浅谈中国传统美食的英文翻译王丽君,朱惠娟,陈梅兰(中国地质大学江城学院外国语学部,湖北武汉 430200)摘要:中国的饮食文化源远流长,博大精深,探究中国传统美食的英文翻译在跨文化交流中起着重要作用。
做好传统美食的英文翻译有助于树立良好的国家形象。
而传统的菜名翻译方法大多着眼于宏观,缺乏对其文化的传承,笔者通过学习、总结菜名的翻译方法,将其运用于小吃的翻译,归纳出了相应的翻译策略。
关键词:传统美食;英文翻译;文化中图分类号: H059 文献标识码: A 文章编号: 1009-5039(2012)02-0160-02在当今政治经济全球化的过程中,饮食文化已成为跨文化交流的重要内容,而中国饮食文化源远流长,博大精深,探究中国传统美食的英文翻译具有跨文化性质和传播文化的历史意义。
据报道, 2011年8月,北京风味小吃将打包申遗,申遗工作和“北京小吃现状”调查项目已经正式启动。
北京小吃技艺精湛,风味独特,文化底蕴深厚,是非物质文化遗产的重要载体和宝贵的民族自主品牌,但其品牌价值并没有得到充分地挖掘和利用。
日前,“北京风味小吃”申遗项目已通过区级有关部门审核,传统美食的保护与传承受到政府的重视。
2011年8月18日,美国副总统拜登访问中国,在美国新任驻华大使的陪同下,品尝老北京传统小吃。
有人对此发表评论,认为拜登此举属“亲民”行为,美国政治家很善于塑造公众形象,美国使馆很会做公关传播,值得借鉴。
事实表明,中国的传统美食不仅吸引着外国贵宾前来品尝,而且已成为中国特有的符号与象征,在政治舞台上扮演着重要角色。
然而,目前中国美食文化的发展并不平衡。
在武汉,热闹繁华的小吃街——“户部巷”里韩国料理、日本料理比比皆是。
而武汉另一以夜市闻名的美食街——“吉庆街”也已繁华不再。
传统小吃正在遭受外来文化的冲击,传统美食文化的传承也已刻不容缓。
因此,挖掘我国传统美食的文化价值有助于传播中国食文化,而探究中国传统美食的英文翻译更有助于加强中西方文化交流。
中国是一个饮食大国,中式菜肴、传统小吃品种繁多,烹饪技法丰富,命名讲究且具文化内涵。
随着中国经济的发展,中国与世界各国在各方面的合作日益频繁。
中国的餐饮文化也在世界范围内得到了广泛传播。
由于2008年北京奥运会和2010上海世界博览会的召开,中国传统美食的英文翻译问题受到广泛关注,而现行美食的汉英翻译极不规范,这不仅有损坏中华文化的形象,影响外国友人在中国的饮食消费,还阻碍了中国饮食文化的发展以及中国与世界的交流。
因此,探究中国传统美食的英文翻译方法是十分必要的。
1 中国传统美食的英译问题1.1 拼写混乱1)单词拼写错误;2)大小写误用;英文菜名应当遵循实义词首字母要大写,虚词(如介词、连词等)首字母小写的原则。
3)英译名称冗长繁杂且缺乏统一标准1.2 语法不规范1)乱用冠词;在菜名的翻译中常出现漏用或错用冠词的情况,冠词为英语独有,汉语中没有冠词,通常菜名的翻译是不需要加“the” 的。
如,“武陵甲鱼”译成The Wuling Soft-shelled Tur⁃tle.2)语序错误;很多菜名的翻译由于语序的排列不正确,而导致译语不符合目的语的规范,一般表示口味重的形容词结构应置于菜名之首。
如,“酸辣海鲜羹” Seafood Soup with Hot and Sour应改为Hot and Sour Seafood Soup;3)名词单复数问题;现行的美食翻译中单复数乱用现象较为普遍。
一般根据可数名词使用复数,不可数名词使用单数的原则进行翻译。
1.3 语意模糊中式菜肴的用料、烹饪技法和国外区别很大,因此,很多汉语词汇在英语中找不到对应词。
由于用词不准确,漏译、错译而导致语意模糊,如:“红烧狮子头”有人将其译为Braised Lion Head。
而“狮子”是英国的象征,对于这些菜名仅从字面上一对一地翻译,这种纯中国式的英语不仅没有体现汉语所要表达的意思、不符合英语的语言习惯,而且让食客不知所云何物,甚至引起文化误解。
1.4 忽略文化差异传统观念认为,翻译就是语言间的转换,却忽略了翻译的文化问题。
由于社会风俗、宗教信仰、道德观念等不同,中外友人在文化认同方面存在很大差异,而在应用翻译中往往忽略了这一点。
如:“龙风配”这道名菜就有人将其直译为 Dragon and Phoenix ,这显然不妥。
在西方文化中“Dragon”有邪恶之意,而“Phoenix”只存在于中国的神话里,西方人对此毫无感性认识。
某些美食名称本身寓意深刻,其背后往往包含着某个特定的历史典故或动人故事,蕴涵着美妙的意境,表达了人们的美好祝愿。
而一般翻译只是按照一定模式机械地进行翻译,难以传达美食丰富的文化内涵。
以上美食的英译问题不仅有损城市和国家的形象,更严重影响了中国传统美食的对外推介作用。
在全球化的文化趋同过程中,保持中国美食文化固有的个性和特性,保证中国美食身份的清晰度就显得尤为迫切。
目前,中国的美食文化身份还很模糊,在汉英互译中识别其文化身份,可强化本民族的文化特性,同时也促进着世界文化的多元性发展。
2 菜名翻译基本公式的解析与运用2.1 公式解析笔者通过对菜名翻译方法的学习与借鉴,总结了基本的翻译公式:人名/地名+形状+口感+烹制方法+主料+with+配料+in+ 汤汁+in+食器。
在运用公式时要注意以下几点:1)一般菜名都需将烹制方法和主料译出。
