做法二资料:小肋排适当、料酒1大匙、酱油2大匙、白糖〔也可替代成冰糖,色彩更为诱人〕3大匙、醋4大匙、清水5大匙、大蒜2个、葱段、姜片各适当、盐〔可不放,任意〕1小匙。
做法:1.汤锅注入清水→小排骨入锅→开火→开锅后撇去浮沫、血沫→放葱段,姜片,大蒜→转小火炖制30-60分钟→排骨煮好后捞出控水。
调味汁:1勺料酒、2勺酱油、3勺醋、4勺糖、5勺清水,可合适加盐、花椒、辣椒等。
炒锅开火→倒入适当的油→油热后倒入排骨→用小火慢慢煸炒,待排骨表面呈淡淡的金黄色即可→倒入刚才调好的味汁,味汁应当能够刚恰好没过排骨→大火煮开后转小火慢慢让它炖至入味→待汤汁快收干时,开大火收干,临出锅前可再烹入一些醋,炒匀后就能够盛出了。
