Donna Steeden is support services manager at Quantum,which runs26homes.Like many working in care,she was drawn to it because she wanted to make a difference.But what sets Steeden apart is that her career path began in the kitchen.
Steeden began her career in a hospital kitchen as a trainee chef.She stayed there for10years before becoming a relief chef at Quantum Care.Her responsibilities include catering,laundry and housekeeping services.“Care catering is developing all the time.People have different needs and especially need special service in diet.This is the biggest change during these years.People need to know how to prepare that and provide a variety of options which still meet people’s dietary and nutritional needs,”she says.
Chefs in care homes rely on different tools and techniques to create a meal that resembles a typical roast dinner,with the right texture(质地)for somebody who has difficulty swallowing.“We have to think outside the box—go through the menu of the day and then adapt that for all the specialist diets such as dairy-free,low-sodium or textured,but still have to provide the exact same meal.”This is exactly what attracted Stuart Middleton to work as a chef in care.He said,“Care catering is looked down upon,especially in the chef world.A lot of chefs think there’s nothing you can do with a textured meal and it’s not nice to look at.”

Who can think of the race between the tortoise and the rabbit when it comes to the greatest races?Sure,that race only took place in ancient Aesop’s mind,but while the great modern races can teach us a lot about commitment,perseverance(毅力)and the virtues of having a rather large engine,“The Tortoise and the Rabbit”may tell us everything about animals and even vehicles on this planet.
In a study published this week,Adrian Bejan,a professor of mechanical engineering,concludes that no one should be surprised that the tortoise wins over the seemingly speedier rabbit.In fact,after analyzing the reported speeds of land-,air-and water-based animals,Bejan concludes that the world’s well-known speedsters are actually among the slowest when their movements are averaged out over the course of a lifetime.
The study builds on Bejan’s previous research showing that an animal’s speed increases with mass regardless of species.And that principle can also be extended to non-living things.Like aircraft.
After studying data from historical airplane models,Bajan noted the speed of each model increased with its size.too.That doesn’t sound right.What about the modern jet fighter?How is that relatively small craft not faster than a clumsy large transport plane?
Again,Bejan harks back to the tortoise.That transport plane spends lots of time in the air,moving regularly across long distances.The fighter jet,on the other hand,may fly across the sky occasionally,but—like the rabbit —it’s often found resting on the ground.
The slow and steady transport plane wins the marathon of life.
But like so many good stories.Aesop’s tale offers even more than a lesson in perseverance.
At one point,the rabbit asks the tortoise how he expects to win a race at such a slow pace.
The tortoise—ever focused—doesn’t respond.But it’s the rabbit’s own words that provide the moment to reflect on,especially in modern times.

Wyoming officials have approved the state’s first grizzly bear hunt in more than40years,allowing for up to 23bears in and around Yellowstone National Park to be killed this fall.
The vote by the Wyoming Game and Fish Commission came after about700grizzly bears in and around Yellowstone National Park lost federal protection under the Endangered Species Act.Their population—up from as few as136in1975,indicates it is healthy and will survive in the future.
The hunting season is to open in September.One permitted hunter at a time will be allowed to harvest a total of up to11bears,including one female,in a grizzly habitat outside Yellowstone and Grand Teton national parks.Another12bears,either male or female,can be harvested outside that habitat area. According to Dan Thompson,who is in charge of the state wildlife department,the management proposal was“conservative”and based on years of scientific study of the Yellowstone population.However,more than a dozen Native American tribes(部落)and activists sued the federal government,saying that lifting endangered species protections would go against tribal religious beliefs.
The Northern Cheyenne Tribe and several conservation nonprofits filed a separate complaint in August in an effort to regain ESA protection for the bears.
Although the Yellowstone population has bounced back,conservationists including Bart Melton,the Northern Rockies regional director for the National Parks Conservation Association,argue that the sport hunting as well as the threat of climate could severely affect the long-term survival of the species.Grizzlies have an extremely slow reproduction late.Additionally,the trees that have been severely affected by disease,insects and climate change,are an important food source for Yellowstone grizzlies.
“Wyoming ignored concerns raised by Wyoming locals and national park supporters across the country by approving its grimy hunting plan,”Bart Melton said in a statement.
