Under no circumstances should cooking operations be attempted before a factory trained and authorized Buckeye Fire Equipment distributor re-instate the integrity of your fire suppression system.MAINTENANCE/INSPECTION The Buckeye Fire Equipment Kitchen Mister Restaurant Cooking Area Fire Suppression System is a sophisticated fire suppression system, involving intricate mechanical components. To ensure the proper operation of the system, regular inspection and maintenance must be performed by an authorized trained Buckeye Fire Equipment distributor on a semi-annual basis, and after every periodic hood and duct cleaning (whichever occurs more frequently). This system is made up of individual components that are listed by Underwriters Laboratories Inc, with limitations contained in the detailed installation manual. The authorized distributor must be consulted after the system is discharged or whenever changes are planned for the system and/or area of protection.NFPA 17A and Buckeye Fire Equipment require that regularly scheduled (at a minimum of once a month) inspections of the system be conducted by the owner (or his representative). These monthly inspections are necessary to assure that the system is in proper working order and is ready when required. The following “quick review” of the Kitchen Mister System must include, but not limited to the following: 1. Determine that the cylinder, control head, gas valve, and all othercomponents of the system are in place and has not been tamperedwith.2. Determine that all appliances are still in their original position, aswhen the system was installed. 3. Check that the manual pull station is unobstructed and in clear view with all labeling and instructions visible. 4. Visually inspect the pressure gauge on the cylinder valve assembly tomake sure the system pressure is within proper range. The yellow pointer should be in the middle of the green operable range.5. Visually inspect the system detection lines to make sure that the cableand fusible links are not damaged, obstructed or have been moved. 6. Inspect all nozzles, making sure they are clean and free from anygrease or carbon build-up. Assure that all blow-off covers are inplace. 7. Check that all inspection tags or certificates are in place and up todate. A record of monthly inspections shall be maintained showingthe date of the inspection, who conducted the inspection and what actions were taken if required.8. If any deficiencies are found, call your authorized trained Buckeye FireEquipment distributor so that the appropriate corrective action can betaken.NOTE: The best method of fire prevention is good “housekeeping practices” which eliminate potential fire hazards. Inspect the overallcleanness and operation of the appliances, plenum, filters and hood. If any problems or deficiencies are found, appropriate corrective action must be taken immediately, by notifying the appropriate parties.Confirm or schedule your semi-annual inspection and maintenance visit with your local authorized trained Buckeye Fire Equipment distributor or contact Buckeye Fire Equipment to find one servicing your area.At this time, it is also good practice to visually inspect all hand portable fire extinguishers to verify that each is in good working condition. Refer to extinguisher’s manual for detailed instructions.MANAGEMENT RESPONSIBILITYIt makes good business sense for the owner/manager to take an interest in the following areas of his/her business operation to ensure the best possible fire protection for the restaurant:1. Arrange for proper inspection and maintenance of the fire control system as well as hand portables.2. Eliminate all potentially combustible materials and arrange for their proper storage.3. Arrange for upgrading of the fire suppression system if cooking equipment is added or revised and provide protection for changes made to the ventilation system.4. Arrange for a continuing education program in the restaurant fire suppression system operation as new employees are added to the staff.5. Assure that good housekeeping practices have been maintained to eliminate potential fire hazards.Remember there always is a potential fire hazard within the cooking ventilation equipment in restaurants. Many restaurants that have fires never re-open for business and many suffer severe financial loss due to lack of business continuity. Your Buckeye Fire Equipment restaurant fire suppression system is a mechanical device and, as such, requires periodic service by your distributors qualified and trained personnel. THIS SYSTEM IS MADE UP OF UNITS TESTED WITHIN LIMITATIONS CONTAINED IN THE DETAILED INSTALLATION MANUAL. AN AUTHORIZED SYSTEM DESIGNER MUST BE CONSULTED WHENEVER