接受审核的英文菜名来自各星级饭店、餐馆菜单,翻译专家对这些菜名进行了审核和分类,并对原有的菜单英文名进行了增补,现已初步完成了《北京市餐饮业菜单英文译法》(讨论稿)的编写工作。

据悉,今年春节前后,综合各界意见修改后的《北京市餐饮业菜单英文译法》将正式出台,届时北京市所有餐饮饭店中的数千种菜品、酒水都将参照这个统一的英文译本。

今后,中国菜肴的英文名将有望在全国范围内统一。

古怪翻译五花八门从本次征集活动的社会反馈来看,豆腐、饺子、宫保鸡丁等中国最传统的食品、菜肴的英文名最具争议。

在《北京市餐饮业菜单英文译法》(讨论稿)中,豆腐被译为“bean curd”,饺子译为“dumpling”。

许多市民认为,既然“jiaozi”“tofu”已被世界广泛接受,为什么不采用?此外,对于“宫保鸡丁”这一常见菜式,不少市民认为“KungPao Chicken”已被老外们所熟知,可谓家喻户晓,为什么译文舍近求远?(在讨论稿中被译为“Sautéed Diced Chicken with Peanuts and Chili”)记者在采访中了解到,近来许多星级酒店、餐馆均推出了英语菜单,有的按照字面意思直译,有的采取音译,有的则根据典故进行解释性翻译。

菜名英译缺乏统一标准、译者专业水平有限等多种原因导致了目前英文菜单五花八门,常常让老外们目瞪口呆,不知所云。

加拿大小伙子Brain表示,一次他在一家东北餐馆看到“tiger dish”(老虎菜)的菜名时,吓了一跳,心想“中国人为什么要食用受保护动物——老虎呢?”类似让外国人摸不着头脑,甚至引起误会的菜名还有很多。

除普通食物之外,“还吃着他国人所不吃的珍稀:吃西瓜的皮,吃鲨鱼的鳍,吃燕子的窠,吃狗、吃乌龟、吃蛇、吃狸猫。

”(罗塞群,1998)有些食物令他们反感,同样的食物有不同的表述,而相同的表述却指向不同的食物。

此外,用于中菜命名的某些动物在西方文化中又极强的贬义,如龙、凤。

因此,在中菜名的英译过程中,要注意中西方文化的冲突,翻译要符合西方饮食习俗。

1.4大力弘扬民族文化作为中外文化交流的一个重要组成部分,中国菜英译必须为弘扬中华文化传统服务,必须尽可能地传播中国的饮食文化与传统。

翻译时,可以视时间、地点等客观情况进行必要的、可行的介绍,让外国客人了解中国菜背后所包含的丰富的文化因素,让他们更深入地了解中国。

2翻译方法2.1直译“写实型”菜肴反映该菜肴烹饪原料搭配、原料形状、烹饪调味或原产地,可以直译。

基本上有以下几种情况。

以常见原料做菜名的,翻译时直接选用意义等值的英文单词进行翻译。

例如:玉米肉丸(meatball and corn)、白果虾仁(shrimp and nut)、雪豆牛肉(beef and snow peas)、蘑菇虾(shrimp and mushroom),直接用and把原料连接起来。

中菜的烹调方法很多,大约有50多种,最常用的有:煮(boil)、炖(stew)、烧(braise)、煎(pan-fry)、炒(stir-fry/saute)、爆(quick-fry)、炸(deep-fry)、烤(roast)、蒸(steam)等。

按照英文的表达习惯,可以采用“烹调法+ed+中心词(+with/in+佐料)”。

例如:炸鸡卷fried chicken rolls红焖肘子braised porkjoint清炖甲鱼steamed turtle干炒牛肉丝stir-fried beefshred盐水大虾salted prawns红烧海参sea cucumber withbrown sauce涮羊肉instant boiled mutto蜜酱烤鸭roast duckwith sweet paste以地名命名的菜肴在英译过程中要注意保留本土文化,反映地方特色、烹饪技艺和风味,要将地名译出。

如:北京烤鸭roasted Beijing duck广东香肠Guangdong sausage,南京板鸭steamed Nanjing duck,潮州卤水鹅Chaozhou Style braisedgoose。

2.2意译有些菜名反映的是中国人趋吉避讳、去俗避雅的文化心理,注重“音、行、意”方面的意境美,以耐人寻味的方式激发食者的食欲。

通过比喻、联想的方式融合了动植物名称、自然景物甚至成语典故在菜名中。

这些菜名独特的文化寓意是西方人很难理解的。

在翻译这种菜名时,由于“找不到对应的目标语,只好放弃形象的比喻的描写手段,略其形象色彩,退而求其文本上的不冲突做到概念意义上的转换”(朱晓媚,2002)。

在这种情况下,笔者赞同刘清波(2003)、黄海翔(1999)等人提出的“避虚就实”方法,即舍去原菜名中的行话隐语、比喻形象,通过意译反映出菜肴的主要原料、烹饪方法等。

