When early humans killed a mammoth, how did they keep the meat before they could eat it all? We don't know; maybe they didn't. But perhaps they preserved their mammoth steaks in salt. However, it is hard to know for sure. We do know for certain that by 3,000 years ago, the Babylonians, Egyptians, and Chinese were all expert at salting. They used salt to preserve food.
For thousands of years, salting had been a common way to preserve food. But for a long time, no one knew why salt worked. Then, in the 1800s, a Frenchman named Louis Pasteur discovered the secret: bacteria. What does salt have to do with bacteria? First, bacteria need moisture to grow and multiply. Salt pulls moisture out of food, so the bacteria no longer have enough moisture. Besides, salt is poisonous to many bacteria. If you cover food with salt, bacteria outside the food will die before they get in, and bacteria already in the food will be poisoned by the salt.
So how do you preserve food with salt? For meat or fish, you pour a layer of salt, then rub it in well. Hams are often made this way. Another way is to alternate layers of food and salt in a big container. The salt will draw the moisture out of the food, creating brine that the food sits in. You'll need to make sure the brine completely covers the food; any food left exposed to the air will spoil. If you preserve cabbage this way, you'll make sauerkraut.
How well salt preserves food depends on how much it is used. The more salt, the longer the food is preserved. Unfortunately, using enough salt to preserve food for a very long time can cause problems. It can make food tough. It can destroy the flavour. And, of course, it can make the food too salty to eat, which is harmful to our health.
Today, even though we no longer rely on salt to keep our food fresh, we haven't lost our taste for salt. We don't want to give up our bacon, salamis, and watermelon pickles!

My high school life has been filled with many ups and downs, whether they were social or academic. Even though my current high school was not my first choice, I never regretted attending Southside High School. "Since you have chosen it, then it is the best for you," said my parents.
Up until the junior year I did not realize my capabilities(能力) as a student. Being in the IB programme, I was told that my junior year would be the toughest in all the years of high school. With this "little" piece of information, I walked into my junior year, scared of my grades. As weeks went by, I started to believe that the junior year was not as hard as everyone had said, but I was wrong. My grades were rapidly declining(下降) and by the end of the first term I had had five Cs in seven of my classes! I could not believe it—I did not want to believe it. I tried my best to get better grades myself without any help from anyone, but my pride just made my grades worse. And I had to miss out on one of the most important speech and debate competitions that year. I was heartbroken. I realized that I could not survive my junior year on my own, so I had to get help fast.
Once I got a tutor, my grades went from Cs, Ds, and even some Fs, to As and Bs. I slowly started to gain my confidence back in all of my classes and even myself. By the time the third and fourth quarter came around, I had been on the honour roll twice, and I was receiving awards from speeches and debates competitions.
Southside has taught me to always keep my head up and never give up on myself no matter what life throws at me. I am proud to be a Southside Tiger.

Like any new ninth-grader on the first day of school, Joemar Class had ninth-grader-emotion(情绪). He's not used to school in Hartford. He's used to going to school in his home town of Florida, used to seeing his friends, used to having class in Spanish.
"Nervioso," he said in Spanish.
We first met Joemar in mid-October in the San Juan Airport. His father, Guillermo Class, had sold his car to buy plane tickets to get his kids and fly them up from Puerto Rico. The island was almost destroyed(毁坏) by the deadly storm—Hurricane Maria.
Now, they are settling into their new home in Hartford's South End. A week later, and, using his wife's car, Class drove 16-year-old Joemar to his first day at Bulkeley High School. After a short ride, he got out in front of his new school. Inside, he met Gretchen Levitz—the school's program director.
"I see you have new uniform(校服)," Levitz said. "You look great. Are you ready for a good first day?" Then he met couple of teachers.
"Hello," they each said in Spanish. They asked where he's from, and told him they were happy to see him. Then Levitz took him on a quick tour of the school before classes began—to her office the school store, the library, and the dining hall.
A total of 19 languages are spoken in Bulkeley High School. "We have so many new students coming here from other countries every single day," Levitz said. "So it's not like he's the only one who has that feeling."

Carrot juice, because of its healthy benefits, is commonly called the "magic juice". It has been found that adding carrot juice to people's diets greatly improves their health. And its delicious taste makes it popular with all members of the family as a beverage.
Carrot juice is one of the richest sources of vitamin A that can be used in the daily diet. Lack of vitamin A can cause dryness and damage to the skin, nails and hair. Drinking carrot juice to increase the vitamin A in the diet is said to be good for many parts of the body, including the bones and teeth.
Drinking carrot juice is thought to be extremely helpful to the liver(肝脏) because vitamin A helps to clean the liver and reduce fat in it. And it is suggested that drinking carrot juice should be done regularly, rather than just from time to time.
Drinking carrot juice is also thought to improve the eyesight because of the vitamin A in the juice. Lack of vitamin A can lead to night blindness, which can be very dangerous, especially when the person is driving a car. An easy way to find out if you are lacking in vitamin A is to walk from a bright room into a dark room. Your eyes may have some trouble in getting used to the change of light if you are lacking in vitamin A.
