中国从原始社会开始都是以大杂居为主,远古时期以部落为单位,后来一直演变,直到现代社会都是以家庭为单位,团团圆圆一直是中国人的愿望,中国人的集体意识形成了中国饮食文化的一大特点就是—一家人都是吃一桌菜,并且大多数家庭是以圆桌为主,一家人围在一起,表示家人和和睦睦、团团圆圆。
中国人的饮食很讲究色、香、味原则,三者缺一不可,为使食物色美,通常是在青、绿、红、黄、白、黑、酱等色中取三至五色调配,也就是选用适当的荤素菜料,包括一种主料和二、三种不同颜色的配料,使用适当的烹法与调味,就能使得菜色美观。
食物香喷,可以激发食欲,其方法即为加入适当的香料,如葱、姜、蒜、辣、酒、八角、桂皮、胡椒、麻油、香菇等,使烹煮的食物气味芬芳。
烹调各种食物时,必须注重鲜味与原味的保留,尽量去除腥膻味;譬如烹调海鲜时,中国人则爱用葱姜。
因此适量的使用如酱油、糖、醋、香料等各种调味品,可以使得嗜浓味者不觉其淡,嗜淡味者不嫌其浓,个人根据自己的口味选择。
因为中国自古以来地大物博、人口稠密,所以中国人的饮食从先秦开始,就是以谷物为主,肉少粮多,辅以菜蔬,这就是典型的饭菜结构。
其中饭是主食,而菜则是为了下饭,即助饭下咽。
因为主食并不可口,必须有一种物质来辅助它使人们能够吃下去。
当然菜的功能和盐的功能有共同点,但是不等同于盐。
因为主食的单一性,所以,只有在菜上面花功夫,因此,中国的菜大都比较注重口味,同时,在菜的外表上也添上了很多花样,使人看着更加的有食欲。
中华饮食文化内涵丰富,几乎每道菜都有它的历史典故。
例如:开国第一宴,也是我们淮安人所引以为傲的淮扬菜。
淮扬菜是在扬州菜和淮安菜的基础上发展起来的。
它的兴起和隋朝大运河的修建有很大的关系,隋炀帝曾经三下江都,客观上促进了淮扬菜的发展。
虽然扬州菜和淮安菜发展在不同区域,但是两地文化习俗相近,再加上大运河的修建推动了两地漕运、河务和盐运的互动和发展,两方的厨业界也有了互相交流、相互借鉴的机会;当时的淮安菜品种多,但是味道稍显粗糙;扬州菜品种不多,但是制作精细。
两地的菜肴相容相长、互相影响、趋同发展,从而使淮扬菜逐渐形成相对统一、相得益彰的完整体系。

美国饮食最主要的就是讲究是否能够吃饱,现代社会,他们也更加注重食物的营养,现在美国人很喜欢吃肯德基、汉堡包这些快餐,这是一种在世界上特别典型的快餐文化。

据统计,全国人均每天吃盐量为10克以上,其中以东北人最高,达18克。

五、中国人每天进食的新鲜蔬菜要比美国人多得多,而美国人虽每天摄入大量蛋白质,但肠胃功能却因进食纤维素太少而受到影响,因此消化系统的患病率及患癌率均大大超过中国。
六、中国人喜食粗粮,而美国人偏爱精白粉等细粮。
实际上,粗粮所含营养物质要比细粮多。
七、中国城乡居民都喜食豆浆、豆腐、豆芽等豆制品,而美国人对此却往往“敬而远之”。
八、中国人饭后、迎客都沏一杯热茶。
喝茶能降低血中胆固醇含量;相反,美国人喜喝的咖啡,却有可能提高血脂并刺激心脏。
九、餐毕,中国人爱吃点瓜果,而美国人往往再加一份甜食。
瓜果自然要比甜食更利健康。
十、中国人大部分家庭习惯于每天买新鲜食品,而美国人喜从超级市场一次性大量购回,然后每天食用冷冻食品。
美国人食用的罐头食品(含种种不利健康的化学添加剂)及腌腊食品(含有多种可能致癌的物质)分别为中国人的15倍和6倍。
十一、中国人爱吃植物油,而美国人做菜喜用含胆固醇较高的动物油,此外,每人还摄入大量黄油。
怪不得美国人心血管发病率特别高。
十二、中国人用筷时需动用数十条肌肉和10余个关节,因而称之为“健身活动”并不夸张。
美国人习惯用打叉,且活动量不大。
十三、中国人用餐时爱加醋、姜、蒜、葱、辣椒等佐料,能起杀菌、消脂、增进食欲、帮助消化等作用。
而美国人喜欢加柠檬汁等。
纵贯上述所说,中美在饮食习惯方面都有各自的优缺点。
5 我眼中的中美饮食文化饮食文化作为一种综合性的文化现象,有着特定的含义,它是关于一个国家或民族饮食活动的内容及表现形式的总称,主要包括饮食种类、原料生产、加工技艺以及以饮食为基础的民族风情、宗教礼仪、伦理教化、人际交往等。
饮食文化是社会的物质文明与精神文明相互融合共同发展。
在当今世界化、全球化的现状下,西方的饮食文化被越来越多的中国人所青睐,中国人以吃西餐为傲,以此来彰显自己的身份,而越来越多的中国小孩对于西方的快餐文化达到了上瘾的程度,城里的小孩越来越多的过于肥胖,这与西方的快餐文化有一定的关系。
对于西方饮食文化的冲击,我们能否保持着我们中华饮食文化的优秀传统,而对于西方的饮食文化能以一种客观的态度去面对,而不是“来者不拒”或者有“美国的就是好的”这种观点。
反观美国,在第三次科技革命后,随着技术的革新,人的生活速度加快,营养而简单的食品逐渐成为人们的新宠,而美国饮食文化也在发生较大变化,向着高热量,简单,便于携带的方向发展.以肯德基为例,其推出的食品多种多样,但原料不外乎面粉,肉类,蔬菜,土豆.。
这种快餐文化的优点在于节约时间,在当今社会,人们的生活节奏越来越快,的确是一种很好的选择,但是这种快餐文化的缺点也是不可忽视的,人们可能很少有那种中国人集体就餐时候的温馨和欢乐,而且这种快餐高热量、高脂肪,是造成肥胖症的一大元凶。
6 结语文化的差异造就了不同的饮食文化,我们中华饮食文化体系庞大,是世界饮食文化的重要组成部分,其内容之广博宏富及形式之绚丽多彩,堪称世界之最,对于外来的饮食文化,我们要以正确的态度去面对,好的方面我们要借鉴和学习,而不能全盘接受。
同时,我们中国人要能够对自己的传统饮食文化“去其糟粕,取其精华”,并将优秀的部分发扬光大。
