable a day –and you’ll be eating eight on this plan – cut their cancer risk in half. Think of it as a color concoction for health! The riper the fruit or vegetable, the better. And keep in mind, it’s the skin of the ripe produce that contains the highest level of antioxidant.。
