Abstract: This study aimed to optimize the extraction process of glucoraphanin from broccoli and explore its bioactive functions. Firstly, the optimal extraction solvent, extraction temperature and time were screened by single-factor experiment. Then, Box-Behnken design and polynomial regression analysis were used to
further optimize the extraction process. The results showed that the optimal extraction process was 75% ethanol, extraction temperature 80℃, extraction time 3 h, and the content of glucoraphanin in broccoli was 680.15 μg/g. In addition, this nutrient had
significant inhibitory effects on the growth of HeLa cells and induced cell apoptosis, and had certain antioxidant activity. Therefore, the extraction process of glucoraphanin from broccoli provides an important basis for the development of drugs and health products.
