为研究不同状态蛋清泡沫凝胶的理化性质,该文在室温条件下以恒定搅拌速率(980 r/min)制备了不同打发状态(打发时间为0、50、70和90 s)的蛋清泡沫,并测定了蛋清泡沫的理化特性。
随后将不同打发时间的蛋清泡沫加热固化,制备了蛋清泡沫凝胶,通过显微观察、色度、质构和流变分析考察了蛋清泡沫凝胶的特性。
实验结果表明,在恒定的搅拌速率下蛋清泡沫的气泡状态会随打发时间的变化而变化。
适当延长打发时间,有利于形成比重较低的(0.16~0.17)、具有高起泡性和泡沫稳定性的固态泡沫。
打发70 s的蛋清泡沫(蛋清泡沫呈小弯钩状,比重为0.165)稳定性最佳,且经加热固化后,该蛋清泡沫凝胶的亮度(L*=90.28)显著升高,硬度(27.69 g)和弹性(0.78 mm)显著降低(P<0.05),凝胶性质优良。
结果揭示了蛋清泡沫的流变学性质能显著影响蛋清泡沫及其凝胶的性能,为蛋清泡沫在充气食品中的应用提供了理论参考。

食用菌是我国的重要生物资源,也是科学研究的重要类群,同时与人们的饮食生活密切相关,因而相关报道逐年增加。
在我国过去发表的相关论着中,存在引用食用菌拉丁名称时不规范等问题,有的作者引用的是过时的名称,按照新近分类系统,这些名称已经不能使用;有的作者引用的是其他种类的同物异名,按最新国际植物命名法规要求,这类名称已被其他合法名称替代;更为普遍的问题是真菌名称的命名人没有按照国际规范的格式书写。
近10 年来一些新的研究发现我国过去鉴定的食用菌中存在诸多错误,例如Wei et al.(2009)对我国白蚁伞属Termitomyces R. Heim 的研究发现,过去文献中记载了32 个白蚁伞种类,其中19 个为食用菌,但实际上我国目前只有11 种白蚁伞,且一个为新描述种类,说明过去记载的白蚁伞种类有68%是不存在的!报道的食用白蚁伞种类有47%是不存在的!Deng et al.(2004)对我国口蘑属Tricholoma (Fr.)Staude 的研究发现,我国过去报道的该属名称有91 个记录,但通过对标本和文献的研究发现我国目前只有该属43 个种和 3 个变种我国过去的文献中记载鹅膏属Amanita Pers.有23种、2 变种和 2 亚种为食用菌,但新近的研究结果表明我国目前鹅膏属实际只有11 种、1 变种和2 亚种可食用。

人溶菌酶由130个氨基酸残基组成,有4个S-S键,分子量为 14 600,其溶菌活性比鸡蛋清溶菌酶高2倍。
对于哺乳动物溶菌酶,目前已从牛、猪、猫、兔、猴、马、 羊等动物的乳汁中分离出溶菌酶,其化学性质与人溶菌酶 相似,但结构尚不清楚,其溶菌活性也远低于人溶菌酶约 3 000倍。
曾林(1999)采用琼脂平板法测定家兔初乳溶菌酶含量。 结果表明:初乳溶菌酶含量为(7.96±2.01)μg/ml,常乳 溶菌酶含量(5.01±1.32)μg/ml。人及哺乳动物溶菌酶的作 用机制与鸡蛋清溶菌酶相同。