烹制方法和主料一般都需出现在译语中,因为外国食客得先知道自己吃的“是什么”,是“怎么做”的,这是最基本的信息。
特殊情况除需特殊处理,例如,在美式英语中“炒蛋”是 scrambled egg 不译成fried egg。
而其它元素如形状、口感、配料、食器有时可以视情况忽略不译。
2)译语顺序排列要灵活,便于食客理解。
例如:“云林鹅”Yun Lin Steamed Goose 和“贵妃鸡” Boiled Kwei-fei Chicken. 云林鹅是由我国元代画家倪瓒创作,而贵妃鸡源于20年代末,借京剧《贵妃醉酒》创制。
因此翻译时前者姓名置前,后者姓名居中,从朗读习惯上方便食客确认人名与主料的关系。
3)地名,特色地名所有字母都要大写,便于与人名区分。
例如:管渡泥鳅 GUAN DU Braised Loach4)口感名词翻译时特殊情况需要改译。
“香酥”“、“脆”一般用crisp、 crunchy,“辣”用spicy.然而闻着臭,吃着香的“臭豆腐”并不翻译为 stinking/smelly toufu .因为 stinking/smelly 都有“恶臭”的意思,听起来不雅,因此,为避免文化误解在口感名词上实行转换,译为pungent tofu较前者更能让外国食客接受。
5)汤汁一词的翻译需突破局限。
“羹”与“汤“有着本质的区别,不能统一翻译成Soup.例如,“鸡蛋羹” Egg Custard 和“鸡蛋汤” Egg Soup.菜名翻译如前所述,只要知道菜的做法与主料,利用公式即可将其译出,然而中国传统美食不仅色、香、味俱全,而且菜名本身寓意深刻,婉转动听,美食背后的典故源远流长,耐人寻味。
此外,传统美食的食疗功效也不可忽视。
因此,菜名翻译不仅要告诉食客吃的是什么,还必须译出其文化特色。
2.2 特色菜名的英译原则1)典故类典故类需译出菜名本身的含义及出处,采用异化的翻译策略,以源语文化为归宿推广中国的美食文化。
例如,油鹏自远方来Crisp Fried Locust with Spinach;Isn't it an enjoyment that your friends come from far away?—A famous sentence comes from《The Analects of Confucius》此菜名与《论语》中的“有朋自远方来”谐音,表达了对客人的欢迎。
2)药膳型最近,据世界卫生组织调查显示世界上80%的人依靠草药获得医疗保健。
在上世纪20年代的美国,由于公众对药物花费的不满以及对天然药物的兴趣导致草药的广泛应用,如今,草药再度在美国兴起。
几乎50%的美国人把草药用于食疗以提高健康水平。
而中国的很多传统美食都具有食疗功效。
翻译药膳型菜名时需注意采用一般现在时,坚持“医学名词粗略化,功能名词精确化,食器名词具体化”的原则。
据调查,尽管很多外国人将草药用于饮食,但他们对于药往往望而生畏,由于没有生病,心理上会对“药”说“不”,在国外,某些“中药店”的英译名不是” Medicinal Food”而是“Healthy Food”,即健康食品店。
同时,专业的医学名词在日常生活中出现的频率较低,因此,翻译专业医学名词时,要删繁就简。
例如,黄精鳝鱼片Fried Eel Slice;Keeps your skin smooth and is good for the weak该美食有助于皮肤光滑、健美,还具有补虚神的功效。
而黄精(Polygonti Powder)一词在日常生活中并不常见,此处略去不译,它的功效(medicinal properties)后文意译。
此外,食疗的作用最终是“预防”还是“治疗”,是“缓解”还是“根除”,翻译时要精确,否则就有欺骗食客之嫌。
同时,食器名词一般不省略而且要具体化。
例如,樱桃肉Steawed Pork with Cherry in an Earthenwear Jar;Wards off throat disease and cures rheumatism它是慈禧晚年比较喜欢的一道菜,富含丰富的磷、铁,常食有利于祛风湿、疏通血脉、预防喉症,它类似于瓦罐煨汤,食器在此类类美食的烹饪中发挥着重要作用,特将食器名词译出。
3)寓意型某些菜名寓意深刻,如阳春白雪、双龙戏珠、月映仙兔、一帆风顺等充满诗情画意。
显然,若仅仅采用公式翻译或按字面翻译不能传达其深刻的寓意。
笔者顺应英语受众的信息需求,先告诉食客吃的是什么,再表达我们的美好祝愿,将其寓意意译而出。
例如,一帆风顺 Steamed Sea Cucumber Stuffed withpork(plain sailing)此处以目的语为中心,采用归化的翻译策略。
再如,龙凤呈祥Stewed Shrimp with Shredded Chicken in AssortedSauce (Good Fortune)。
“虾”和“鸡”分别代表“龙”和“凤”,象征吉祥,然而“龙”在西方却是邪恶的象征,如,“亚洲四小龙”译为“Four Tigers”而不是” Four Dragons”,为了传达出“吉祥如意”的寓意,用Good Fortune即可,言简意赅。
3 我国传统小吃英译示例解析中国传统文化经过历史的积淀,具有很强的凝聚力和包容性。
随着全球化的影响,中西方的文化交流程度逐步提高,然而,由于西方经济强势的影响以及其强大的排他性而导致中国传统文化遭受严重的冲击。
