Please translate the following paragraphes into Chinese. It is essential to reiterate that safety is the first requisite of any food. In a broad sense, this meansa food must be free of any harmful chemical or microbial contaminant at the time of its cons umption. In the canning industry, “commercial” sterility as applied to low-acid foods means the absence of viable spores of Clostridium botulinum. This in turn can be translated into a specific set of heating conditions for a specific product in a specific package. Given these heating requirements, one can then select specific time-temperature conditions that will optimize retentionof quality attibutes. Similarly, in a product such as peanut butter, operational safety can be regarded primarily as the absence of aflatoxins –carcinogenic substances produced by certain species of molds. Many of quality attributes of food and some alterations they can undergo during processing and storage is given in Table 1.Table 1 Classification of alterations that can occur in food during handling, processing or storage Attribute AlterationTexture Loss of solubility, Loss of water-holding capacity, TougheningFlavor Development of Rancidity (hydrolytic of oxidative),Cooked or caramel flavors Other off-flavors,Desirable flavorsColor Darkening, Bleaching , Development of other off-colors (e.g. browning) Nutritive value Loss, degradation or altered bioavailability of proteins, lipids, vitamins and minerals Safety Development of toxic substances, Development of substances that are protective to health, Inactivation of toxic substances and microbesMany reactions can alter food quality or safety. Some of the more important classes of these reactions are listed in table 2. Each reaction class can involve d ifferent substrates depending on the specific food and the particular conditions for handling, processing or storage. Thus, nonenzymic browning involves reaction of carbonyl(羰基) compounds, which can arise from existing reducing sugars and from these reactions, such as oxidation of ascorbic acid, hydrolysis of starch, or oxidation of lipids. Oxidation may involve lipids, proteins, vitamins, or pigments suchas carotenoids.Table 2 Some chemical and biochemical reactions that can lead to alteration of food quality or safetyType of reactions ExamplesNonenzymatic browning Baked goodsEnzymic browning Cut fruitsoxidation Lipids, vitamin degradation, pigmentsHydrolysis Lipids, proteins, vitamins, carbohydrates, pigmentsMetal interactions Complexation (anthocyanins 花青素), loss of Mg from chlorophyll, catalysis of oxidationLipid isomerization Cis→trans (顺→反),,non-conjugated→conjugated (共轭)Lipid cyclization Monocyclic fatty acidsLipid polymerization(聚合) Foaming during deep fat fryingProtein denaturation Egg white coagulation(凝固), enzyme inactivationProtein cross-linking Loss of nutritive value during alkali processingThe reactions listed in Table 3 cause the alterations listed in Table 1. Intergration of the information contained in both tables can lead to an understanding of the causes of food deterioration. Deterioration of food usually consists of a series of primary events followed by secondary events, which, in turn, become evident as altered quality attributes (Table 1 ). Examples of sequences of this type are shown in table 3. Note particularly that a given quality attributes can be altered as a result of several different primary events. Operatings from the left column to the right, one can consider a particular primary event, the associated secondary events, and the effect on a quality attribute. Alternatively, one can determine the probable cause(s) of an observed quality cahnge (column 3, Table 3) by considering all primary events that could be involved and than isolating, by appropriate chemical tests, they key primary event. The utility of constructing such sequences is that they encourage one to approach problems of food alteration in a analytical manner.Table 3 Cause-and effect relationships pertaining to food alterations during hand ling, storage and processingPrimary causativeeventSecondary event Attributes influencedHydrolysis of lipids Free fatty acids react with protein Texture, flavor, nutritive value Hydrolysis ofpolysaccharidesSugars react with protein Texture, flavor, color, nutritive valueOxidation of lipids Oxidation products react with manyother constituents Texture, flavor, color, nutritive value; toxic substances can be generatedBrusing of fruits Cells break, enzymes are released, oxygen accessibleTexture, flavor, color, nutritive valueHeating of green vegetables Cell walls and membranes loseintergrity, acids are released, enzymes become inactiveTexture, flavor, color, nutritive valueHeating of muscle tissue Proteins denature and aggregate, enzymes become inactiveTexture, flavor, color, nutritive valueC is→trans conversion in lipids Enhanced rate of polymerizationduring deep fat fryingExcessive foaming during deep fatfrying; diminished bioavailability oflipids。

