【摘要】Fresh milk bar, a new things during the period of dairy industry transition, a new dairy production management formats which keep up with the trend of the consumption and instant consumption, has get rapid development in recent years, there also have some problems. Through study the development background, scale layout, operation management, product, quality and safety of fresh milk bar, the papers has proposed some corresponding measures such as strengthen policy guide, standard workshop, process and process equipment layout, developed diversified products with the pasteurized milk as a main product, guarantee products' quality and safety, in order to provide references for fresh milk bar's sustainable and healthy development.%鲜奶吧是一种奶业转型时期出现的新事物,一个顺应消费潮流、即时消费的新兴奶业生产经营模式,近年来得到飞速的发展,但仍出现了一些问题.本文通过对鲜奶吧的发展背景、规模布局、经营管理、产品及质量安全现状的调研,提出鲜奶吧发展过程中要加强政策引导、规范车间及设备工艺布局、发展以巴氏杀菌奶为主的多元化产品、保障产品质量安全的具体措施,为鲜奶吧持续健康发展提供参考.