CHANGES ARE PLANNED FOR THE SYSTEM OR AREA OF PROTECTION, INCLUDING THE RELOCATION OR CHANGING OF APPLIANCES. LINE ONLY SPECIFIED ON THEDATA PLATE OF THE UNIT.CAUTIONWARNINGCONNECT/PLUG UNIT INTO DEDICATED A.C. LINE ONLY SPECIFIED ON THE DATA PLATE OF THE UNIT.INITIAL START UPLevel unit using the adjustable feet under the unit (approximately 1/2" adjustment). Before using the unit for the first time, wipe down the exterior and grilling area with a damp cloth. Take to a well ventilated area and heat for approximately 30 minutes. The grill may emit a small amount of smoke as the cooking surfaces reaches 450°F. Do not be alarmed, as the smoke is caused by oils associated with the manufacturing process and will stop when the burn off is complete. Brush off any debris from the grilling surface.SEASONING THE COOKING SURFACESThe cooking surfaces must be "seasoned" in order to reduce product sticking. To season, bring grill to 300°F, until completed. Brush upper and lower cooking surfaces with a salt free liquid vegetable oil. If using an aerosol agent, first apply into a cup and then brush onto cooking surface. Let sit for 20 minutes, and then wipe clean using a warm damp cloth. Repeat if required.SETTING THE TEMPERATUREThe thermostat control knob is used to set the temperature to your requirements. The maximum set point is 450°F (232°C), the minimum set point is 175°F (79°C). See Knob Settings.DAILY OPERATIONCheck the power cord to insure that it is plugged into a proper outlet.Check that the thermostat control is turned on.The pilot light will come on when the thermostat control goes past the 175°F.Set the thermostat control knob to desired temperature.Always allow 20 minutes of preheat time before loading the unit with product.Failure to allow sufficient preheat time will result in unsatisfactory cooking of the first load.WARNINGOPERATING HINTS AND SAFETYDisconnect power to the unit with the switch at the end of each day of operation.Do not leave the unit in operation without an attendant.Turn thermostat down to 200°F (93°C) during idle periods. It will take only a few minutes to regain operating temperature.Use spatula to push excess grease into grease cup after each load of food is cooked. This will reduce smoking of hot grease and carbonizing.Do not leave the unit at high temperature when not in use or during idle periods. This will cause food particles and grease film to carbonize."Season" cooking surfaces with non-salted vegetable oil to reduce product sticking.MONTHLY LUBRICATION/INSPECTIONApply two (2) drops of non-toxic mineral or vegetable oil to hinge bracket at the rear.Check the bolts, screws and nuts, tighten if necessary.TOP HOUSING MAINTENANCEThe Spring setting which holds the top housing in the up position is set at the factory and should provide many years of use without the need of adjusting. After a extended period of time the top housing may not maintain its original setting, therefore the spring tension can be adjusted by tightening and loosening the Retainer bolts on the back of the unit.CLEANINGWhile holding top lid with one hand, apply only cleaners which are safe for aluminum and iron surfaces. Wipe with clean sponge or towel until unit is clean.1. If particles adhere to the cooking surface during the day, scrape them off with a spatulaor stiff brush.NOTE: It is best not to let food cook on to the grill, as build up of food on the grill will increase sticking and smoking. In addition, carbon may build up on the grill surface and reduce the cooking efficiency.2. At the end of the day, wipe down all surfaces with a warm, damp cloth, use a mild detergent onall non-cooking areas and then dry entire unit.3. Remove and empty to clean grease catcher cup as required using mild detergent and water.CLEANING CARBON BUILDUP1. When carbon build up occurs, use a carbon removal agent to clean cooking surface. When this process is completed, you must re-season the grill (See Seasoning Grill).2. Acidic cleaners are NOT recommended as a cleaning agent.DO NOT IMMERSE OR LET THE UNIT STAND IN WATER.DO NOT HOSE DOWN THE UNIT OR THE TABLE/COUNTER IF THE UNIT IS ONTHE TABLE/COUNTER.KEEP AWAY FROM RUNNING WATER.Above: Oiling the Hinge, Below: Tightening the top housingCAUTIONCLEANING contDO NOT USE SHARP OBJECTS TO REMOVE CARBON BUILD-UP .BEFORE CLEANING MAKE SURE POWER IS TURNED OFF, UNIT IS UNPLUGGED AND IS NOT TOO HOT.DO NOT SPLASH WATER ON FRONT CONTROL PANEL!DO NOT SPLASH WATER ON FLEX CONDUIT CONNECTING TOP ANDBOTTOM OF THE UNIT.Do not use ice or cold water to clean the cooking surfaces when the unit is hot. The surfacesare cast aluminum or cast iron and may crack or deform under the shock of rapid temperaturechange.OPERATION