构建适合酒店管理专业的大学英语教学新模式的探索与实践【摘要】长期以来,大学英语一直以egp(一般用途英语)教学为主,但是egp教学已经不再适应应用型本科院校的培养目标,也不利于学生英语应用能力的发展。

因此,倡导大学英语esp(专门用途英语)教学已经成为大势所趋。

本文以我校酒店管理专业为例,探讨与学生专业相结合的大学英语教学新模式的改革与实践。

【关键词】大学英语教学egp esp 酒店管理专业一、引言在国际化、经济全球化的环境下,当今社会越来越需要既具备专业知识,又能用英语进行对外交流和处理对外事务的高素质人才或应用型人才。

我校作为一个应用型本科院校,加强英语教学改革的力度,努力培养更多的适应外资企业和中外交流需要的人才,已经迫在眉睫。

我校和全国所有其它高校一样,大学英语的性质是基础英语,或叫一般用途英语。

大学英语教学的目的是打好语言基础,即基础英语占据大学英语教学的主要地位。

但是,随着新课标的执行,高中毕业生的英语水平在不断地提高。

大学英语有必要从基础英语逐渐转到专业英语上来。

学生结合专业学习英语,学习目标明确,学习兴趣就会提高,进而能大大提高语言学习效率(蔡基刚,2010)。

我校的酒店管理专业旨在培养国际化酒店管理与服务人才,以适应涉外豪华酒店的需求。

因此,如何使大学英语从egp教学向esp教学转变,构建适合我校酒店管理专业的大学英语教学新模式,成为了我们的研究课题。

二、egp与esp从目前我国的英语教学来看,一般用途英语(egp-engiish for generalpurposes)和专门用途英语(esp-endish for specific purposes)成为英语教学和研究的两大主流。

egp是指学校教授的基本英语知识,它强调学生理解英语的基本语言结构,包括词汇和语法,培养学生听、说、读、写、译五项基本技能,是日常生活中所需的必用语。

在egp教学法的训练下,学生能够阅读一些文学作品,进行日常交流等。

一、要善于激励学生,善于发现学生的优点,善于挖掘本学科兴趣点,使学生掌握一定数量的专业词汇
职业学校学生的素质相对较差,针对这种情况,教师要保护学生的自尊心,使他们对饭店英语学习充满信心。

如上课提问题时,即使学生回答错误,也应先表扬他们回答问题的勇气,然后再指出错误。

如果横加指责,他们可能会产生抵触情绪,甚至极度悲观、消沉。

每个学生都有优点,教师要把他们的优点挖掘出来。

另外,教师应该结合学生的兴趣授课。

比如:有些学生喜欢电脑,喜欢韩剧,就多举一些电脑方面的例子,多一些韩国料理的例子。

例:在韩剧《大长今》中有很多料理知识,以及大长今本人的服务意识;坚持让明朝官员吃那些对身体健康有益的食物,而不仅仅为了迎合高官,不顾他们身体状况,让他们吃海参燕窝。

这些东西就要让学生多了解掌握。

一位学生曾在笔者办公室问了这样一个问题:“老师,变一般凝问句,什么时候应该用Does,什么时候用be?”笔者很震惊,怎么高一学生问这么简单的问题?看到他求知的目光,笔者立即调整心态,详细讲解,并鼓励他:“哪有不理解的一定要多问、常问,问多了自然进步就大了”。

各门学科都有其科学性、规律性,因此,教师不但要理解学生,而且要吃透教材。

饭店英语这门课有时很枯燥,乏味,但换一个角度,换一种方法,可能就会大大提高英语本身的趣味。

比如,幻灯、多媒体的使用等,都有激发学生的兴趣,降低本学科的难度。

另外,制作一些教具铺助教学,例如制作卡片帮助学生掌握生词;绘制图画,寓情于景,增加英语的趣味性。

例如:人们对五星级大酒店是非常感兴趣的,你可以再介绍一些超级豪华酒店,如北京“鸟巢”附近的盘古大酒店,激起学生的热情,使他们热爱大酒店,喜欢服务行业,同时激发他们学习饭店英语的兴趣,还可以让学生观看电视剧《五星级大酒店》,从中提高服务意识和服务技能,了解大酒店的方方面面。

不管在具体工作实践中,还是在每年的职业类学校高考中,专业词汇都显示出了它的重要性(在每年高考中,专业词汇20分),那么怎么记忆这些又长又多的专业词汇呢?又怎么使学生记忆这些专业词汇不太枯燥呢?本人认为要分类记忆。

把专业词汇根据不同的部门来分类,例如:客房中有chambermaid(客房女服务员),room atterdant(客房服务员),housekeaper(客房部经理),valet(洗烫工)等;餐饮部有bussers(跑菜员,餐馆中),waiter(男服务员),waitress(女服务员),headwaiter(captoin)餐饮部领班等。

