• The Processing of Black Tea:
• After the leaves are picked(采摘), they are laid out to wither(杀青) for about 8 to 24 hours. This let most of the water evaporate. Then the leaves are rolled(揉捻) in order to crack up the surface so that oxygen will react with the enzymes(酶) and begin the oxidation process. The leaves are left to completely oxidize(氧化), thus turning the leaves to a deep black color. After that, final drying(干燥) takes place.

Black tea 红茶
The most essential character of black tea is red tea water, red leaves and sugariness. The color of dry black tea is red with black, so that “Black Tea” in English means “the black tea”。 Most people in China are accustomed to drink plain tea without any additives. In European and Amercian countries, people like to drink tea with milk and sugar added. Black tea can be prepared as a cool beverage. The usual way is that: pour luke warm water over instant tea to make a strong liquid, then pour the liquid into a glass filled with ice cubes, add honey or sugar to taste and one or two slices of lemon. Then a cup of cool beverage with sweet and acid taste is ready.

Qimen black tea
a top-grade black tea from Qimen 祁门 and Guichi 贵溪 of Anhui Province. In 1915, Qimen black tea was awarded the Gold Medal at Panama International Fair. From then on, it has been popular with people in foreign countries, especially the upper-class people in Britain.
♣ However, it is the Portuguese (葡萄牙人)and Dutch ( 荷兰人)who claim the credit bringing tea and tea drinking to Europe.The Portuguese opened up the sea routes to China, some say as early as 1515. Jesuit priests travelling on the ships brought the tea drinking habit back to Portugal.