例如“炒双冬”,实际上“双冬”就是蘑菇和竹笋,故译为sautémushrooms and bamboo shoots。

其他的,例如:红烧狮子头(红烧猪肉丸)braised pork balls白云凤爪(白醋腌鸡爪pickled chicken paws霸王别姬(甲鱼烧鸡块)broiled chicken cutlets with turtle金玉满堂(虾仁鸡蛋汤)shrimp and egg soup在中国传统文化中,一些赋予深刻象征意义的高贵植物和晶莹透亮的玉石被用来为一些色泽鲜艳、爽心悦目的菜肴冠名。

人们常用“芙蓉”代表“蛋白”,“玉兰片”代替“笋片”,把虾仁、豆腐比作“白玉”,蚕豆、青豆比作“翡翠”甚至萝卜丝也成了“珊瑚”,豆芽变成了“银芽”。

但这种高雅的联想与另一种语言文化是无法相融的,英译的原则只有采用意译。

(刘清波,2003)如:芙蓉虾仁shrimps with egg-white炒玉兰片stir-fried bamboo shoot slice银芽炖雪梨Chinese pear with bean sprouts琥珀花枝饼cuttle fish cake with walnuts2.3音译随着人类的不断进步,文化的发展也出现全球化的趋势,不同国家文化之间的接触不断加强,既然我们中国人已经能广泛接受“三明治”、“沙拉”、“麦当劳”和“肯德基”等西方快餐,中国的“饺子”、“炒面”、“炒饭”、“豆腐”等中国菜肴名称也就能被西方人接受,而且事实上也是如此,tofu(豆腐)已经进入英语词典,成为英语词汇的一部分。

因此在翻译此类菜名时,音译可谓理想的选择,以保持和方快餐,中国的“饺子”、“炒面”、“炒饭”、“豆腐”等中国菜肴名称也就能被西方人接受,而且事实上也是如此,tofu(豆腐)已经进入英语词典,成为英语词汇的一部分。

因此在翻译此类菜名时,音译可谓理想的选择,以保持和传播中国文化。

西方国家一些中餐馆菜名音译以广东话发音基础的,已成为约定俗成的用语(如炒粉chow fun,炒饭chow fan等),为西方人接受,为便于西方人理解,在翻译时最好沿用这些用法。

例如:家常豆腐(tofu,home style)、牛肉炒粉(chow fun of beef)、猪肉饺子(jiaozi of pork filling)、扬州炒饭(Yangzhou chowfan)。

2.4意译+音译+注释有些菜名包含浓厚的中国文化内涵,在与西方文化不冲突的前提下,不必简单地采取避“虚”就“实”法翻译,而应尽量保留其独特的文化寓意,我们可采用直译或音译菜名然后用加注释的方法解释其包含的文化含义,让客人在享受美食的同时感受中国文化的魅力。

如果需要解释的内容不多,如“开门红”、“佛跳墙”,先译出菜品的主要原料、制作工艺或主要特色等,再加括号标明菜名的拼音和字面意义。

因此,“开门红”可译为tender fish head with red pepper(kaimenhong,literally meaning business opens with a good start),“佛跳墙”可处理为stewed shark fins with assortedseafood(fotiaoqiang,Buddha jumping over the wall)。

如果需要解释的内容相对较多,如“火烧赤壁”、“叫花鸡”等,由于菜单的篇幅有限,不可能把全部的故事列于菜名之后,但可以加“﹡”号注明更多信息参见菜谱附页,为方便客人了解菜名的历史文化信息,酒店服务员应熟记菜谱附页中的内容,在客人点菜或上菜时予以讲解;当然,客人有时间也可以自己阅读欣赏。

“火烧赤壁”可处理如下:“火烧赤壁”可处理如下:火烧赤壁delicacy-loaded ship on fire of strong liquor(huoshao chibi,burning of Cao s troops at Chibi,named af-ter a warfare of the Three Kingdom period)。

然后将“火烧赤壁”这个故事放入菜谱附页。

(谢先泽等,2006)2.5直译+注释“龙”和“凤”是中国古代传说中神秘的动物,在中国文化中代表吉祥如意,分别象征着皇权和天下太平。

它们具有独特的中国民俗文化,经常作为喻体出现在菜名中。

它们与西方文化有极大冲突,但是,为了传播中国这种独特的文化,笔者主张应运用直译法特保留其文化内涵。

随着中外文化交流的不断深化,这些文化必将象“麦当劳”、“肯得基”一样为外国朋友广泛接受。

(不过,在直译这种文化形象的基础上应辅以关于菜肴基本信息的说明。

如“龙凤配”可译为“dragonmatching phoenix(fish and chicken)”,“二龙戏珠”可译为“double dragons playing with a pearl(two fishes and a co-conut)”等,甚至可以将“龙”、“凤”的文化寓意在菜单上加附页以供外国朋友了解;如果是口译,译者也应将文化含义予以解释。
