中菜的烹调方法至少有50多种,但 大体不离:煮(boil)、煲/炖(stew)、 烧/焖/烩(braise)、煎(fry)、炒(stirfry)、爆(quick-fry)、炸(deep-fry)、 扒(fry and simmer)、煸(sauté)、煨 (simmer)、熏(smok)、烤 (roast/barbecue)、烘(bake)、蒸 (steam)、白灼(scald)等基本方法。

知识文库 第16期219中餐菜名英译策略探析冯汝源随着对外开放水平的提高、对外交流范围的日益扩大,对翻译工作的质量也提出了更高的要求。
本文在笔者总结大量口译实践案例的基础上,结合具体中餐菜名的英译,从直译加注解、音译法和意译法三个口译策略入手,为外宣工作提供中餐菜名参考译文。
在文化交流中,“口译是一种通过口头表达形式,将所听到的信息准确而快速地由一种语言转换成另一种语言,进而达到传递与交流信息之目的的交际行为,是人类在跨文化,跨民族交往活动中所依赖的一种基本的语言交际工具。
“民以食为天”,用餐席间交流所涵盖的饮食文化是对外交流的一项重要活动。
作为国际交流不可或缺的桥梁,英译中餐菜名不仅是语言的字面转化,更是文化传播的重要途径。
笔者在口译实践过程中,多次实践和总结中餐菜名英译相关的口译案例,从而进一步探析如下三种口译策略。
1 直译加注解运用直译法翻译菜名较直观,便于听众理解,易于接受。
中餐菜名中,有些菜名直观地陈述了菜肴的典型特点、原料和烹饪方法,这类菜名可采取 “直译法”,便于接收者理解和鉴别。
例如:羊肉枸杞芽(The Mutton with Gouqi Sprout)、香酥鸡(The Crisp Fried Chicken)、蒸羊羔肉(The Steamed Lamb)、羊肉小揪面(The Pulled Noodles in Small Pieces with Mutton)、羊肉搓面(The Rubbed Noodles with Lamb)、中宁一品土鸡(The Zhongning’s Native Chicken in the First Rank)。
2 音译法音译法在翻译这一概念出现之时就已存在,并随着翻译的日益发展也被进一步广泛应用。
如今,音译也成为了一种不可或缺的翻译方法。
音译,顾名思义,以音代义,即是把一种语言的词语用另一种语言中跟它发音相同或近似的语音表示出来的翻译方法。
举例来讲,享誉中外的“手抓羊肉”,传说康熙皇帝微服私访,微服独行至郊外,饥渴难耐,进一家小店,店主奉上盖碗茶和一大盘鲜、香、嫩、滑的熟羊肉,康熙见其肉色泽白里透红,鲜嫩美味,不腻不膳,热气腾腾,等不及拿起筷子便用手撕开享用,吃的好一个爽字了得!随从人等见状大惊,忙连连请罪,康熙帝解释道,今日手抓吃羊肉,美哉!手抓羊肉由此得名至今。

因此,准确、优美地翻译中国菜名对于传播中国饮食文化、促进各国之间文化交流具有重要意义。
本文旨在探究中西菜肴命名方式的差异以及中国菜名英译方法与策略。
◆关键词:西文化差异;中国菜名;英译一、中西菜肴命名方式(一)中国菜肴的命名方式1.以烹饪方式、原料等命名以烹饪方式加原料命名是中国菜肴命名中最常见的一种方式。
中国菜肴的烹饪方式有煎、炒、烹、炸等多种烹调方法,加之中国菜肴的食材数之不尽,因此以烹饪方式加原料命名的菜肴数量众多、十分繁杂,如水煮肉片、拌黄瓜、红烧牛肉等。
2.以人名或地名命名以人名或地名,有时也会加上原料的命名方式在中国菜肴中也屡见不鲜。
这种命名方式能够揭示一道菜的起源。
如麻婆豆腐、宋嫂鱼羹、西湖醋鱼、重庆火锅等。
3.以典故命名以典故命名的方式更具文化内涵,如九转大肠、过桥米线、佛跳墙等。
4.以菜的造型命名以菜的造型为其命名充满联想和想象,富有趣味性,如虎皮青椒、蚂蚁上树等。
(二)西方菜肴命名方式西方菜肴的命名方式相对来说较为直接明了,通常菜名中包括烹饪方法和食材,有时也会加上菜的形状和地名,如Smoked Salmon,Tuna Fish Salad,Fricasseed Veal等。
二、中国菜名英译方法根据笔者总结的中西菜肴命名方式,可看出两者的共同之处是都有以烹饪方式、食材、人名、地名命名的方式,不同之处是中国的菜肴有以典故、造型命名的方法。
在此基础上,中国菜名在英译时可分为两大类:1. 与西方菜肴同类的命名 2. 中国特有的菜肴命名。
第一类菜名的英译相对来说较为简单,但需注意语法规则的变化。
中国以烹饪方式加食材的命名方式通常是动词+名词的结构,如红烧牛肉、炸豆腐、烩白菜等。
而西方同类菜名的语言结构通常是过去分词+名词,如steamed fresh scallop、Smoked Salmon等。

一、对于表达不一,译者可以采用多种方法进行翻译,由于 翻译方法是灵活的,但应尽可能地保持原文化的意义与内涵。
二、对于直译硬译,译者切忌没理解清晰其真正的含义而直 接用字对字的方法来译。这些翻译或是有显著的语法错误, 或是严峻歪曲原名的意思,使外国人读后感到一头雾水,不 知所云,这不能达到通过翻译进行交流的目的。
