3.1 求实原则美国著名翻译理论家尤金.奈达(Eugene A.Nida)在20世纪60年代末给翻译下了这样的定义:Translation consists in reproducing in the receptor language the closest equivalent of the source language first in terms of meaning and secondly in terms of style .由此可见,翻译最重要的任务是传递信息。

菜名翻译的首要任务是使外国宾客明白他们吃的是什么。

所以翻译人员应尽量翻译出菜肴的食材、辅料、刀工及烹饪方法等。

3.2 简洁原则与西餐相比,中餐菜名有时会显得复杂冗长,如果将主要食材、调料、配料、制作方法等一一翻译出来,固然准确到位,但却太耗费时力。
