• It is a mixed drink consisting of two or more ingredients • Usually a spirit base and a flavouring, colouring ingredient or a ‘modifier’. • Cocktails maybe short or long • Can be served before dinner or after dinner • Pre dinner cocktails are Whisky Sour, Manhattan, Martini etc • After dinner cocktails are usually sweet and creamy – frappes, Alexanders etc
• BLEND – usually done in an electric blender – used
with fresh fruit, fruit pieces, cream – Key is to use little ice as it will dilute the cocktail. Carbonated drink if any used in recipe is always added after the ingredients are blended and at the end.

A popular story behind the Cocktail name refers to a rooster's tail (or cock tail) being used as a Colonial drink garnish. There are no formal references in recipe to such a garnish. The rooster theory is also said to have been influenced by the colors of the mixed ingredients, which may resemble the colors of the cock's tail. This would be a good tale today given our colorful array of ingredients, but at the time spirits were visually bland. The British publication, Bartender, published a story in 1936 of English sailors, of decades before, being served mixed drinks in Mexico. The drinks were stirred with a Cola de Gallo (Cock's tail), a long root of similar shape to the bird’s tail. Cocktail may have derived from the French term for egg cup, coquetel. The word Cocktail may be a distant derivation of the name for the Aztec goddess, Xochitl. Xochitl was also the name of a Mexican princess who served drinks to American soldiers. Another horse tail supposes the influence of breeders term for a mix breed horse, or cock-tails. Both racing and drinking were popular among the majority of Americans at the time and it’s possible the term transferred from mixed breeds to mixed drinks. There's a quirky story of an American tavern keeper who stored alcohol in a ceramic, rooster-shaped container. When patrons wanted another round they tapped the rooster’s tail. In George Bishop’s The Booze Reader: A Soggy Saga of Man in His Cups (1965) he says, "The word itself stems from the English cock-tail which, in the middle 1800’s, referred to a woman of easy virtue who was desirable but impure…and applied to the newly acquired American habit of bastardizing good British Gin with foreign matter, including ice

按老ma的说法,我这孩子在纽约得该多不学无术居然去学这个。

所以为了积攒一点有学有术的人品跟运气,受田欣川同志启发,决定跟广大爱去酒吧喝cocktail但每次点酒就头大的孩子们来分享下点酒心得,教你如何点上一杯合适你的鸡尾酒。

学点酒之前先普及些小常识:1) 酒量是要练的,但不是靠每次喝到挂,咱要练的是身上的肌肉。

科学告诉我们,mu scles process alcohol!!!所以,酒量差的孩子赶快去work out!!!2) Liquor vs. Liqueur:这两个单词表达的含义肯定是不一样的。

严格意义上讲,Liquo r包括所有含有酒精的饮料。

Liquor里分两类,一个叫spirit, 一个就叫liqueur。

Spirit一般是说酒精浓度高于20%且不含糖的的酒,一般的Vodka, Gin, Rum, Tequila都属于这类。

但是现在大伙都不用spirit这个词,所以我们就用Liquor来特指spirit. Liqueur就是酒精浓度低于20%或是加了糖的,一般liqueur的味道都不错,很适合用来作为cocktail的mixer,这就是为什么很多鸡尾酒都是甜甜酸酸特别好喝,不仅因为里面加了果汁,也因为加了各种含低浓度酒精且有香味甜味的liqueur.3) Call brand/premium: 这个是指你喜欢的基酒的牌子,你点酒的时候可以指名道姓的告诉bartender你要什么牌子的基酒。

