My legs got really tired from all the climbing, but it was worth it.Beijing is also famous for its crispy Peking duck. The juicy meat is wrapped up in those thin pancakes with vegetables andsweet bean sauce. So delicious! I probably ate about 20 of those duck wraps.Next we went to Xi'an, home of the Terracotta Warriors. This is where they discovered thousands of life-sized clay warrior statues buried underground for over 2,000 years! Each one has a different facial expression and details. It's crazy that they were all made so long ago without modern tools.In Xi'an we stuffed ourselves with dishes like biangbiang noodles - those are super thick and chewy noodles covered in a spicy sauce. I loved slurping them up! We also tried roujiamo, which are these messy but amazing pork sandwiches with bread baked in a special oven. The bread gets all crispy and flaky on the outside.Shanghai was the biggest city we visited and it had the coolest futuristic skyline I've ever seen. The buildings looked like they were from a sci-fi movie, all tall and twisty with neon lights. We went up to an observation deck to get a birds-eye view over the entire city.For breakfast in Shanghai, we had to try drunken xiaolongbao - those are little soup dumplings that are supposedly eaten by drunk people at night! The broth inside wasso flavorful and steaming hot. I loved biting into them and slurping the juices.Our last stop was Chengdu, the capital of Sichuan province. This area has the spiciest and most tongue-tingling cuisine in China and they are famous for their hot pot. Hot pot is where you cook your own meats and veggies in a bubbling pot of chili broth right at your table. We had all kinds of fun ingredients like beef, chicken, fish balls, mushrooms, leafy greens, and lots of chili peppers! Everything was so fragrant and delicious when cooked in that broth. And don't worry - they give you a bowl of milk to help cool your mouth if the spice gets too intense!We ended up trying so many different dishes in Chengdu because Sichuan cuisine has such a wide variety. Some of my other favorites were mapo tofu (funny name, but it's soft tofu in a deeply flavorful sauce), kung pao chicken (spicy diced chicken and peanuts), and dan dan noodles (thick noodles with spices and a crazy delicious pork and sesame sauce).China was such an awesome place to visit! Climbing up anddown the steep steps was a workout though - I was exhausted by the end!Another cool thing we saw in Beijing was a market selling all kinds of yummy street food. There were skewers of meat, veggies, candied fruits, and my favorite - jianbing! It's kind of like a crepe but with an egg cooked right into the wrap. And roujiamo, which are these soft bread pocket sandwiches stuffed with juicy shredded pork dipped in flavorful broth. We had hotpot, where you cook your own meats and veggies in a big boiling pot of broth right at your table. My dad's face turned so red from all the chilies! I liked dipping the food into the sesame sauce better.We also had Kung Pao chicken which originated in Sichuan. It contains peanuts, vegetables, chicken and tons of dried red chilies. My tongue was on fire but I still kept eating because it tasted so good! The servers even brought us bowls of shaved ice to nibble on between bites to help cool our mouths down.Our last city was Shanghai, which felt like a modern wonderland of skyscrapers, neon lights, and bustling streets. We took a river cruise along the Huangpu River at night to see the famous Shanghai skyline all lit up.
