未能被有效利用。酶法脱毛是利用生物酶制剂水解 黏蛋白,进而破坏毛与皮的连接,从而达到脱毛的目 的。国内外酶法脱毛的应用主要集中在制革的清洁 化研究,如 Dettmer⑵(2011) ^Saravanan[3] (2014)等 研究了牛皮制革的酶法脱毛工艺;金扬⑷(2011)等 研究了山羊皮制革的酶法脱毛工艺;试验结果表明 酶法脱毛节省资源、对环境污染小、省时省力。然 而,很少见到食品级蛋白酶对牛皮脱毛进行研究的 报道。因此,有必要对食品级蛋白酶的脱毛工艺进 行研究。

In the unhairing process with cowhide enzyme, the enzyme addition, enzyme activity ratio, enzyme concentration, enzymolysis time, enzymolysis pH and enzymolysis temperature were taken as research factors, and unhairing method with compound enzyme was conducted on the basis of single factor experiment, and response surface method was combined, and unhairing technology with compound enzyme was optimized. The results showed that the enzymolysis method that alkaline protease and neutral protease were added successively was adopted, the optimum enzyme activity ratio, enzymolysis temperature, enzyme concentration, enzy molysis time and pH value of alkaline protease and neutral protease were obtained, and the comprehen sive score was 0.756. The results of response surface method showed that the interaction between enzy matic hydrolysis temperature and enzyme concentration had a significant effect on the unhairing effect, while the interaction between other factors was not significant.
