【摘要】In this study,a high performance liquid chromatographic method was established for the quantification of free Water-soluble vitamins Niacin,Vitamins B1 and B2 in fortified flour.The water-soluble vitamins were analyzed by a 250mm ×4.6mm C18 column with 0.1mol/L KH2PO4 (pH=7)-methanol as mobile phase(0.7mL/min) in gradient mode.The result showed that VB1 had excellent linear relationship in the studied range of 0.1670 ～ 33.40μg/mL,the method detection limit was 0.018mg/kg,the recovery rate was 94.0％～98.5％ ; VB2 indicated excellent linear relationship in the studied range of 0.1845 ～36.90μg/mL,the method detection limit was 0.016mg/kg,the recovery rate was 95.4~98.9％; VB3 indicated excellent linear relationship in the studied range of 0.1750～35.00μg/mL,the method detection limit was 0.044mg/kg,the recovery rate was 94.9％～97.9 ％.The method was feasible and accurate,thus it was able to routinely determine the water-soluble vitamins in fortified flour.%使用高效液相色谱法同时测定强化面粉中游离的烟酸、VB1和VB2.使用C18色谱

0.018mg/kg,回收率94.0％～98.5％; VB2线性范围为0.1845 μg/mL～36.90 μg/mL,方法检出限0.016 mg/kg,回收率95.4％～98.9％；烟酸线性范围为
0.1750μg/mL～35.00 μg/mL,方法检出限0.044 mg/kg,回收率94.9％～97.9％.该方法可便捷准确地测定强化面粉中游离的水溶性维生素B1、B2和烟酸.
