Acid whey noodles, also known as suan cai fen, are a popular dish in northern China. The noodles are made from wheat flour and have a slightly sour taste due to the addition of acid whey, a byproduct of making cheese or yogurt. I first tried acid whey noodles when I was studying abroad in Beijing. My Chinese roommate took me to a small noodle shop near our apartment, and I was immediately hooked on the tangy flavor of the noodles. I loved how the sourness of the acid whey balanced out the richness of the meat and the spiciness of the sauce.
One thing I learned about acid whey noodles is that they can be quite filling. The noodles are thick and chewy,