这个在点martini和Lowball的时候很有用。

是内行外行靠这个一试便知。

其实就算不是为了耍酷,点一个好一点味道的call brand,你的c ocktail也会比较好喝。

废话少说,马上进入正题。

大部分我以前看过的的技术贴都是按基酒来介绍如何点酒的。

比如说vodka可以调出哪些cocktail. 但基酒实在太多了,只要你有想象力,各种Liquor,liq ueur都可以变基酒。

Halloween Cocktail Recipes:Creating Spooky Alcoholic Drinks Creating Halloween Cocktails with Creepy RimsAny drink becomes a Halloween cocktail when the glass is decorated right. Below, you'll find instructions for doing blood-dripped cocktail rims for Halloween drinks, or pretty (or creepy depending on how you do it) colored sugar rims for cocktails.Simply garnish with a severed finger or a couple of eyeballs and you've got yourself one very creepy drink.Bloody-Rimmed Halloween Cocktail GlassWhen it comes to making a rim of blood for your Halloweencocktail recipes, you have a couple of options. You can do acooked mixture of corn syrup and sugar (with red food coloring)to make a candy blood that will stay in place all night. But thatmixture will also stay in place the night after that and after thatand after that. The stuff is impossible to get off! I find the recipebelow to be a nice compromise. It stays in place well (especiallyon a cold glass), looks nice, but is easy to clean with a bit of hotwater.A blood-rimmed glass looks great with a vampire kiss martini or any other creepy drink. But since the blood runs down the inside of the glass, it also looks really striking with white-colored drinks, such as Bailey's Irish Cream-based drinks. Play around with it to achieve your favorite look.With some Halloween cocktail recipes, you may want to go green-- this effect looks really cool as "slime" or "ectoplasm."Ingredients:1/4 C. clear honey or light corn syrupRed food coloring, as needed (I use gel and so need less)Instructions: 1. Place honey or corn syrup in a small cup or bowl. Add red food coloring as needed. If using regular food coloring, you'll probably need about 12 drops or so. If using more concentrated food coloring, use less.2. Either place this mixture on a small plate and dip the rims of your glasses in it, allowing it to drip down, or use the end of a spoon to do this manually. The second option is cleaner (it assures you don't get any drips on the outside of the glass) but more time consuming.Tip: If it's warm in your home, keep the glasses cold to keep your blood from dripping too much.Colored Sugar Rims for a Halloween Cocktail RecipeColored sugar is even easier to make, and looks wonderful on the edgeof a martini glass. You can choose to do a fun combination of colorslike I did here, or stick with a single color. Green looks great for"slime" or red for "blood." I also love using plain black sugar with ablack cocktail for understated creepiness.Ingredients:1/2 C. sugarChoice of food coloring, as neededCorn syrup, as needed (optional)Instructions: 1. In a small bowl stir together sugar and food coloring with a fork until well combined. Gel food coloring works best, though it's a bit harder to mix.2. Place your colored sugar on a small plate in a pattern (as pictured) or as desired.3. Corn syrup works really well to make the sugar stick to the rim. To use it, pour some ona small plate and dip the rim of your glass on it to coat evenly. (You can also use any other liquid-- it just won't stick as well.)4. Your guests will go "psycho" for it. Be sure todecorate it with a few plastic eyeballs to get the full effect.Ingredients:1 1/2 oz. Vodka1/2 oz. Midori melon liqueur1/2 oz. Blue Curacao3 oz. Freshly squeeze orange juice3 oz. Lemon-lime soda (like Sprite)Instructions: Mix ingredients and serve over ice. Garnish with cold eyeballs . 鸡尾酒的历史鸡尾酒是源自古埃及的的饮料在酒里添加其他的材料以增加美味的习惯,从纪元前的古埃及、罗马时代开始。

但真正出现“Cocktail”这个则迟至18世纪。

1748年,美国出版“The Square Recipe”一书,书中的“Cocktail”专指混合饮料。

1855年沙卡烈所著“Newcomes”则出现白兰地鸡尾酒一词,此时鸡尾酒已经相当普及。

禁酒令反成催生剂19世纪发明制冰机以后,马上有人将冰块应用在调酒上,于是冰凉美味的现代鸡尾酒立刻向全世界扩展领域。

但确实年代不详,一说发源自20世纪初的美国。

1920年,美国颁布禁酒令,反而为鸡尾酒催生,但是好酒之徒纷纷在酒中掺加果汁一掩饰酒味,从此各式各样的鸡尾酒乃应运而生。

[有趣的“鸡尾”传说] 综合以上所见,所谓(Cocktail)指的是一种混合酒精饮料。

至于它的起源,有几则有趣的传说——其一是:美国独立战争时,一群军官涌入一家酒吧要喝酒,但当时店内酒已售完,所以老板娘临时将各种剩酒混在一起,并随手拔了一根鸡尾毛放在杯中当装饰,军官喝后齐口称赞,从此“鸡尾酒”的美名不胫而走。

其二是:一片因风飞来的鸡尾毛落入了大家正在喝的酒杯中的酒精混合饮料,于是从此这一类饮料为“鸡尾酒”。

其三是:据说当时有家富人请了个厨师,此人非常喜欢偷酒喝,为了不让主人察觉,他把每一种酒都偷一点,所以他所喝的酒是由各式各样的酒混合而成的,不料这样的酒别有风味,从此便流行起来。

因为这位厨师的屁股特别翘,有如鸡尾一样,所以大家就称他喝的酒为“鸡尾酒”。

[鸡尾酒的定义] 广义地说,任何酒与酒调和而饮,或酒与其他饮料混合调制,都可以称为鸡尾酒。

狭义地说,著名的鸡尾酒,皆有世界公认的配方。

含酒精之多寡,还要取决于调和时所用的已成品酒的酒精成分。

综合而言,只要所用材料在两种以上者,都可以称为鸡尾酒。

一:按饮用时间和场合分鸡尾酒按照饮用时间和场合可分为餐前鸡尾酒、餐后鸡尾酒、晚餐鸡尾酒、睡前鸡尾酒和派对鸡尾酒等。