另外,像friednoodles(炒面),hotpot(火锅),steamed buns(馒头)等。

这些都是饭店服务与管理英语的专业词汇的重要部分。

还有一些外来词汇,如aperitif(开胃酒),chef(厨
师)等,这些都是学生认真掌握的行业词汇。

因特网上提供了各式各样的酒店用文字、图片等,如有关宾馆大堂的各式图片可以为学生练习,“预约客房”(room reservation),“接待处”(front desk),“接送行李”(baggage),“询问处”(information desk),“收银台”(cashiers)等内容的词汇练习。

二,以人为本,服务客人,归纳礼貌用语,根据不同语景灵活运用
在饭店业中,销售的最重要的产品就是服务。

我们要在以“以人为本,宾客至上,服务客人”的基本理念的基础上做好饭店工作,学好饭店英语。

饭店英语是一门专业基础课,它不仅是一门英语课而且又是一门专业课,非常有学科特点。

在这门学科中“服务”(service)这个词占很大分量。

在讲这个词时,为了使学生提高服务意识和服务技能,我讲了这样一个故事:一位客人来到餐厅,服务员微笑着迎接过来说“good morning,sir,May I help you?"客人很满意。

“May I take your order?"我能接受你点菜吗?服务员说过这句话后,客人说“我头疼,能给我推荐一些治疗头痛有益处的菜吗?”服务员说:“对不起,应该吃药,"客人还是满怀信心,又问:“能给我推荐一些治疗牙疼的菜吗?”服务员说:“对不起,牙疼就不要吃饭了!”这虽然是个笑话,却透漏出服务员的服务意识和服务技能如此浅薄。

学生们哄堂大笑,在大笑中知道了什么是“service”服务,服务即微笑服务,就是指满腔热情,心甘情愿地去满足客人的合理的要求。

我们要注意礼貌用语。

因为饭店销售的最重要的产品就是服务,所以在饭店服务与管理英语中礼貌用语很多。

各种类型饭店的管理者都是在以人为本的理念的基础上来管理员工,服务客人。

即“we are ladies and gentiemen serving ladies and gentlemen”。

这种新的服务理念,对我们的服务提出了更高层次的要求,这些工作中常用的礼貌用语比其他行业尤其重要,我们在让学生掌握了一定
专业词汇后,要让学生根据不同语境归纳这些礼貌句式。

例如:询问客人名字,一般不用What 's your name?用:May I know your room sir(madam)?要问客人需要喝点什么,不能用:What do your want to drink?而用:Would you like something to drink,sir(madam)?而询问客人是否需要帮助,可以用多种表达方法:May I help you?what can I do for you?在商店里,服务员常说:What can I show you,sir(madam)?让学生归纳这些礼貌用语的时候,可以激励学生多说常说,让学生和学生相互扮演不同的角色进行对话,也可以让老师和学生相互练习这些礼貌用语,让学生更有自信,从而增加说英语的兴趣。

针对不同的服务对象,在不同的语境中,即使是表达同一个意思,但是其中还是有细微差别的,这一点要提醒学生注意。

例如,总台员工处理客人投诉中,常向客人致歉;“Im sorry"是一般的说法,还可以说:“Im terribly sorry,”“I want to apologize”,“Is there anything I could do?”等。

客房部员工打扫客房打扰客人常说;“Im sorry to trouble you,”餐饮部员工让客人等候时间长了,便说:“I'm sorry to have keep you waiting”等。

三、拓展知识面,培养学生自学能力
饭店英语是一门实践性很强的课程,教师讲授教材时要注意根据实际情况增加课外知识,提高学生学习兴趣。

例如在讲川菜灯影牛肉(Lampshade sliced beef)这道菜时,要增加一些内容;牛后腿,腱子肉,经腌、晾、烘、蒸、炸等工续,麻辣酸甜。

因其肉片薄而宽,可以透过灯影,有明间皮影戏之效果,故而得名。

同时也可让同学去网上查一查这些菜名,培养学生自学能力,通过搜集资料增加学生兴趣。

查一查Mapo beancurd(麻辣豆腐),Black forest(黑森林蛋糕),snow Hip Cake (鲜奶蛋糕)等菜。

四、要分层次教学,让学生多参加实践活动
职业学校的学生学习水平低,参差不齐,好学生吃不饱,差一点的学生又听不懂的现象较普遍。

因此,可以把一个班作为一个“复式班”,把学生按英语程度分成若干层次,讲授不同知识,提出不同要求。

例如;布置饭店英语作业,要求层次高一点的题量大、内容多,层次低一点的相对题量小些、内容少点。

为了提高学生学饭店英语的兴趣,要让学生多参观一些星级饭店。

看看前厅部(The front office department)、餐饮部(The food and beverage department)、客房部(The house keeping department)等,了解前厅部员工(The front office staff)、收银员(Cashier)、busseys(餐馆工)等饭店工作人员的工作流程(the job-procedure),从中获得实践经验。

总之,教学有法而无定法,教师在教师过程中,要不断摸索,寻找更好的方法
把饭店英语教好,无愧于“人类灵魂的工程师”这个光荣称号。