TROUBLESHOOTING1. Unit not heating.A . Using a voltmeter, check the voltage and color coding of each conductor at the electrical source.3. Remove the front panel beneath the sprayhead and rotate the control thermostat knob fully counterclockwise to the “OFF” position.4. Feed the cord through the strain relief and connect it to the terminal block.5. Connect the brewer to the power source and verify the voltage at the terminal block before proceeding. Re-place the front panel.6. If plumbing is to be hooked up later be sure the brewer is disconnected from the power source. If plumbing has been hooked up, the brewer is ready for Initial Set-Up .120 volt ac models Note: This electrical service consists of 2 current carrying conductors (Neutral and L1) and a separate conductor for earthground.Page 6PLUMBING REQUIREMENTSThis brewer must be connected to a cold water system with operating pressure between 20 and 90 psi (.138 and .620 mPa) from a 1⁄2" or larger supply line. A shut-off valve should be installed in the line before the brewer. Install a regulator in the line when pressure is greater than 90 psi (.620 mPa) to reduce it to 50 psi(.345 mPa). The water inlet fitting is 1⁄4" flare or female quick connect.NOTE – Bunn-O-Matic recommends 1⁄4" copper tubing for installations of less than 25 feet and 3⁄8" for more than 25 feet from the 1⁄2" water supply line. A tight coil of copper tubing in the water line will facilitate moving the brewer to clean the countertop. Bunn-O-Matic does not recommend the use of a saddle valve to install the brewer. The size and shape of the hole made in the supply line by this type of device may restrict water flow.52190.0 090315PLUMBING HOOK-UPNOTE - If a backflow preventer is required by code, a shock arrestor should be installed between backflow pre-venter and dispenser. Installing the shock arrestor as close to dispenser as possible will provide best results.1. Flush water line and securely attach it to the flare fitting or quick disconnect located on bottom of brewer.2. Turn on the water supply.INITIAL SET-UPCAUTION – The brewer must be disconnected from the power source throughout the initial set-up, except when specified in the instructions.1. Remove the front panel beneath the sprayhead. Rotate the control thermostat knob fully counterclockwise to the“OFF” position.2. Connect the brewer to the power source. Water will begin flowing into the tank.3. When water stops flowing into the tank, rotate the control thermostat knob fully clockwise to the “ON” positionand replace the front panel.4. Wait approximately twenty minutes for the water in the tank to heat to the proper temperature. NOTE: The SINGLE 120V model requires approximately 50 minutes for proper water temperature.5. Place an empty server beneath the brew station. Place its associated Selector switch in the desired position, theOn/Off switch in the upper position and initiate a brew cycle.6. Place the On/Off switch in the lower “OFF” position after water has stopped flowing from the funnel, and checkthe water volume in the server. It should be 64 oz (1/2 gallon), 128 oz (1 gallon), 196 oz (1-1/2 gallon) 224 oz (1-3/4 gallon) or adjust volume to your company specifications.7. (A) If not, adjust the timer for that brew station as required. Refer to Adjusting Brew Volumes.(B) If necessary adjust the needle valve to achieve desired water volume to be bypassed around the coffee filter in the funnel.NOTE: To increase the water bypass turn the needle valve counterclockwise, to decrease the water bypass turn theneedle valve clockwise. An adjustment of the needle valve will require a timer adjustment for volume of 1 gallon 1-1/2 gallon or 1-3/4 gallon.8. Repeat step 7 until the proper water volume is achieved.9. For DUALS - repeat steps 5 through 8 for the other brew station.10. The brewer is now ready for use in accordance with the coffee brewing instructions.ADJUSTING BREW VOLUMESCAUTION - Disconnect the power source from the brewer prior to the removal of any panel for the replacement or adjustment of any component.NOTE: Prior to setting or modifying batch sizes, check that the brewer is connected to water supply, the tank is properly filled, and a funnel and server are in place.1. Modifying batch sizes. To modify a batch volume, first check that the SET/LOCK switch is in the “SET” positionon the circuit board. As directed in the International Plumbing Code of the International Code Council and the Food Code Manual of the Food and Drug Administration (FDA), this equipment must be installed with adequate backflow prevention to comply with federal, state and local codes. For models installed outside the U.S.A., you must comply with the applicable Plumbing /Sanitation