何谓真空预冷保鲜:
真空预冷保鲜的基本原理是将采收后的蔬果、食用菌等新鲜产品,在低压状态下通过产品表面的水分迅速蒸发,在水从液态变为气态的过程带走产品中的热量.,从而达到使产品迅速均匀冷却的效果。
一般经真空预冷处理,可在30分钟左右快速均匀地降至0度左右的最适贮运低温,同时,配合其他综合保鲜措施,有效地保持鲜度、降低腐烂、延长保鲜期和货架寿命。

什么是喷水式真空冷却
喷水式真空冷却就是在传统的真空冷却系统中加入喷水装置来辅助冷却的真空冷却装置.在整个冷却循环过程中, 水通过循环泵及喷淋装置持续地喷洒在真空箱内所有的产品表面。
科美斯喷水式真空预冷机应用在许多农产品的预冷上,如荷兰豆,甜玉米,土豆,加工蔬菜,面食及芒果,樱桃,火龙果等大个水果。
装卸货系统
在我们的喷水式真空预冷机最新加入了滑车装载系统.本装载系统的引入能够在特定的场合提供更好的自动控制和操作便利.本装载系统能够单边装载多个深度的周转货盘从而使叉车工更容易操作.本系统设计为完全自动控制.操作工把货物放到滑车上后通过手持遥控器上按钮把货盘移位为下一个货盘空出位置.当货盘在滑车上装满后就可以按下启动按钮了,一旦启动按钮按下,滑车就会自动滑入真空箱内,箱门关闭,循环启动.真空箱可以配备双边滑车系统,这样在设备工作状态下可以完成另一边的装货来提高工作效率.
Vacuum Pre-cooling Machine
1.工作原理
真空预冷是将果蔬、鲜花、肉类、熟食等农产品置于保温的真空室里,用真空泵对室内抽真空。
当室内真空度达到果蔬温度对应的水蒸汽的饱和压力时,果蔬等农产品表面间隙中的水分开始蒸发,蒸发时将带走蒸发潜热,使农产品温度降低,进一步降压,直至果蔬冷却至所需的温度。
a. Working principle
Vacuum pre-cooling works by rapid evaporation of water from certain vegetables or other products under very low atmospheric pressures inside a vacuum chamber. Energy in the form of heat is required to change water from a liquid to a vapor state as in the boiling of water. At reduced atmospheric pressure in a vacuum chamber water boils at a lower than normal temperature.
Heat is required to boil or evaporate water. In vacuum pre-cooling this heat comes from the product being cooled. This includes field heat and heat from its respiration. The amount of water removed is roughly 1% of the initial product weight for each 10°C that it is cooled. Generally the moisture comes equally from all parts of the product being cooled and localized wilting is not a problem.

2.真空冷却特点
(1)保持新鲜度和营养价值; (2)延长贮藏期和货架期;
(3)冷却时间极快,一般只需20-30分钟,冷却均匀; (4)能抑制和杀灭细菌及微生物,对产品无任何污染; (5)去除的水分仅占2~3%,不会产生局部干枯变形。

(1)农产品保鲜
真空预冷机在果蔬、花卉、食用菌等农产品保鲜领域中使用最
广泛,也是最有效果的。
农产品在收获后三个小时内是最重要的保
鲜时间,必须通过预冷的方式来处理,以蒸发表面水分,散发田间
热,降低温度,而真空预冷是目前最先进的预冷方式。
◆Produce preservation
Vacuum pre-cooling machine is widely applied in the filed of preservation for produce like fruits and vegetables, flowers and mushrooms with best effect. Immediately cooling is extremely important in the first three hours of post harvest process , harvest plants should be pre-cooled for longer shelf-life, normally to evaporate the surface water so as to bring away filed heat and lower temperature. The vacuum pre-cooling is the most advanced method of pre-cooling.

食品加工行业中最典型的应用就是熟食的预冷,熟食在烹饪
或制作好后自然冷却需要10个小时以上,容易导致熟食品质和
色泽上的损失。
而熟食真空预冷机可以在20-30分钟内冷却至常
温,然后冷冻保存,大大延长了熟食的保存期和营养价值。
◆Food processing
The typical application in the food processing filed is the cooked foods pre-cooling. The cooked foods will take more than 10 hours to cool to normal temperature, easy to lose the quality and color. While the vacuum pre-cooling machine just take about 20 to 30 minute to cool the cooked foods, and then freeze it to prolong the preservation period and nutrition value.
