做法步骤1、先把南瓜去皮。

2、将南瓜切开,去籽,然后切成大小一样均匀的条状。

3、咸鸭蛋去壳,去清,用刀把蛋黄压碎(半斤多的南瓜约要大鸭蛋3-4个)。

最好能买到农村的鸭蛋(黄多、油也多)。

4、烧水焯南瓜,煮和时间不要太长(倘若没有经验,建议你先尝一下!)。

5、锅里放入油,将压碎的鸭蛋黄放入锅中炒,注意一定要小火!炒到起气泡,加少许水,千万不可多放!(加水的目的是蛋黄较干,稀释一下)。
