Thanks partly to the efforts of first lady Michelle Obama, most schools are trying to make school lunches more nutritious (有营养) and less fattening. But there is more to lunch than food, and many schools are missing chances for teachable moments.
If you are older than 50, you may remember when students had enough time at lunch to go home and eat with their mothers. These days, Mother is most likely at work, and lunch is a school activity.
I remember my first day at Greenwich Country Day School after seven years in a public elementary school. The biggest difference between the two schools was lunch. At the private school, there was no cafeteria; there was a dining room. Every day at noon, we dined at big round tables. We sat on chairs, not benches. A teacher sat at each table, and children took turns going 1o a counter to get food. We used real plates and stainless-steel cutlery (不锈钢餐具), not plastic forks and trays. The teacher at the table led the conversation, and everyone was expected to join it. Children took turns clearing off and cleaning the table at the end of the meal.
I still remember conversations from those lunches 50 years ago. Lunch was part of the instruction and treated as part of the school’s task, which is to “enable all children in our care to discover and to develop what is finest in themselves—to achieve the highest standards in their studies, in their play, and in their character.”
Greenwich Country Day is one of the country’s richest schools, but civilized dining can be an important part of education. Echo Hill Outdoor School in Maryland, where I also used to work, runs on a small amount of money. The dining hall is a wooden building with large windows that helps children feel relaxed. Echo Hill uses its hour-long lunch period for teacher-led conversation, songs about the environment and a survey of how much food was wasted. Lunch is part of the curriculum (课程), but it is so relaxing that kids don’t realize they are learning something of value.
It is generally accepted that American families do not eat together as much as they used to. For this reason, it is more important than ever that school lunches become a time for civilized conversation and behavior. With a few changes, school lunch can be an important part of the curriculum and part of a way of teaching young people the best values.

Gary and Gavin were twin brothers who worked in a department store owned by their father. After their father had passed away, they took over the store. Everything went well until the day a twenty-dollar bill disappeared. Gary had left the bill on the cash register. But when he returned, the money was gone.
Gary then asked his brother Gavin, “Did you see that twenty-dollar bill on the cash register?” Gavin said that he had not. But Gary did not let it go and kept questioning. “Twenty-dollar bills can’t get up and walk away by themselves! Surely you mu st have seen it.” There was accusation in Gary’s voice. Tempers began to rise and anger grew. “I said I didn’t see it!” Gavin raised his voice.
The quarrel divided the young men and they could no longer work together. Later, a wall was built in the center of the store. For twenty years, they never said a word to each other.
One day, a strange man came to the store. He walked in and asked Gary, “How long have you been here?” Gary replied that he’d been there all his life. “Then you are the person I’m looking for, since I must tell you the truth,” the customer said emotionally. “Twenty years ago, I was totally broke and hungry. I entered this store from the back door and saw a twenty-dollar bill on the cash register. And I took it. All these years I hadn’t bee n able to forget that. I had to come back and ask for your forgiveness(宽恕).”
The stranger felt very surprised when seeing tears come to the eyes of the middle-aged man in front of him. “Would you please go next door and tell the same story to the man in the store?” Gary asked. Then something surprised the stranger even more ——after hearing his story, the two middle-aged men hugged each other and cried together in the front of the wall of the store.