为什么选择食品科学与工程这个专业英语作文

为什么选择食品科学与工程这个专业英语作文

为什么选择食品科学与工程这个专业英语作文全文共3篇示例,供读者参考篇1Why I Want to Study Food Science and EngineeringHi there! My name is Emma and I'm 10 years old. I know I'm just a kid, but I already know what I want to be when I grow up - a food scientist and engineer! I know it might sound like a weird job for a little girl to dream about, but I think it's actually one of the coolest careers out there. Let me tell you why I'm so excited about food science and engineering.First of all, I'm obsessed with food! I love eating all kinds of yummy snacks and meals. My favorite foods are pizza, ice cream, chicken nuggets, and chocolate chip cookies. Mmm, just thinking about those foods is making me hungry! But being a food scientist isn't just about eating tasty treats all day long (although that would be pretty fun too). It's about learning how foods are made and coming up with new and improved food products for people to enjoy. Food scientists get to experiment with different ingredients and figure out the perfect recipes and methods to make foods tasteamazing. They also work on making foods more nutritious by adding healthy things like fruits, veggies, whole grains, and less sugar and fat. As a child, I care a lot about having energy to run around and play, so creating healthy kid-friendly snacks is definitely something I'd be interested in.Another cool part of being a food scientist is getting to invent creative new flavors and product ideas that no one has ever tasted before. Can you imagine being the person who came up with crazy concoctions like pizza with a chocolate crust or revolutionized ice cream by making it change colors as you eat it? How fun would that be?! With all my wacky kid ideas, I bet I could dream up some really unique and exciting treats.Food engineering is the other half of this career that gets me pumped up. While the food science side focuses on the chemistry and recipes, the engineering side is all about designing the machines and equipment used to produce foods on a large scale. Food engineers get to build amazingly complex factory systems with robots, conveyor belts, storage facilities, and all sorts of high-tech gear. It's like getting to work with giant food-making machines!I'm a big fan of science and tinkering with tools, so this hands-on aspect is right up my alley. I love the idea of not justcreating a delicious new snack recipe, but also building the actual equipment to manufacture millions of packages of it to be shipped all around the world. How cool is it that food engineers get to be inventive problem-solvers while making sure people everywhere have enough to eat?Another reason why I want to do this job is because the food industry is always changing based on what people want to buy and eat. Maybe in the future everyone will want more environmentally-friendly plant-based foods. Or maybe we'll need to engineer special nutrition bars that can be grown on Mars when humans start living there! A food scientist's work is never done as tastes and needs constantly evolve over time.Speaking of the future, making sure there is enough food for the growing global population is one of the biggest challenges we'll face. With my ingenuity and hard work, I could help come up with creative solutions to this food supply issue. I could develop new strains of crops that give higher yields, create tasty alternatives to meat using plants, or optimize the food production process to reduce waste and inefficiency. Feeding the world is a huge and important responsibility, but I'm up for the challenge!Lastly, I'll let you in on another secret reason why I'm drawn to this career - I'm actually a bit of a science nerd! I love watching documentaries about food manufacturing and reading books about crazy crop experiments. Ms. Jacobs, my 4th grade teacher, even gave me a "Future Food Scientist" award at the end of the year because of my enthusiasm for the subject. So while being a food scientist lets me follow my passions for cooking, building, and learning about the latest innovations, it's also ok that I'm a little nerdy and academic when it comes to this topic. Embracing my inner science geek is totally acceptable and even encouraged in this profession. How lucky am I?Well, those are the main reasons why at 10 years old, I already have my heart set on studying food science and engineering when I grow up. It combines so many of my interests and lets me work towards an important purpose of keeping people fed and healthy. Just don't ask me to share any of my awesome snacks and treats once I'm a famous food scientist - those will be for me and me only! An inventor has to enjoy the fruits of their labor after all. Thanks for reading my essay!