Code for your area.ADJUSTING BREW VOLUMES (Cont,)To increase a batch size. Press and hold the START or BREW switch until three clicks are heard. Release the switch (Failure to release the switch within two seconds after the third click causes the volume setting to be aborted and previous volume setting will remain in memory) and press it again one or more times. Each time the switch is pressed, two seconds are added to the brew time period. Allow the brew cycle to finish in order to verify that the desired volume has been achieved. To decrease a batch size. Press and release the START or BREW switch once for every two-second interval to be removed from the total brew time period; then immediately press and hold down the START or BREW switch until three clicks are heard. Release the switch. (Failure to release the switch within two seconds after the third click causes the volume setting to be aborted and previous volume setting will remain in memory).Allow the brew cycle to finish in order to verify that the desired volume has been achieved.2. Setting batch sizes. To set a batch volume, first check that the SET/LOCK switch is in the “SET” position onthe circuit board. Press and hold the START or BREW switch until three distinct clicks are heard, and then release the switch. (Failure to release the switch within two seconds after the third click causes the volume setting to be aborted and previous volume setting will remain in memory). View the level of the liquid being dispensed. When the desired level is reached, turn the ON/OFF switch to “OFF” (lower). The brewer remembers this volume and will continue to brew batches of this size until the volume setting procedure is repeated. NOTE: When brewing coffee, batch volumes will decrease due to absorption by the coffee grounds.3. Setting programming disable feature. If it becomes necessary to prevent anyone from changing brew timesonce programmed, you can set the SET/LOCK switch to the “LOCK” position. This will prevent any program-ming to be done until switch is once again placed in the “SET” position.NOTE: If the clicks can not be heard, lightly grip the incoming water line to feel when the valve cycles on and off.OPERATING CONTROLSb c dedcb bc dPage 752190.0 090315OPERATING CONTROLS (cont.)a) MAIN ON/OFF SWITCHThis switch, located under the brewer behind the right front leg, turns power on and off to all components in the brewer.(b) START SWITCHMomentarily pressing and releasing this switch starts a brew cycle when the On/Off switch is in the lighted upper position.NOTE: The On/Off switch must be in the lighted upper position to initiate and complete a brew cycle.(c) ENABLE BREW (ON/OFF SWITCH)Placing the switch in the unlighted lower position cuts power to the timer and stops brewing. Stopping a brew cycle after it has been started will not stop the flow of water from the funnel. Placing the switch in the lighted upper position supplies power to the timer and enables the brew circuit.(d) BREW SELECTOR SWITCHPlacing the switch in the 1/2 gallon, 1 gallon, 1-1/2 or 1-3/4 gallon position selects the amount of coffee to be brewed in subsequent brew cycles. Repositioning this switch after a brew cycle has been initiated does not change the brew batch in progress.(e) GRINDER SELECTOR SWITCH (DUAL ONLY)Pressing the right or left side of the switch selects the corresponding brew station to the grinder interface. NOTE – The On/Off switch must be in the lighted upper position to initiate and complete a brew cycle.COFFEE BREWING1. Select the desired batch size.2. Insert a BUNN filter into the funnel.3. Pour the proper amount of fresh coffee into the filter and level the bed of grounds by gently shaking.4. Slide the funnel into the funnel rails.5. Place an empty server under the funnel.6 Place the On/Off switch in the lighted upper position. Momentarily press and release the start switch.7. When brewing is completed, simply discard the grounds and filter.CLEANING1. The use of a damp cloth rinsed in any mild, nonabrasive, liquid detergent is recommended for cleaning allsurfaces on Bunn-O-Matic equipment.2. Remove and clean the sprayhead. Use the pointed end of sprayhead cleaning tool (#38227.0000) to removeany mineral deposits from the sprayhead holes.3. Insert the long end of sprayhead cleaning tool into the sprayhead fitting, and rotate several times to removeany mineral deposits from the fitting.4. Insert the short end of sprayhead cleaning tool into the bypass fitting, and rotate several times to removeany mineral deposits from the fitting.NOTE: In hard water areas, this may need to be done daily. It will help prevent liming problems in the brewer and takes less than a minute.Page 852190.0 090315。
