Everyone knows that the people who live in Shanxi are very bold and unconstrained. So we leave out the word“yu”and call the food “Roujia Mo”
It’s sauce meat. The most important part of “Roujia Mo” is the special meat. And the most important part of the sauce meat is fermenting in time.

It has an interesting name —“Roujia Mo ” That’s the only food which I will never get tired. Ancient Chinese called it“Rou jia yu mo zhong“. It means that the meat is inside the bun.
LEGEND STORY
• It is said that, long long ago,Zhao Kuangyin was penniless.One day, He was so hungry that he had to beg for food. A shopkeeper saw him and gave him two raw pancakes ,which were too hard and dry to bite. Then, a smell of meat spreaded coming from the boiled mutton soup.
“Roujia Mo is not only a sign of the ancient city”, but also is a sign of Chinese tradition foods.

Liangpi,as a kind of famous food is very popular with many people in shaanxi province.Here is a simple guide to make you know about it. History: It is said that Liangpi has a history about two thousand years. In one year in Qin Dynasty,the weather was dry so farmers didn't have enough crops to hand in to the goverment.Finally,a man named Li Shi er came up with an idear. He crushed rice into rice flour and made it become Liangpi. After tasting it,Qin shi huang was happy and forgave the farmers .From then on,Liang pi came into world and was known by people gradually. Feature: It tastes chewy, elastic, fine and smooth. Kind: There are two kinds of Liangpi. One is made from rice,the other is made from wheat.

Pita Bread Soaked in Lamb Soup is almost the most representative and traditional food of SHANNXI province,especially in XI’AN. Not only do the local people enjoy it on a regular basis,but visitors who come to XI’AN also rush to taste it.

面条细长 ,厚薄均 匀 , 臊子 鲜 香 , 红油浮 面 , 汤味 酸 辣 , 筋韧爽 口 , 老幼皆宜。 The noodles are slender, uniform thickness, smell delicious, hot and sour soup, Red oil surface, tough tendons and refreshing, young or old.
According to the historical record “Roujia Mo” first found in book is in Qin dynasty. It was called “Hanmo” in that time. After the war ended, the technology of “Roujia Mo” is introduced into the capital cite of Qin— Changan. Now,It’s named Xi’an.
