1.Purpose
(1) Know the history of pot chicken. (2) Master the principle and
method of cooking pot chicken.

2.Principle
Pot chicken is one of the typical food of Xuzhou. The food in Xuzhou is influenced by the Shandong cuisine most. So pot chicken may tastes hot and a little salty.

Pot chicken was created more than 1000 years ago. In the past, people in Xuzhou often set the stone stove in their courtyard and put the pot on it. All the family members sat on the ground and around the fire, having meals happily.

(2)Add the oil into the pot. When the oil is hot, add the green Chinese onion and so on and stirfry(翻炒) is until you can smell the fragrance.
Add the chicken pieces and the Soy Sauce. Stirfry for 2 min and add water to cover the chicken pieces.

A cock Flour(caຫໍສະໝຸດ Baidu add corn flour) Green Chinese onion (大葱) Ginger (姜) Garlic Soy Sauce Aniseed (八角) Chili (红辣椒) Salt

4.Procedure
(1)Mix the flour without fermentation(发酵). The humidity should be appropriate(do not glue your hands).

(3)High heat to the boiling. Fix the cakes around the pot when the pot is hot. When the potcakes become cooked, turn the fire smaller. Put the chicken in dish when the sauce becomes less.