篇2Why I Want to Study Food Science and EngineeringHi there! My name is Timmy and I'm 10 years old. I love eating food, especially pizza, hamburgers, ice cream, and pretty much any kind of candy or chocolate! Yum! When I grow up, I want to have a really cool job that lets me work with food all day. That's why I've decided I want to study Food Science and Engineering in college. Let me tell you all about it!First of all, what even is Food Science? Well, it's the study of everything related to food! Food scientists learn about the different chemicals and nutrients in foods, how to grow and harvest crops, how to process and preserve foods, how to make new food products, and all sorts of other fascinating stuff. They get to experiment with mixing different ingredients together to create new tastes and textures. Sounds delicious if you ask me!As a food scientist, I could invent crazy new snacks and candies that no one has ever tasted before. Maybe I'll mix chocolate with potato chips or gummy worms with hot sauce! Can you imagine how much fun that would be? I'd get to taste test all my wacky creations. Although, I guess I'd probably have to follow some kind of recipes and scientific methods instead of just throwing random stuff together willy-nilly. Still sounds like a blast though!Another cool part of being a food scientist is getting to help make food safer and healthier for people. By studying how foods are grown and processed, I could help find ways to reduce bacteria and germs that can make people sick. And by learning about nutrition, I could create new healthy snacks packed with vitamins and minerals that are actually good for you. No more having to eat gross vegetables or boring salads - I'll make nutritious foods that are off-the-wall delicious!Food engineering sounds awesome too. That's where I'd get to design and build the crazy machines that make and package all our favorite foods. Imagine creating a robot that could perfectly assemble thousands of cheeseburgers every hour! Or an automatic candymaker that pipes out gooey caramel and gets it wrapped up in chewy nougat. I'd be like Willy Wonka with my own chocolate factory, but full of high-tech engineering marvels instead of little Oompa Loompas.I could also help engineer more efficient ways to store and transport fresh foods over long distances. That way, people all over the world could enjoy delicious fruits and veggies instead of just eating boring processed junk all the time. Unless I figure out how to send them a steady supply of potato chips and ice cream too - because let's be honest, what kid doesn't love that stuff?Another reason I'm interested in this field is that there's such a crazy variety of potential careers. If I get tired of working in food manufacturing someday, I could switch to a jobtaste-testing for restaurants or beer and wineries. Or maybe I'll study the science of how to perfectly brew coffee and inherit my own bustling cafe chain. Oooh, or what about coming up with the perfect formulas for protein shakes and energy bars for athletes? So many possibilities!Speaking of variety, food science and engineering also allows me to work with all kinds of awesome ingredients from around the globe. One day I could be extracting nutrients from exotic rainforest plants, and the next day developing new dryingmethods for preserving rare spices and herbs. Sure beats sitting behind a desk crunching numbers all day!I'll get to travel to faraway lands and sample the most amazing and unique culinary flavors on the planet. Hopefully I can avoid being fed anything too bizarre or gross though - I'll pass on the fried grasshoppers or stinky smelly Durian fruits, thanks! But maybe I could engineer new forms of candy that accidentally-on-purpose taste like those wacky delicacies, just for fun.Can you imagine how cool it would be to go on fun field trips to factories and see how all my favorite snacks get made? I could watch machines turning vats of liquid chocolate into silky smooth candy bars. Or witness the full production line that transforms fluffy marshmallow cream into ooey-gooey puffy treats. It would be like getting a behind-the-scenes look at Santa's toy workshop - except instead of toys, it's an edible wonderland!Overall, I think food science and engineering is the perfect career path for me because it combines my two biggest passions: playing with my food and conducting wacky science experiments! Ok, maybe those aren't the most sophisticated reasons. But hey, I'm just a 10-year-old kid after all. All I know is that this field sounds like a crazy fun way to indulge my curiosities about how foods are made while getting to eat a ton of delicious treats along the way. Sign me up!I can't wait to learn all about chemistry, biology, engineering, nutrition, and culinary arts. By studying hard, I could grow up to become a real-life Willy Wonka and run my very own whimsical snozzberry-walloping food innovation empire. Or maybe I'll play more of a supporting role, like being the trusted taste-tester who makes sure every new wild n' crazy snack is 100% delectablebefore it hits the market. Either way, I'm certain my future holds a world of flavorful possibilities!Well, that's my pitch on why food science is pretty much the sweetest, most mouth-watering career ever for a kid like me. Thanks for reading and catching all the corny food puns I snuck in there! I don't know about you, but all this talk about food has me craving a snack. Time to raid the kitchen!