Anhui cuisine is one of the eight major cuisines in China and is known for its use of wild herbs and spices. As a native of Anhui, I am proud to introduce some of the most famous Anhui dishes.
Firstly, there is "Braised Pork Belly with Soy Sauce" (红烧肉). The pork belly is slowly cooked in soy sauce, sugar, and spices until it is tender and flavorful. It is a classic dish in Anhui cuisine and is often served during special occasions.
Another popular dish is "Stewed Soft-Shelled Turtle with Ham" (火腿炖甲鱼). The soft-shelled turtle is simmered with ham, bamboo shoots, and mushrooms until it is soft and juicy. It is a delicacy in Anhui cuisine and is believed to have medicinal properties.
Lastly, there is "Fried Mandarin Fish" (糖醋鲤鱼). The fish is marinated in vinegar and sugar, then deep-fried
until crispy. It is then topped with a sweet and sour sauce made from vinegar, sugar, and soy sauce. It is a popular
dish in Anhui cuisine and is often served during the Chinese New Year.
In addition to these dishes, Anhui cuisine also
