摘要: 橡子含较多单宁等涩味物质ꎬ导致其淀粉利用率低ꎮ 本研究通过测定脱单宁、酶解及发酵过程中的关
键指标ꎬ探究 70%乙醇对单宁脱除效果的影响ꎮ 采用数码生物显微镜及酸碱滴定法比较 4 种常见黑曲霉在发酵液
中的形态及发酵产酸量ꎮ 结果表明ꎬ70% 乙醇脱单宁处理会显著促进橡子粉的液化和糖化作用ꎬ发酵液中黑曲霉
