If the recipe calls for an original shape of fish, you should first gut it by cutting along the spine. Lift out the center bone and small side bones and cut the spine away at the head and tail. Finally, wash the cavity and the outside and arrange the fish as closely as possible in its original shape.

For example, vitamin D is needed to help absorb calcium, just as vitamin C is needed to help absorb iron.
