摘要:PURPOSE:To accomplish freeze-concentration in a convenient manner without the need for strict temperature control by adding microorganisms having ice- nucleation activity to a solution of water-soluble material to be concentrated followed by cooling to a level not higher than the ice-freezing point. CONSTITUTION:When a material liable to induce deterioration or vaporization loss (e.g. enzyme, soluble protein such as egg, brewed product such as wine, favorite food such as coffee) is to be concentrated, microorganisms having ice-nucleation activity is used as ice crystallization nuclei to carry out freeze- concentration. Said microorganisms is e.g. those classified as Erwinia sp. (e.g. Erwinia ananas) or Pseudomonas sp. (e.g. Pseudomonas syringae). To use the microorganisms as ice crystallization nunclei, the microorganisms or fragments thereof crushed by supersonic wave are added to a solution to be concentrated or coated on the wall of the container; however, use of such microorganisms in the immobilized form with e.g. alginic acid gel is preferable in terms of the separation and reuse thereof.
