符离集烧鸡符离集烧鸡(Red-Cooked Chicken, Fuliji Style)属于安徽沿淮风味,已有千年的历史,产于安徽省宿州市北30里位于京沪铁路大动脉上的符离镇。

烧鸡起源有几种版本,近代版本是最早在煮熟后要抹上一层红曲,故而过去不叫烧鸡而叫红鸡,然后在学习了道口烧鸡的基础上几经改进提高,逐渐形成现在的符离集烧鸡。

其与道口鸡所不同处,主要在于香料。

这种烧鸡以管、魏、韩三家的制品最为出名,被列入中国名肴之林,现如今更有徽香源公司坚持“千年符离集,一脉徽香源”的理念坚持发展烧鸡产业做法∙1.活鸡宰杀放尽血水,过沸水焯烫、去毛、洗净,从腹腔剖开,取出嗉囊,用水洗净。

∙2.用刀背敲断大腿骨,把两只腿交叉塞入鸡腹内。

∙3.鸡的左右肋下用尖刀各刺一开口。

∙4.将两边的翅膀从开口中塞入,只留后半部在外,将塞好的鸡置于阴凉通风处阴干4小时,赶时间的同志,这个阴干的过程可用吹风机的低温风来完成,这样只需15-20分钟,但一般建议还是自然风干的好,因为鸡在宰杀完毕后,需要一个自然排酸的过程,排酸的鸡肉口感更好,肉质更烂;。

∙5.取20克麦芽糖饴置于碗中,将阴干的鸡表面均匀的刷上糖饴,注意边边角角的地方都要刷到,如果没有糖饴,可用8克蜂蜜加12克水调匀后代替,但相应的在下一步卤煮的时候要加入8-10克的糖。

∙6.锅内倒油,大火烧至七成热时,改小火,下入鸡,炸至通体金黄,家里有直身吊锅的,用那个炸比用炒锅炸要好,因为油更深,可以将鸡全部淹入油中浸炸,这样表皮上色更均匀,象我这样用炒锅炸的,只能不停用将油用锅铲浇在鸡身上,并且过几分钟还要将鸡翻个身,或左或右或上或下,这样才能每一面都炸到,但也免不了受热不均,贴着锅底的地方还是会比其它地方的颜色要深。

∙7.将炸好的鸡捞出滤干油分备用。

∙8.将所需卤料混合置于碗中。

∙9.用棉布或纱布包起扎紧。

∙10.取一大砂锅,倒入半锅水,下入卤料包、盐、倒入剩余的糖饴。

∙11.然后加入生姜、料酒、老抽、猪油,大火煮沸。

但是从历史渊源、制作出众、低调奢华的角度来看的话,恐怕要数“符离集烧鸡”了。

“符离集烧鸡”,正牌嫡出的安徽宿州菜。

早在两千多年前汉代楚王刘戊之墓中便发现,该墓的庖厨间存一泥封陶盆,泥封上盖有“符离丞印”的封记,盆内保存的鸡骨基本完好。

经考古专家鉴定和推断,此鸡乃楚王下属古符离县上奉的“符离贡鸡”。

以前,宿州人过年时,怎么也得想法弄一只活鸡,做只烧鸡,这是年夜饭上最撑台面的一道大菜。

如今,“符离集烧鸡”的名气已经名扬全国,1956年入选为“中国名菜”,并列入《中国名菜谱》。

2005年成为国家地理标志产品,2008年被列入非物质文化遗产名录。

符离集烧鸡无鸡不成宴符离镇隶属安徽省宿州市埇桥区,地处安徽宿州、淮北和江苏徐州三市之间。

符离镇是驰名中外的烧鸡之乡、皖北重镇。

符离集烧鸡
一、Name: Roasted chicken, fuliji style
二、典故(Origin):
符离集烧鸡已有60多年的历史。

其与
道口烧鸡(Red-Cooked Chicken,Daokou
Style)所不同处,主要在于香料(spices)上,被列入我国名肴之林。

据载,清乾隆二十二年(公元1757年),乾隆皇帝第二次南巡,宿州知州张开仕进贡符离集卤鸡,乾隆帝品尝后称赞不已。

这就是古符离县贡鸡(chicken as tribute)之说。

1951年,政府组织烧鸡生产互助组,同时将各种品牌烧鸡统一定名为“符离集烧鸡”,符离集烧鸡由此开始不断发展壮大,与德州扒鸡(Braised Chicken,Dezhou Style)、道口烧鸡、沟帮子烧鸡并称为中华四大名鸡。

1956年5月,在北京举办的全国食品展销会(exihibition)上,符离集烧鸡以其色、香(fragrance)、味、形(shape)俱佳的特点名列前茅。

1980年在全国食品总公司举办的熟食品(deil)内部展销会上又名列第一。

1983年,符离集烧鸡罐头厂(Canned Foodstuffs Factory)试产成功,既保持了符离集烧鸡色佳味美的特点,又具有罐头的特殊风味。

烧鸡和烧鸡罐头不仅远销北京、上海、南京、天津、哈尔滨、四川等地20多个省市自治区,而且大量出口创汇(earn foreign exchange through exports)。

现在符离集已成为名符其实的“烧鸡镇”(town of roasted chicken)。

全镇有国营集体生产厂家10余个,个体、连户烧鸡经营者数百家,从业人员数千人,每天上市烧鸡万余只,每逢节假日还成倍增加。

四、原料(ingredients)及做法(way for cooki ng)
原料:
肥鸡10只熟硝(cooked nitroglycerin)15
克盐150克香料(川椒(Fagara)、茴香
(fennel)、良姜、丁香(clove)、白芷
(angelica))共约35克糖、生油适量
制作过程(procedures):
1.宰杀煺毛(unhair):将鸡宰杀后,将鸡
的老皮(old skin)刮(shave)掉。

2.油炸(fry)烹煮:先用糖抹遍(put on)鸡身。

然后投入热生油(unboiled oil)
锅炸到皮呈金黄色(Golden yellow)捞出。

随即在另一锅内,倒上老卤(master sauce)和香料(香料用布袋装好扎紧)、盐及适量水烧沸,再将鸡和熟硝一起放入,先用大火烧煮,再转小火焖酥,新鸡约煮1小时,隔年鸡需煮2~3小时。

煮时,
为防止一面熟一面不熟(half-cooked),原先要进行翻动(turn over),现已加以改进,既不翻动,也不加盖,只用铝丝(aluminium wire)篦子压住鸡身。

这样既可保持鸡的完整(completely),又不致产生此熟彼不熟的现象。

五、特点:
香气扑鼻诱人(tempting),色佳味美,肉质白嫩(tender white),肥而不腻(fat not rich),骨酥,嚼之即碎(chew up),有余香(lasting frangrance),如在出锅后趁热轻轻提起鸡腿一抖,鸡肉便会全部脱落而骨架(bones)相连(connected)。
