Yongchuan has a really long history going back over 2,200 years! It used to be the capital of the ancient Ba Kingdom before it became part of China. There are still lots of old buildings, temples, and relics from that time. My favorite is the Zhongxian Tower, which was built during the Han Dynasty almost 2,000 years ago! It's a giant square brick tower that's still standing tall today. Every year there is a festival around the Zhongxian Tower with dragon dances, operas, and lots of yummy local snacks.Speaking of snacks, the food in Yongchuan is amazing! We have so many delicious local dishes. My absolute favorite is a noodle soup called Xianfenzhajiang. It has thick chewy noodles in a super flavorful soup with chunks of tender braised beef. The broth is made by simmering beef bones and spices for hours until it gets a rich taste. Topping it off is a special fermented soybean paste that gives it a savory umami flavor.
