西餐的餐具主要有刀子、叉子、碗、盘子、碟子等。

都有各自的用途。

用餐前先把餐巾打开平放在大腿上,用餐结束后把餐巾大略折好放在桌子上即可。

在西餐桌上通常摆放不只一副刀叉,原则上是从外向内取用,左手持叉,右手持刀。

刀用来切割食物,叉同于送食物入口。

据游修龄教授研究,刀叉的最初起源和欧洲古代游牧民族的生活习惯有关,他们的马上生活随身带刀,往往将肉烧熟,割下来就吃。

后来走向定居生活后,欧洲人以畜牧业为主,面包之类是副食,直接用手拿,主食是牛羊肉,仍然用刀切割肉食。

而且西方人用刀叉也只不过四五百年的历史。

在使用刀叉时也有一些禁忌。

如:手里拿着刀叉时不能指手画脚;发言或交谈时,应将刀叉放在盘上才合乎礼仪;忌用自己的餐具为别人夹菜;餐具掉落不要弯腰拾捡;等等。

(3)日本餐具的使用和摆放。

日本人对餐具很讲究,除使用陶瓷、金银、木制器外,大量使用漆器。

日本人注重美感、餐具形状也是多姿多彩,有高有低、百八角形、有叶状等。

日本人吃日餐、中餐时使用尖头筷子,吃西餐时使用刀子和叉子。

筷子是日本人使用的主要餐具,日本筷子的起源还不太清楚.据说是弥生末期.筷子已进入日本。

在用餐中,日本人对筷子的用法很讲究,筷子的两端一定要对齐。

在使用过程当中,或用餐前.筷子一定要整齐横向码放在饭碗的前方。

同时,在日本筷子的使用也有很多的禁忌:有“忌八筷”之说,忌舔筷,忌移筷,忌插筷,忌掏筷,忌跨筷,忌别筷等。

在与日本人用餐时给憋人夹菜要用公筷子。

用完餐后,要将用过的筷子放回纸套中,并放在架子上(4)韩国的餐具使用和摆放。

韩国传统食具包括筷子和匙。

筷子以金属制成,多呈扁平而长;匙亦多为金属制。

特别的是,韩国人一般吃饭、喝汤都用匙来进行,筷子多用以夹菜作为辅助工具。

中国人、日本人都有端起碗吃放的习惯,但是韩国人认为这种行为不符合礼仪规范。

吃饭的时候也不能用嘴接触饭碗。

至于碗盖,可以取下来随意放在桌上。

左手就必须放在桌子下面。

右手一定要先拿起勺子,从水泡菜中盛上一口汤喝完,再用勺子吃一口米饭,然后再喝一口汤、再吃一口饭后,便可以随意的吃任何东西了。

勺子在韩国人的饮食生活中比筷子重要,它负责盛汤、捞汤里的菜等,不用时要架在饭碗或其他食器上。

筷子在不夹菜时,传统韩国式做法是放在右手方向的桌子上,两根筷子要拢齐,三分之二在桌上,三分之一在桌外,这是为了便于拿起来再用。

3.就餐氛围和餐桌话语的差异(1)中餐的用餐氛围中国餐饮一般采用圆桌共餐的形式,这种就餐方式往往能够制造和谐融洽的气氛。

古往今来,中国人也非常习惯在饭桌上表达感情。

孟子曾经说过,“食色,性也。

”可见中国人常以食为人生之乐,讲究排场,并追求热烈的气氛。

当然这种大声喧哗的就餐方式已经日益为现代就餐礼仪所摒弃。

在用餐过程中中国人喜欢在酒席上劝客人进食,生怕客人吃不饱、吃不好,不断用自己的筷子往客人的盘子里夹菜,还不停地说:“多吃点,多吃点”,这样才能表明主人的热情和诚意。

在宴请结束时,主人往往会说:“今天没什么好菜招待大家。

菜做得不好,请多包涵,等等。

”不难得出,中国人遵循“贬己尊人”的原则。

可见,从餐桌礼仪可以看出中国延承至今的文化传统和民族特色。

(2)西餐的用餐氛围西方人用餐习惯是在长条桌上进行,实行分餐制,每人各自点菜,各持一份。

餐食在厨房被分装到每一只餐盘中,由服务员从厨房端出,再快速礼貌地送给每位客人。

用餐时他们一般是轻声细语,低声交谈。

他们举杯喝酒时,也要说祝酒词,但一般是利用上菜间隙致祝酒辞,祝酒时力求做到话语简短、幽默诙谐。

所以在西餐厅,很难看到大声喧闹。

用餐时,不替他人取菜,不吸烟,不劝酒。

西方盛宴一般只有四到五个菜,以恰好吃完或者稍有剩余为最佳。

如果在家里,最好吃完所有的菜,这样女主人会很高兴,认为这样是大家喜欢她做的菜,对她烹饪手艺的一种认可。

面对丰盛的宴席,主人会说已经倾其所有来招待大家。

(3)吃日本料理的用餐氛围在日本,人们大都是份儿饭。

而且,日本人在用餐之前及之后都要高声表达两种感受,用餐前要说“いただきます”“itadkimasu!,意思是欣赏这顿饭食;用餐后要说“ごちそうさまでした”“go - chis o - samadeshita!”意思是感谢款客者预备这顿极美味的饭食。

用餐时,日本人一般不给人夹菜,不管是客人还是家里人,自己吃自己的。

日本人的用餐礼仪看起来很严厉,但日本人容许狼吞虎咽式吃法。

例如,吃寿司,日本人习惯赤手拿着寿司浸一浸豉油,然后直接放入口中他们不会用筷子吃寿司;又如,吃面,日本人直接从汤碗把面吸啜入口,且必会发出声音,应为这表示面食味道很美,也是对厨师表示赞赏。

招待客人忌讳将饭盛过满过多,也不可一勺就盛好一碗;忌讳客人吃饭一碗就够,只吃一碗认为是象征无缘;一般来说,日本人认为将上桌的饭菜全部吃净是想对方表示礼貌。

(4)吃韩国料理的用餐氛围韩国人在吃饭时长辈先拿勺筷,晚辈再拿勺筷,和中国人遵守严格的座次一样,都是等级观念的反映。

喝泡菜汤时不要端起碗,用勺子舀汤时不发出声音并且要慢慢喝。

喝水和茶等饮品时也尽量不发出声音。

打喷嚏和咳嗽时要避开,用手或毛巾掩着。

长辈还在用餐时不能离开座位,筷子不要放在饭碗上或桌上,要等长辈吃完之后才能放下,一块吃完后要说“我吃好了”。

而且,用餐时还要注意在和别人一起吃饭时,不能吃的太快或太慢,要和别人保持同步,并且在吃饭时不能随意中途离席。

这种礼节给人展示出韩国对别人的关心和照顾。

三、结语东西方各国在漫长的历史发展过程中形成了千姿百态的文化习俗。

而他们不同的餐桌礼仪是不同文化的重要表现形式。

通过对东西方各国餐桌礼仪差异的分析,不仅能够了解东西方各国之间不同的文化传统,加深对东西方文化的理解,还可以使得我们在跨文化交际中,能够做的得心应手,待人接物恰到好处。

从而尽可能的避免文化习俗的不同带来的不便,使得跨文化交际能够更加有效的进行。
