Guangdong Cuisine粤菜
• Guangdong cuisine, known as cantonese cuisine in the west,was developed in Guangzhou, Huizhou and Chaozhou, and Hainan island.
• There are 2 basic rules of Guangdong cooking. One is that the food must be absolutely fresh. The other is that the meal must be harmounious和谐, which means that different colored food must complement each other相得 益彰 and that taste and texture质地 should contrast.

• Zhejiang-Jiangsu cuisine is famous along the middle and lower reaches of Yangtze river. Its food features fresh fish and seafood dishes.

• Its cuisine lays emphasis an deep frying, stewing, baking and especially on the color of the dishes. Dish cooked in this way are crisp, light, refreshing and tasty.

• Shandong cuisine includes many well-known seafood dishes.
• The dishes are usually fresh, tasty, but not greasy含脂肪过多.
• Shandong cuisine has been influenced影响 by the "confucius family dishes", which are known for their taste, aroma, color,and shape.
• The main cooking methods are: stewing with soy sauce, steaming, quick saute, braising炖, roasting烤.
• It is heavier than Guangdong food. The food is mostly fried and there is much use of sesame oil and vinegar. The seasonings become sweeter with more sugar and dark soy used in the preparation.

It was invented by a Chengdu chef Ma's wife decades ago. The cubed beancurd is cooked over a low flame文火 in a sauce which contains ground beef搅细牛肉, chili, and pepper. When served, the beancurd is tender,spicy, and appetizing.
Sichuan Cuisine川菜
• It is well-known for its hot and pungent辛辣的 flavoring.
• The main condiments调味品 are generally bean paste豆酱 and pickled pepper腌辣椒.
• Sichuan dishes are sour酸, sweet, fragrant香, oily油腻 and tasty, and are noted for being tongue-numbing 麻.
Beijing roasted duck is prepared from speciallybred Beijing crammed duck with a unique roasting process which gives it a perfect combination结合 of color, aroma, taste, a crisp thin skin, and a delicious flavor.