篇3Why I Want to Study Food Science and EngineeringHi there! My name is Jamie and I'm 10 years old. I know I'm just a kid, but I already know what I want to be when I grow up - a food scientist and engineer! It might sound like a weird job for a 10-year-old to want, but let me explain why I'm so excited about this career.First off, I absolutely love food. Like, I really really love it! My favorite subjects in school are definitely lunch and snack time. I get so excited thinking about all the different foods I get to eat - pizzas, burgers, tacos, ice cream, cookies, you name it! Anything edible and delicious is my jam.But I'm also really curious about how foods are actually made. Like, how do they get that gooey cheese stuffed insidethose breadsticks? How do they get the chocolate chips to stay molten inside those cookies? How do they make ice cream so cold and creamy? There are so many yummy treats out there, but I want to know the science and secrets behind creating them. That's where food science comes in. Food scientists study all the different physical and chemical makeup of foods. They experiment with recipes and ingredients to develop new snacks and meals. They find ways to make foods taste better, look prettier, and have a more pleasing texture. Just imagining getting to play around with delicious foods all day for a job gets me really eager!I also really like the engineering part of this career. Food engineers focus on designing the manufacturing systems to produce all our favorite foods quickly, safely, and on a massive scale. They create the machines that bake millions of cookies, cook thousands of frozen pizzas, and package up snacks to get them on grocery store shelves. Designing cool factories full of contraptions for making mouth-watering treats sounds like a ton of fun to me!Thinking about something as simple as a chocolate chip cookie gets me really intrigued about this field. The food scientists have to carefully pick what types of chocolate, whatpercentage of cacao, what size chips, and get thechocolate-to-dough ratio just right for the perfect cookie texture. Then the food engineers build special machines to mix the dough, shape it into rounds, strategically disperse the chocolate chips, bake the cookies at the ideal temperature, and rapidly cool them all while moving along an automated production line. There's so much science and engineering involved that goes into every single bite!Another big reason I want to enter this career is because I really care about health, nutrition, and the environment. By studying food science, I can learn about healthier ways to produce foods that are just as delicious but better for our bodies. Maybe I could invent a new candy bar packed with fruits, vegetables, fiber, and vitamins that kids will actually want to eat! Or engineer a new type of packaging that doesn't pollute the planet as much.Food is something we all need to survive, but it should also be tasty and enjoyable. As a food scientist and engineer, I could dedicate my life to making the foods we eat more flavorful, nutritious, safe, sustainable, and affordable for everyone around the world. I find that to be a really important and fulfilling mission. My dream is to one day work in the research and development kitchen for a major food company. I'd get to experiment with crazy new flavor combinations and cooking techniques. Then I'd get to design and help build the actual factory to mass produce my newfangled creation! How cool would it be to walk down the aisles of a grocery store and see people buying a sugary cereal or goofy snack cake that I invented and brought to life?I may be a little kid now, but I have a huge passion for food that goes way beyond just eating it. The science and engineering behind developing our favorite snacks and meals is ecological too! With hard work, I know I can turn this passion into an incredibly fun and meaningful career. Who knows, maybe one day the cafeteria at my old elementary school will be serving dishes I created myself! That's why when I grow up, I want to become a food scientist and engineer. I'm eager to learn all about food at a microscopic level and use my knowledge to craft innovative creations. I want to make the whole world's mouths water while also making foodbetter for our bodies and planet. Is there any career path more delicious than that? I can't wait to get started!。
