摘要：PURPOSE:To obtain the subject compound useful as a regent, etc., on an industrial scale at a low cost by converting L-alanine into D-alanine with a microorganism belonging to genus Brevibacterium and capable of converting L-alanine into D-alanine and separating the accumulated product. CONSTITUTION:A microbial strain belonging to genus Brevibacterium and capable of converting L-alanine into D-alanine [e.g., Brevibacterium lactofermentum DCSR17-2 (FERM P-9930)] is inoculated in a medium containing L-alanine and cultured at 30 deg.C for 5 days to convert L-alanine into D-alanine. The microbial cells are separated from the cultures liquid by centrifugal separation. The objective D-alanine accumulated in the supernatant liquid is separated therefrom.
