20道精致下酒菜凉拌海蜇黄瓜丝做法:1、将海蜇放入凉水中浸泡3-4个小时,期间换水3-4次2、将海蜇清洗至无咸味,用70C-80C烫一下,放入清水中浸凉备用3、海蜇、黄瓜切丝,姜、蒜、香菜切末4、生抽、糖、盐、鸡精、料酒、醋、花椒油或香油调成调味汁5、食用前将调味汁拌入海蜇丝和黄瓜丝中即可b]制作提示:1、焯海蜇的时间不宜太长,焯后最好立即放入冷水中冷却,海蜇更加脆嫩2、焯海蜇的热水温度不能过高也不能过低,温度高了海蜇收缩严重;温度低了海蜇没有脆感3、调料汁可提前调好,蒜香和空气接触后才可以挥发出来,食用前再倒入,避免影响口感4、海蜇皮属凉性食品,最好多放些“姜末”中和一下备注:我用的是罐装泡发海蜇,一般超市有售辣酱鸡脖做法:1、将鸡脖放入清水中,加适量料酒,浸泡半个小时,冲净血水2、锅中倒入足量清水,将鸡脖放入锅中,加入葱、姜、料酒,水沸后撇去浮沫,捞出鸡脖,冲洗干净3、锅中油热后,放入葱、姜、花椒、大料、辣椒煸炒出香味4、放入鸡脖,翻炒均匀,倒入老抽、料酒,翻炒上色5、倒入足量清水,加入桂皮、香叶、陈皮草果等香料,盖上锅盖,大火煮开,小火继续煮二十分钟6、加入许盐、适量冰糖,煮至冰糖溶化,汤汁收干即可肉皮冻做法:1、肉皮、葱、姜、花椒、八角、茴香、桂皮备用2、锅中水沸后,放入肉皮煮五分钟,捞出过凉水,贴着肉皮用刀片去肉皮表面的肥肉,如果有猪毛的话也要清理干净,用清水洗净,切成细丝3、砂锅中水将沸放入肉皮、葱、姜、花椒、八角、茴香、桂皮,大火煮开后,加入料酒、老抽,小火继续煮一个半到两个小时4、将煮好的肉皮的汤汁倒入容器中,放入冰箱冷藏约三四个小时至凝固5、将肉皮冻从容器中取出,切片,加调味料即可小提示:1、调料最好放入纱布包中,否则就象我一样煮好后把调料挑出来,比较麻烦2、煮肉皮的水量为肉皮的两倍多即可3、肉皮煮好后,可以加一点盐调味,如果不加的话,蘸酱汁也可韩式辣酱炒鱿鱼酱爆花蛤蛋皮海苔鸡肉卷韩式辣酱烤鸡肉串姜汁豇豆松花鸡腿蒜泥白肉小提示:1、切肉片之前可以把肉片放入冰箱冷冻一会儿,容易切得更薄2、熬汁的时候放红糖色泽和口感更好,我因为胖子的血糖高,一般不放糖3、做好的蒜泥白肉一次没有吃完,我放入冰箱中,第二天加了点青红尖椒和香菜炒着吃了!发现比回锅肉还好吃啊!所以我觉得回锅肉的由来就是没吃完的蒜泥白肉回锅炒一下,就成了回锅肉了吧!因为回锅肉前面的做法和蒜泥白肉都一样,就是回锅炒一下,而加了青红尖椒和香菜比起加青蒜更是别有一番风味呢柠檬泡椒虾制作过程:1、柠檬切片、姜切片、葱切段,青红椒、莴笋、胡萝卜切大小均匀的条备用2、用煮锅烧开水后,关火。
