Huadiao jiu (花雕酒) •originating from Shaoxing •made of glutinous rice and wheat •alcohol content by volume: 16%
Liaojiu (料酒) •a lower grade of huangjiu widely used in Chinese cuisine as a cooking wine •sold with various seasonings added, such as cloves, star anise, cassia, black cardamom, Sichuan pepper, ginger, nutmeg, and salt
Zhuyeqing jiu (竹葉青酒): •fen jiu brewed with a dozen or more selected Chinese herbal medicines including bamboo leaves which gives the liquor a yellowish-green color and its name •alcohol content by volume: 38–46%
Types of Huangjiu:
Mijiu (米酒) •the generic name for Chinese fermented rice wine •clear in color •used for both drinking and cooking •alcohol content by volume: 12-19.5%.
--Beer It is produced by the brewing and fermentation of starches, mainly derived from cereals—the most common of which is malted barley, although wheat, corn, and rice are also widely used. alcohol content by volume: 2.5-7.5%
--Tianjiu Wines made from fruit juices are collectively called “tianjiu”, including Chinese grape wine and lychee wine. alcohol content by volumeБайду номын сангаас 7%-18%.
--Baijiu Baidjiu (literally "white liquor," "white alcohol" or "white spirits". ) is a type of Chinese alcoholic beverage distilled from grains such as glutinous rice, sorghum, wheat, barley, millet, etc. It is often very strong, containing over 40% alcohol, characterized by its clear fluids, pure content, lingering aroma and strong pungent flavor.
Sanhua jiu (三花酒): •a rice liquor made in Guilin famous for the fragrant herbal addition, and the use of spring water from Mount Elephant in the region •alcohol content by volume: 55–57%

Categories of Wine
--Huangjiu Huangjiu (literally “yellow wine” or "yellow liquor") is a type of Chinese alcoholic beverage brewed directly from grains such as rice, millet, or wheat. It may be clear, beige, yellowishbrown, or reddish-brown in color. Unlike baijiu, such liquors are not distilled, and contain less than 20% alcohol.
--Du Kang started brewing of alcoholic drinks 杜康造酒说 说文解字》 杜康作秫酒,以善酿得名,盖抑始於此矣。 《说文解字》:“杜康作秫酒,以善酿得名,盖抑始於此矣。”
