和high tea不同,afternoon tea 有着更加“高贵”的出身。相传19 世纪初,由 于晚餐一般在晚上八点才供应,贝德福德公爵夫人安娜 (Anna)认为需要做些什么来 填补下午这段饥肠辘辘的时间。于是她会在自己的房间里准备一些茶水和点心,邀 请朋友来参加,久而久之就发展成了后来的下午茶。

在中国,饮茶的历史可以追溯到公元前3000年,而在英国,喝茶的风俗直到17世纪60年代英王查尔斯二世时期才开始兴盛起来。
而下午茶的概念要到19世纪中叶才出现。
下午茶是由第七任贝德福公爵夫人安娜在1840年创造出来的。
公爵夫人在下午四点钟左右常常会感到饥饿,而根据当时的风尚,晚餐要在八点钟才会开始,于是午餐和晚餐中间就有很长的一段时间。
公爵夫人就命人把茶,黄油面包和蛋糕在下午晚些时候送到她的房间里去吃。
这以后就成了她的习惯了,而且她开始邀请好友一起来饮茶吃点心。
自此之后,茶歇就成了一种社会潮流。
在19世纪80年代,通常,下午茶会安排在起居室,时间大约是在下午四点到五点,而上层社会的女士们则会穿着长裙,戴手套和帽子来品用下午茶。
传统的下午茶包括精选的三明治,英式奶油松饼,还有蛋糕和其他甜点。
选用印度或锡兰(现斯里兰卡)出产的茶叶放入银质茶壶内泡茶,再将茶水倒在精致的中国骨瓷茶杯中饮用。
第一部:享用美味点心。
通常三层塔的第一层是放置咸味的各式三明治,如火腿、芝士等口味,但这些三明治并不是点心主厨做的,而由另外的三明治师傅制作。
第二层和第三层则摆着甜点,一般而言,第二层多放有草莓塔,这是英式下午茶必备的,其他如泡芙、饼干或巧克力,则由主厨随心搭配,第三层的甜点也没有固定放什么,而是主厨选放适合的点心,一般为蛋糕及水果塔在事事讲究传统的英国下午茶漂洋过海传到我国以后,茶点也相应做出了一些变化,开发出各种新的口味。
像是只有一口大小、上面缀有鱼子酱和小黄瓜的甜点,手制饼干,以及一种可以和奶油或果酱一起吃的叫做scone的英式松饼。

带您品味人生:传统的英式下午茶中国和英国都是世界上以饮茶而闻名的国家,但在喝什么茶以及怎么喝上,二者却有着很大的区别。
在17世纪英国人才接触到茶,刚开始是皇室贵族及上流社会的时尚饮料,直到17世纪末茶才成为一般民众可以负担得起的饮料,并成为英国饮食文化的重要一部分。
英国人从早晨开始就喝茶,到了下午则开始喝下午茶,这已经成为英国行之多年的传统。
英国饮茶的起源1662年,葡萄牙公主凯瑟琳(Catherine)远嫁斯图亚特王朝的英王查理二世(Charles II)时,将红茶引入英国,堪称英国饮茶第一人。
当时凯瑟琳公主的嫁妆中包括221 磅礴红茶以及精美的中国茶具。
新王后高雅的品茶习惯引得贵族们争相效仿。
19 世纪,维多利亚女王时代,英国的名流中流行每天两餐的生活方式,晚间 8、9 点钟才进晚餐。
这就使得早餐之后的下午显得特别漫长。

茶点的食用顺序应该遵从味道由淡而重,由咸而甜的法则。
先尝尝带点咸味的三明治,让味蕾慢慢品出食物的真味,再啜饮几口芬芳四溢的红茶。
接下来是涂抹上果酱或奶油的英式松饼,让些许的甜味在口腔中慢慢散发,最后才由甜腻厚实的水果塔,带领你亲自品尝下午茶点的最高潮。
9、除非客人人数很多,否则红茶一定要当客人面前冲泡。
第一泡红茶过後,可将茶壼摆在桌子中央,让客人自行取用、调配。
10、要使茶会气氛热络、毫无冷场,“愉快的交谈”是非常重要的因素。
一开始可先谈些与红茶或茶点有关的话题,然後再慢慢的展开别的谈话内容。

High Tea (The traditional 6 o’clock tea)
• The British working population did not have Afternoon Tea. They had a meal about midday, and a meal after work, between five and seven o'clock. This meal was called 'high tea' or just 'tea'. • (Today, most people refer to the evening meal as dinner or supper.)
• Traditionally eaten early evening, High tea was a substantial meal that combined delicious sweet foods, such as scones, cakes, buns or tea breads, with tempting savouries, such as cheese on toast, toasted crumpets, cold meats and pickles or poached eggs on toast.
• Britain is a tea-drinking nation. Every day they drink 165 million cups of the stuff and each year around 144 thousand tons of tea are imported. • Tea in Britain is traditionally brewed in a warmed china teapot, adding one spoonful of tea per person and one for the pot. Most Britons like their tea strong and dark, but with a lot of milk.
