Restaurant Dishwashing Room Operating Procedure
1. Prepare tools & cleansers
Before starting dishwashing, prepare the required tools and cleansers. This includes dish brushes, sponges, steel wool, hot water, dishwashers, and dishwashing-specific cleansers.
2. Sort utensils & kitchenware
Classify the dirty utensils and kitchenware such as plates, bowls, cups, cutlery, pots, and pans to facilitate the subsequent cleaning process.
3. Pre-wash & remove debris
Scrape or brush off food debris to keep the utensils as clean and tidy as possible for the subsequent deep cleaning.
4. Soak & deep clean
Soak the utensils and kitchenware in cleanser for a period of time, then use a dish brush or sponge for deep cleaning to remove grease and stains.
5. Rinse & drain
Rinse the utensils and kitchenware thoroughly with clean water to ensure no cleanser residue remains. Then drain or dry them with a clean cloth.
6. Disinfect & store

7. Clean equipment & floor
After washing the utensils, don't forget to clean the equipment and floor of the dishwashing room. Wipe the equipment surfaces and floor with a damp cloth to ensure cleanliness.
8. Check & organize
