食材主料:武昌鱼油适量盐适量料酒适量胡椒粉适量姜片适量大葱适量辣椒适量豉油适量步骤1.这是刚刚买回来的扁鱼,我们这叫武昌鱼。

买的鱼只让卖鱼的去鳞,不要开膛破肚。

报名时我还没做过呢。

前一天我特意去买了两条鱼,先在家做了一条,没想到还真行,老公说好吃。

这下心里有底了。

可没想到在现场出了问题:没有蒸锅。

这本是一道清蒸的菜,怎幺办?临时改了做法,煎。

只是没法装盘了,弄不出来,只好连锅端。

评委们品尝后给予一致的好评,哈哈,这是我在大厅广众下第一次献丑啊。

食材主料:偏口鱼500g葱适量姜1块蒜适量料酒适量盐适量蒸鱼豉油2勺香菇1朵糖适量步骤1.一斤的扁口鱼(鲑鱼,武昌鱼都可以),不要太大,大了一般的盘子装不下了。

我这条就大了点。

都装到盘子外面了。

把鱼收拾干净,不要开膛,把鱼头和鱼尾切下来,从鱼头处掏出内脏。

从鱼背处每隔一公分切一刀,不要切断鱼腹。

抹上盐和料酒腌半个小时。

2.葱姜蒜切片,香菇一个发好,切条摆在盘子底上。

把鱼摆在上面,把切开的鱼摆成孔雀型。

小碗中倒入两勺李锦记蒸鱼豉油,少许糖,醋,料酒,盐,搅匀,均匀地倒在鱼身上。

把小红辣椒切成圆圈,摆在每一片鱼上。

水开后放入蒸锅,十分钟。

3.小绿葱(我用的是大葱,不太绿,最好用小香葱,实在没有用点绿尖椒也行)切碎,放在鱼头后边。

炒锅烧热,倒入一勺油,热后放点花椒粒,炸出香味后浇在鱼身上。

小贴士:注意在切鱼的时候刀要快,否则很难切断鱼骨。

每刀间隔一公分,不要太宽。
