Today, my mother bought back some crayfish, each one with their teeth and claws open, bouncing around and looking very fierce. My mother said she would make me a delicious spicy crayfish, and upon hearing it, I was so happy that I danced with joy.
I couldn't wait to come to the kitchen, wanting to see how my mother makes crayfish. I saw my mother first put the crayfish into a basin and rinse it clean with water. Then, she picked up a pair of scissors and skillfully cut off the head and legs of the crayfish, then pulled out the shrimp thread. Mom said that the processed crayfish tasted clean and hygienic.
Then, Mom poured some oil into the pot, and when the oil heated up, she poured the crayfish into the pot all at once. As soon as the crayfish encounters hot oil, it immediately turns bright red, as if wearing a red war robe. Mom kept stir frying the crayfish with a shovel, heating them evenly.
After a while, my mother added some chili peppers, Sichuan peppercorns, ginger slices, and garlic cloves to the pot. Suddenly, a strong aroma filled the kitchen, making my mouth water. Mom told me that this is the soul of spicy crayfish - the spicy flavor.
As the aroma continued to spread, my mother poured some beer into the pot. She said that beer can not only remove the fishy smell and enhance the aroma, but also make crayfish more tender and juicy. I watched curiously as the crayfish in the
pot slowly softened under the soaking of beer.
Finally, my mother added some salt and sugar for seasoning, stir fried a few more times, and then served. I brought the crayfish to the table and saw them all red and emitting a tempting aroma. I couldn't wait to pick up a crayfish, peel off its shell, and reveal the tender shrimp meat inside. I took a bite, and the spicy and fresh flavors intertwined, making me unable to stop.
